Sauteed Green Beans with Red Peppers & Almonds image

This sauteed green beans recipe is filled with garlic, red peppers, parmesan cheese and toasted slivered almonds. A mouthwatering vegetable side dish that will add a pop of colour and flavour to any feast and can be prepared in less than 20 minutes! Perfect for the holidays, or to compliment any week day meal! {Vegetarian and gluten-free}

1 lb green beans (ends trimmed)
¼ cup slivered almonds
2 tbsp olive oil
2 shallots (thinly sliced)
1 sweet red pepper (thinly sliced)
2 garlic cloves (minced)
salt and pepper (to taste)
1/4 cup grated parmesan cheese

Steps:

  • Over high heat, bring a medium-sized saucepan filled with water to a boil. Add beans and cook for 4 to 5 minutes or until tender-crisp. Drain. Place beans in a bowl of ice cold water for a minute or so. Drain well.
  • Meanwhile, in a large nonstick frying pan, cook almonds over medium heat until golden and fragrant, stirring frequently, about 5 minutes. Transfer to small dish.
  • Add oil to the pan; heat over medium-high heat. Cook shallots until softened, about 2 to 3 minutes.
  • Stir in red peppers, garlic, green beans and salt and pepper; cook, stirring occasionally, until peppers are tender-crisp and beans are hot, about 4 to 5 minutes. Stir in almonds. Transfer to serving bowl. Sprinkle with parmesan cheese and serve warm.

2 pounds fresh green beans, trimmed
1 tablespoon butter
1/2 cup pine nuts
Dash salt
1 package (5.2 ounces) shallot-chive spreadable cheese
1 jar (8 ounces) roasted sweet red peppers, drained and chopped

Steps:

  • In a pot of boiling water, cook green beans until tender, 6-8 minutes., Meanwhile, in a large skillet, melt butter over medium heat. Add pine nuts; cook and stir until lightly browned, 3-4 minutes. Remove from heat; sprinkle with salt., Drain beans; return to pot. Place cheese over warm beans to soften; toss to coat. Add red peppers; toss to combine. Sprinkle with pine nuts. Serve immediately.

¼ cup blanched slivered almonds
3 tablespoons butter
5 small shallots, thinly sliced
1 red bell pepper, chopped
2 tablespoons white sugar
salt and pepper to taste
1 ½ pounds fresh green beans, trimmed and snapped

Steps:

  • Place the slivered almonds in a dry skillet over low heat, and cook and stir constantly until the almonds are lightly toasted, 3 to 5 minutes. Watch carefully, because they burn easily. Remove the almonds and set aside.
  • Heat butter in a skillet over medium-low heat, and cook and stir the shallots and red bell pepper until softened, about 8 minutes. Sprinkle the shallot mixture with sugar, salt, and pepper, and reduce heat to low. Cover, and cook slowly, stirring occasionally, until the sugar dissolves and the shallots caramelize, 5 to 8 minutes.
  • Place a steamer insert into a saucepan, fill with water to just below the bottom of the steamer, and bring the water to a boil. Add the green beans, cover, and steam until just tender enough to pierce with a fork, 7 to 8 minutes. Drain the green beans, place them into the skillet with the shallot mixture, mix well, and gently stir in the toasted almonds.

1 pound fresh green beans
1 ½ ounces slivered almonds
2 tablespoons butter
2 cloves garlic, minced, or more to taste
salt and ground black pepper to taste

Steps:

  • Place beans into a microwave-safe casserole dish with enough water to cover the bottom. Microwave on high power until almost tender, 8 to 10 minutes. Drain in a colander and refresh under cold running water to keep the nice green color.
  • Heat a frying pan over medium heat. Add almonds and cook until just starting to turn golden, about 5 minutes, watching closely so as to not burn. Take pan off of heat and add butter to melt. Return to heat and add garlic. Mix in green beans, season with salt and pepper, and continue to stir until heated through, 5 to 7 minutes.

Steps:

  • Trim and half Green Beans
  • Slice Bell Pepper into Thin long slices
  • Mince Garlic
  • Bring a large pot of water to a boil. Add green beans and cook uncovered until bright green, about 3 minutes. Immerse green beans in ice water for 1 minute to stop the cooking process. Drain.
  • Heat butter in a large skillet over medium heat until melted and bubbling, about 1 minute. Cook and stir almonds, garlic, parsley, salt, and pepper in the hot butter until almonds are golden, 2 to 3 minutes.
  • Stir green beans, red bell pepper, and mushrooms into the skillet; cook, stirring occasionally, until heated through, 2 to 3 minutes.
