SWEET RED PEPPER HUMMUS



Sweet Red Pepper Hummus image

Number Of Ingredients 10

1 (29-ounce) can chickpeas, drained (3 cups)
1/2 cup freshly squeezed lemon juice (3 lemons)
1/2 cup sesame tahini
2 tablespoons chopped garlic (6 cloves)
1 1/2 teaspoons Sriracha
1/2 cup roasted red bell peppers
Kosher salt and freshly ground black pepper
Good olive oil
2 tablespoons toasted pine nuts, for serving
Toasted pita triangles and fresh vegetables, for serving

Steps:

  • Place the chickpeas, lemon juice, tahini, garlic, Sriracha, roasted red peppers, 4 teaspoons salt, and 2 teaspoons pepper in the bowl of a food processor fitted with the steel blade. Process until the mixture is coarsely pureed. Taste for seasonings, and transfer to a serving bowl. Drizzle with olive oil, sprinkle with toasted pine nuts, and serve cold or at room temperature with pita triangles and vegetables.

410g can chickpeas
1 large garlic clove
2 roasted red peppers from a jar
1 tbsp lemon juice
2 tbsp olive oil , plus a bit extra for drizzling
½ tsp chilli powder
Italian breadsticks , celery sticks and radishes with the leaves on, to serve

Steps:

  • Rinse and drain the chickpeas, then tip them into a food processor. Peel the garlic and crush in with the chickpeas, along with plenty of salt and pepper. Whizz briefly.
  • Remove any stray seeds from the peppers, then add them to the processor with the lemon juice, olive oil and chilli. Blitz again until really smooth. Taste and add extra seasoning and chilli for more of a kick, if you like.
  • Spoon into a bowl, drizzle with olive oil and serve with celery sticks, radishes and a stack of breadsticks for dipping.

1 tablespoon olive oil
1 medium red bell pepper, cut into 1/2 inch pieces
1 tablespoon tahini
1 fresh lime, juiced
1 ½ tablespoons water
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon garlic powder

Steps:

  • In a food processor or blender, mix the garbanzo beans, olive oil, red bell pepper, tahini, lime juice, water, salt, black pepper, and garlic powder. Blend until smooth.

This hummus can be made 1 day ahead. Keep it refrigerated, and bring to room temperature before serving. Tahini is a paste made from sesame seeds and can be found in many grocery stores.

1 (15 ounce) can garbanzo beans, drained
⅓ cup tahini
⅓ cup lemon juice
½ cup roasted red peppers
¼ teaspoon dried basil

Steps:

  • In an electric food processor, combine garlic, garbanzo beans, tahini, and lemon juice. Process until the mixture is smooth. Add roasted peppers and basil; process until the peppers are finely chopped. Season with salt and pepper. Transfer hummus to small bowl, cover and chill until you are ready to serve.

Naturally low in fat, this red pepper hummus also supplies vitamin C to help boost your defences. The crispbreads are protein and omega-3 rich, combining to make a healthy, nutritious snack

1 tsp cold-pressed rapeseed oil
1 red pepper , deseeded and sliced into thin strips
1 garlic clove , crushed
1/4 tsp chilli flakes
400g can haricot beans , drained and rinsed
1 tbsp extra virgin olive oil
2 tbsp lemon juice
assorted vegetable sticks, for dipping (optional - we used celery and purple carrots)
50g wholemeal flour , plus extra for dusting
1/4 tsp baking powder
1 tbsp mixed seeds (such as sunflower, pumpkin, sesame and linseed)
1 tbsp finely chopped fresh thyme leaves
50g full-fat natural bio yogurt
1/2 tsp extra virgin olive oil

Steps:

  • To make the crispbread, heat oven to 190C/170C fan/gas 5. In a bowl, mix the flour with the baking powder, seeds and thyme. Add the yogurt and mix with your hands to make a soft dough.
  • Place a sheet of baking parchment on the work surface and sprinkle with a little flour. Flour a rolling pin and roll out the dough until around 3mm thick. You will need to turn and lift the dough, sprinkling with a little more flour as you roll so it doesn't stick.
  • Transfer the baking parchment with the dough on to a baking tray, then prick all over with a fork. Brush lightly with the oil and bake for 20-25 mins until lightly browned and dry. The dough will continue to crisp as it cools. Once cold, break into chunky pieces and store in an airtight container for up to 1 week.
  • Meanwhile, heat the rapeseed oil in a small saucepan over a medium-high heat. Add the pepper, cover with a lid and fry for 10 mins or until softened and lightly browned in places. Remove the lid every few mins and stir, adding a splash of water if the pepper begins to stick. Add the garlic and chilli flakes, and cook for a few secs more, stirring. Leave to cool for 5 mins.
  • Tip the pepper, garlic and chilli into a food processor and add the haricot beans, olive oil, lemon juice and lots of ground black pepper. Blitz until smooth, then scoop into a bowl or two lidded containers and leave to cool. Serve with the crispbread snaps and vegetable sticks, for dipping, if you like.
