Number Of Ingredients 14

3 TBS vegetable oil
1 pound flank steak
1 medium carrot, cut into large dice
1/2 white onion, cut into large dice
2 garlic cloves, quartered
2 to 3 cups red wine
2 large sprigs fresh thyme
2 tsp kosher salt
1 large red onion, sliced crosswise into 3/4 inch wheels
8 TBS roasted peppers
2 tsp extra-virgin olive oil
1/2 tsp sherry vinegar
4 ciabatta rolls
8 slices Gruyere cheese

Steps:

  • 1. Preheat oven to 350. 2. Choose a heavy-bottomed ovenproff skillet or Dutch oven that's large enough for the flank steak to lie flat but is as snug as possible. 3. Add 2 tbs of the oil to the skillet over high heat. Once the oil starts to smoke, add the meat and cook for 5 to 7 minutes on each side, until deep brown in color. Remove the meat from the skillet and set the meat aside. 4. Add the carrot and onion to the skillet, followed by the garlic. Saute the vegetables over medium-high heat until they start to brown but are still firm. 5. Add the red wine, enough to come three-fourths of the way up the side of the meat. 6. Add the thyme and 1 tsp of the salt, cover the skillet, and transfer to the oven. 7. Braise the meat for about 2 1/2 hours, until the meat can be pulled apart with a fork. Transfer the meat to a plate to rest and cool. 8. Reserve and strain the pan juices and pour into a saucepan. Over medium-low heat, reduce the juices until thickened (it should coat the back of a spoon). 9.With two forks, separate the meat into chunky strings and roughly cut them crosswise into 2-3-inch pieces. Place the meat in the pot with the reduced juices and coat well. 10. Brush the red onion with the remaining 1 TBS vegetable oil. In grill pan or cast-iron skillet over high heat, grill the red onion (without separating into individual rings) until charred on the outside and slightly cooked on the inside. Place in a bowl and separate into rings. 11. Add the peppers, olive oil, sherry vinegar, and remaining 1 tsp of salt and mix well. 12. Slice the ciabatta rolls in half. Place 1 slice of cheese on the bottom and top halves. Arrange the meat on the bottom halves of the rolls and the onions and peppers on the top halves and place all the roll pieces in the 350 degree oven. Remove once the cheese is melted. Close the sandwiches, cut into halves, and serve.

Time 4h23m

Yield 4 to 6 servings

Number Of Ingredients 14

1/4 cup canola oil
1/2 cup cola
1 tablespoon molasses
1 tablespoon soy sauce
1 tablespoon red pepper flakes
2 tablespoons minced garlic
1 tablespoon freshly cracked black pepper
1 lime, juiced
1 (2-pound) flank steak, trimmed
1 baguette, cut on the bias into 1/2-inch thick slices
1/2 cup extra-virgin olive oil
1 (8-ounce) container herb-seasoned cream cheese
1 (10-ounce) jar red pepper strips
3 tablespoons chopped cilantro leaves

Steps:

  • In a small bowl mix together the oil, cola, molasses, soy sauce, red pepper flakes, garlic, black pepper and lime juice. Put the steak into a large shallow bowl and pour in the marinade. Move the steak around to assure the marinade is covering the meat. Allow to marinate 2 hours or up to 4 hours in the refrigerator.
  • Preheat the grill over medium heat.
  • Remove the steak from the marinade and put it on the grill. Cook for 4 minutes on each side. Remove from the grill to a cutting board and let rest for 5 minutes.
  • Brush the bread slices with cream cheese. Slice the steak against the grain into very thin strips. Top the cheese with a strip of meat and a red pepper strip. Garnish with chopped cilantro and serve.

FLANK STEAK WITH ONIONS, PEPPERS, AND BEANS

Flank Steak with Onions, Peppers, and Beans image

Use your broiler to create a flavorful meal without adding much oil. The white-bean mixture would also go well with broiled or grilled fish or shrimp.

Time 35m

Number Of Ingredients 8

1 large red onion, halved and sliced 1/4 inch thick
2 red bell peppers, ribs and seeds removed, sliced 1/4 inch thick
1 can (20 ounces) cannellini beans, drained and rinsed
2 tablespoons plus 1 teaspoon olive oil
1 tablespoon fresh rosemary leaves (or 1 teaspoon dried rosemary, crumbled)
Coarse salt and ground pepper
1 1/2 pounds flank steak (1 piece)
1 tablespoon red-wine vinegar

Steps:

  • Heat broiler. If using a broilerproof rimmed baking sheet, set rack 4 inches from heat; if using a broiler pan, set rack so that top of pan is 4 inches from heat. On sheet (or pan), toss onion, peppers, and beans with 2 tablespoons oil, rosemary, 1 teaspoon salt, and 1/4 teaspoon pepper.
  • Push bean mixture to one side of sheet (or pan); place steak on other side. Rub steak with remaining teaspoon oil; season generously with salt and pepper. Broil, tossing bean mixture occasionally, until steak is medium-rare (135 degrees on an instant-read thermometer) and vegetables are lightly charred, 12 to 16 minutes.
  • Transfer steak to a cutting board; cover loosely with foil, and let rest in a warm place for at least 5 minutes. Transfer bean mixture to a serving bowl; toss with vinegar. Slice steak thinly; serve with bean mixture.
