Arepas with Creme Fraiche and Caviar image

Number Of Ingredients 9

2 1/2 cups warm water
1 teaspoon kosher salt
2 cups cooked white cornmeal (masarepa)
8 tablespoons lard (can substitute vegetable oil if desired)
1 cup creme fraiche
2 hard-cooked large eggs, peeled and finely chopped
1/2 cup minced chives
1/2 cup minced shallot
2 ounces caviar

Steps:

  • Combine warm water and salt and stir until dissolved. Slowly mix in cornmeal until a sticky dough is formed. Divide dough into 8 equal portions and form each portion into a small dough ball. Roll out each ball to form a 1/2-inch-thick disk.
  • In a medium skillet over medium heat, heat 1 tablespoon lard until it starts to move and pop. Add one dough disk. Cook until golden brown, 3 to 4 minutes per side. Remove arepa from pan and place on a paper towel. Repeat with remaining lard and dough.
  • Top each arepa with creme fraiche, egg, chives, shallot, and caviar and serve.

CHIVE PANCAKES WITH GORGONZOLA AND BACON



Chive Pancakes with Gorgonzola and Bacon image

1 cup all-purpose flour
1/2 teaspoon baking powder
1 teaspoon kosher salt
2 large eggs
6 tablespoons milk
4 tablespoons finely chopped chives
2 tablespoons extra-virgin olive oil, plus more for frying
2 cups Gorgonzola dolce
1 cup mascarpone
10 slices bacon, cooked until crispy
4 tablespoons chopped chives

Steps:

  • For the pancakes: In a bowl, combine the flour, baking powder, and salt. Make a well in the center of the flour and add the eggs, milk, chives, and the olive oil. Gradually combine the flour into the wet ingredients and stir until smooth.
  • Coat a large saute pan with olive oil and put over medium-high heat. When the pan is hot, drop the batter by teaspoonfuls into the pan. Cook until bubbles form on the top of the pancake, about 1 minute. Flip and cook on the other side. Remove the pancakes to a large plate and cool. Continue making pancakes until all the batter is used.
  • In a medium bowl, combine the Gorgonzola and mascarpone and put it into a pastry bag. Pipe the Gorgonzola mixture onto the pancakes. Top with shards of the crispy bacon and chives. Arrange on serving platters and serve. Coolio!

RED BELL PEPPER AND CORIANDER PANCAKES WITH SMOKED SALMON



Red Bell Pepper and Coriander Pancakes with Smoked Salmon image

2/3 cup all-purpose flour
1/4 cup cornmeal
1/2 teaspoon dried hot red pepper flakes
2/3 cup milk
1/2 cup diced red bell pepper
3 tablespoons chopped fresh coriander leaves (wash and dry before chopping)
2 large eggs, separated
1 tablespoon unsalted butter, melted
1/2 cup sour cream
5 ounces smoked salmon, cut into 46 strips
about 46 fresh coriander leaves, washed and dried

Steps:

  • In a bowl stir together all pancake ingredients except egg whites and season batter with salt and pepper. In another bowl with an electric mixer beat egg whites until they just hold stiff peaks and gently fold into batter.
  • Heat a non-stick skillet over moderate heat and brush with some melted butter. Working in batches, drop tablespoonfuls of batter into skillet to form pancakes 1 1/4 inches in diameter. Cook pancakes until bubbles appear on surface and undersides are golden, about 1 minute. Turn pancakes and cook until undersides are golden. Transfer pancakes to a rack and cool.
  • Spoon about 1/2 teaspoon sour cream onto center of each pancake and top with a twisted smoked salmon strip and a coriander leaf.

We eat alot of salmon and when I find interesting recipes I want to keep track of them. This was a recipe that I picked up at a grocery store and it is available at www.health.com.

2 tablespoons olive oil
4 (6 ounce) salmon fillets, skinned
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon olive oil
1 small onion, thinly sliced
1 (7 ounce) jar roasted red peppers, chopped
1 garlic clove, minced
1/4 cup dry white wine
1/8 teaspoon salt
1 teaspoon dried basil

Steps:

  • Preheat oven to 450 degrees.
  • In a small bowl, combine the salt and pepper for the salmon.
  • Rinse and towel dry the salmon fillets, rub with salt and pepper.
  • In a large oven proof skillet, heat the 2 tablespoons of oil, add the salmon, place in oven and bake for 5 minutes.
  • Turn the fish over and bake an additional 5 minutes or until fish flakes easily when tested with a fork.
  • For the red pepper sauté, heat the remaining 1 teaspoon olive oil in a medium saucepan over medium-low heat.
  • Add the onion; cook 3 minutes, stirring frequently.
  • Add the bell pepper; cook an additional 5 minutes; add garlic and sauté for 30 seconds.
  • Add wine; cook 5 minutes, sprinkle with salt if desired.
  • Place the fish on individual serving plates; divide the red pepper mixture evenly among the servings and sprinkle with dried basil.

  • In a small saucepan, combine the corn and 1/2 cup of the cream. Bring to a simmer and cook over moderately low heat, stirring occasionally, until the corn is tender and the cream is reduced and thickened, about 8 minutes. Remove from the heat and whisk in 3 tablespoons of the butter. Let cool to room temperature.
  • In a food processor, puree the bell pepper until smooth; scrape into a medium bowl. Add the egg, the melted butter and the remaining 2 tablespoons of cream, then add the flour, baking powder and salt and whisk until well blended.
  • In a large nonstick skillet, melt 1 tablespoon of butter. Ladle 1 tablespoonful of batter per pancake into the skillet to make 6 pancakes. Cook over moderately low heat, turning once, until set, about 3 minutes per side. Repeat with the remaining butter and batter to make 12 pancakes total.
  • Spoon the creamed corn onto plates. Arrange 3 pancakes on each plate. Top with the smoked salmon and dollop with crème fraîche. Top with the caviar, garnish with chives and serve.

  • In a food processor or on a box grater, coarsely shred the potatoes and the onion. Transfer to a large, clean kitchen towel and squeeze dry.
