1 pkg. (3 oz.) JELL-O Cherry Flavor Gelatin
1 cup sugar, divided
2 cups boiling water, divided
ice cubes
2 cups cold water, divided
1 pkg. (3 oz.) JELL-O Berry Blue Flavor Gelatin
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Steps:

  • Combine dry cherry gelatin mix and 1/2 cup sugar in medium bowl. Add 1 cup boiling water; stir 2 min. until gelatin is completely dissolved. Add enough ice cubes to 1 cup cold water to measure 2 cups. Add to gelatin; stir until ice is completely melted. Pour evenly into 16 (5-oz.) paper or plastic cups, adding about 1/4 cup gelatin to each cup. Freeze 1 hour.
  • Meanwhile, combine dry blue gelatin mix and remaining sugar in medium bowl. Add remaining boiling water; stir 2 min. until gelatin is completely dissolved. Add enough ice cubes to remaining cold water to measure 2 cups. Add to gelatin; stir until ice is completely melted. Refrigerate 1 hour.
  • Spoon about 3 Tbsp. COOL WHIP over red gelatin in each cup; top evenly with blue gelatin, adding about 1/4 cup gelatin to each cup. Freeze 1 hour or until almost firm. Insert wooden pop stick or plastic spoon into center of each cup for handle. Freeze 4 hours or until firm. To remove pops from cups, place bottoms of cups under warm running water for 15 sec. Press firmly on bottoms of cups to release pops. (Do not twist or pull pop sticks.)

Nothing says "Happy 4th of July!" quite like an array of these glittering cookie pops. These finger-friendly treats are the triple threat: They take just minutes to make, don't require an oven and, perhaps best of all, can be made up to a day in advance. The setup couldn't be simpler: Combine your cookie flavor of choice with tangy cream cheese in a food processor, then roll the mixture into balls, skewer them with lollipop sticks, dunk them in candy melts and finish 'em off with a shower of sprinkles.

18 vanilla sandwich cookies with cream filling, such as Golden Oreo Cookies
4 ounces cream cheese
1 cup red candy melts
1 cup white candy melts
1 cup blue candy melts
2 tablespoons vegetable oil (optional)
Red, white and blue sprinkles, for topping

Steps:

  • Add the sandwich cookies to the bowl of a food processor and pulse just until roughly chopped. Add the cream cheese and continue pulsing until the mixture is smooth and there are no large visible pieces of cookie.
  • Line a baking sheet with parchment. Using your hands, pinch off about 14 pieces of the mixture and roll them into 1-inch balls. Arrange the balls on the baking sheet then insert a lollipop stick into each and freeze them until hardened, about 20 minutes.
  • Once the cookie pops have hardened, place the red candy melts in a small microwave-safe bowl with 2 teaspoons oil if desired (see Cook's Note). Microwave in 30-second intervals, stirring in between, until melted and smooth, about 1 minute. Dip one-third of the chilled cookie pops into the melted red candy melts, shaking off any excess, and then immediately top them with the corresponding red sprinkles.
  • Return the cookie pops to the baking sheet (see Cook's Note) and repeat with the blue and white candy melts and the remaining chilled cookie pops.
  • Refrigerate all of the cookie pops until their candy melt coating has fully hardened, an additional 5 minutes, then serve.

These healthy frozen pops are salute-worthy since they're packed with vitamin C and have even a little fiber (2 grams per pop) thanks to the fresh berries. And the best part is that you can get your red, white and blue fix without using artificial food coloring.

2 cups strawberries, hulled and roughly chopped
3 tablespoons coconut cream
2 tablespoon honey
1/2 cup unsweetened coconut milk
2 tablespoons lime juice
2 cups blueberries

Steps:

  • Put six 3-to 4-ounce ice pop molds in the freezer for 30 minutes.
  • Combine the strawberries and 1 tablespoon each coconut cream and honey in a blender. Puree until smooth. Pour into a liquid measuring cup and set aside. Rinse out the blender.
  • Combine coconut milk, 1 tablespoon each coconut cream and lime juice in the blender. Puree until smooth.
  • Evenly divide strawberry puree between the frozen pop molds. Carefully layer the coconut milk over the strawberry puree. Freeze for 30 minutes. Rinse out the blender.
  • When you are ready to complete the frozen pops, combine the blueberries and the remaining 1 tablespoon each coconut cream, honey and lime juice in the blender. Puree until smooth (see Cook's Note).
  • Remove the frozen pop molds from the freezer and fill with the blueberry puree, and insert the frozen pop mold stick.
  • Freeze until set, at least 4 hours up to overnight. Let sit at room temperature for 5 minutes before unmolding and serving.
