CHICKEN CHILI

Steps:
- Cook the onions in the oil over medium-low heat for 10 to 15 minutes, until translucent. Add the garlic and cook for 1 more minute. Add the bell peppers, chili powder, cumin, red pepper flakes, cayenne, and salt. Cook for 1 minute. Crush the tomatoes by hand or in batches in a food processor fitted with a steel blade (pulse 6 to 8 times). Add to the pot with the basil. Bring to a boil, then reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally.
- Preheat the oven to 350 degrees F.
- Rub the chicken breasts with olive oil and place them on a baking sheet. Sprinkle generously with salt and pepper. Roast the chicken for 35 to 40 minutes, until just cooked. Let cool slightly. Separate the meat from the bones and skin and cut it into 3/4-inch chunks. Add to the chili and simmer, uncovered, for another 20 minutes. Serve with the toppings, or refrigerate and reheat gently before serving.

Steps:
- Add the oil to a large pot; heat oil over medium-high heat.
- Add in onion; stir/saute 5 minutes.
- Add chili powder and the next 4 incredients; stir/saute for 30 seconds.
- Add in the chicken stock, beans, and tomatoes; bring to a boil.
- Lower heat to medium-low; simmer for 30 minutes.
- Add in the chicken; stir to mix; simmer for 15 minutes.
- Ladle chili into individual soup bowls; top with cheese and sour cream.

- Heat oil in a pot over medium-high heat. Add 1/2 of the onion and 1/2 of the garlic; cook until onion is translucent, about 5 minutes. Add chicken and season with chili powder, cumin, and coriander; cook and stir until fragrant, about 1 minute.
- Stir in remaining onion and garlic, diced tomatoes, tomato sauce, chicken broth, chili beans, chipotle peppers, salt, and pepper; bring to a boil. Reduce heat and let simmer until reduced and thickened, 1 to 2 hours.

CREAMY WHITE CHILI
I got the best white chili recipe from my sister-in-law, who made a big batch and served a crowd one night. It was a hit. It's easy and quick, which is helpful since I'm a college student. - In a large saucepan, saute the chicken, onion and garlic powder in oil until chicken is no longer pink. Add the beans, broth, chiles and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. , Remove from the heat; stir in sour cream and cream. If desired, top with tortilla chips, cheese and jalapenos.

- Add all the ingredients except the cream cheese to a 4 quart or larger slow cooker. Give everything a big stir. Cook on low for 6-7 hours or on high for 3 hours.
- Remove the chicken and chop into bite-sized pieces or use two forks to shred it. Return chicken to the slow cooker and add the cream cheese. Stir everything together until the cream cheese has melted. Taste, then add more salt or seasonings if desired. I usually add a little more chili powder and dried oregano/Italian seasoning blend. Cover the slow cooker and cook for about 10-15 more minutes.
- Serve warm topped with fresh cilantro, shredded cheese, or crackers. And serve alongside my favorite cornbread or dinner rolls. Cover and store leftovers in the refrigerator for up to 1 week. Reheat on the stove or in the microwave.

- Heat the oil in a large pan (or pot) over medium-high heat. While it heats, pound the chicken breasts with a meat mallot so they are of equal thickness (a good to four to five whacks on each piece is good). Season the chicken breasts with 1/2 teaspoon salt.
- Brown the chicken in the pan on both sides, about five minutes or so on each side. You aren’t cooking them through at this point, just getting a light golden crust. Once browned, remove them from the pan and set them aside.
- Lower the heat to medium and cook the onions, bell peppers, and jalapeno in the oil for about five minutes, stirring occasionally. Add the garlic and stir to combine. Add the chili powder, cumin, oregano, 1 teaspoon of salt, and the black pepper. Stir to coat the veggies evenly in the spices.
- Add about 1/4 cup of the chicken stock and as it simmers, scrape up any browned bits off the bottom of the pan. Add the rest of the stock, the tomato sauce, and diced tomatoes. Give it a stir, and then place the whole chicken breasts into the liquid so they are completely covered.
