1 kg beef sausage
1 teaspoon salt
3 tablespoons vinegar
2 peeled halved and sliced onions
1 peeled and finely chopped green apple
3 tablespoons butter
2 teaspoons curry powder
1/2 teaspoon salt
1 pinch pepper
1/4 teaspoon mixed herbs
2 1/2 cups water
2 chicken stock cubes
40 g small packet of kid's sultanas
2 tablespoons plain flour
1/4 cup water

Steps:

  • Separate and put the sausages in a pot, generously cover them with cold water and then add the salt and vinegar - give it a bit of a stir.
  • Bang a lid on the pot, bring it to the boil then reduce the heat and gently simmer snags for 8 (thin) - 10 (thick) minutes before removing from the pot and draining.
  • Melt the butter in same pot and fry the onions and apple for approx ' 5 minutes.
  • Add curry powder, salt, pepper and herbs and stir over heat for 3 - 5 minutes.
  • Slowly add water and stock cubes and bring to the boil while stirring. Remove the skins from the sausages - good luck, try to get to them quickly, whilst performing steps 3 & 4 and before the skin starts to dry - slice thickly on an angle (4 pieces per snagger) and add to the sauce.
  • Reduce the heat, add sultanas and simmer for 10 - 15 minutes.
  • Blend the flour with 1/4 cup of water, add to the curry and stir until the sauce boils and thickens.
  • Serve with either rice or mashed potato.

Everyone will love these cheesy stuffed courgettes with parsley and sausagemeat

4 large courgettes , halved lengthways
2 tbsp olive oil
1 onion , finely chopped
1 garlic clove , finely chopped
100g breadcrumb
100g mature cheddar , grated
25g finely chopped flat-leaf parsley
175g Cumberland pork chipolata , squeezed from their skins
salad , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Using a teaspoon, scoop out the flesh from the courgettes, then roughly chop.
  • Heat the oil in a large frying pan and cook the onion for 6-8 mins until soft. Stir in the garlic and cook for 1 min more. Add the chopped courgette and cook for a further 6 mins until really tender.
  • Remove from the heat and tip into a bowl along with the breadcrumbs, cheese, parsley and the sausagemeat. Mix together well.
  • Spoon the mixture into the hollowed out courgette halves and place on a baking sheet. Bake for 25-30 mins - cover towards the end if browning - until the courgettes are tender and the filling is golden. Serve with a salad, if you like.

Curried sausages are quite popular comfort food in Australia, this is my recipe that I have made commercially for many years and have had lots of compliments for.

8 links sausages (beef, chicken, lamb or pork sausages)
1 tablespoon oil
2 onions
2 garlic cloves
1 tablespoon grated fresh ginger
2 carrots, quartered, then cut into 1/2 in chunks
2 potatoes, diced
1 tablespoon curry powder
2 tablespoons tomato paste
2 tablespoons fruit chutney
1/2 cup applesauce
1 cup chicken stock
1 (400 ml) can coconut milk
1 cup frozen peas (optional)
salt and pepper
fresh coriander (to garnish)

Steps:

  • Cover the sausages with cold water; bring to the boil and simmer about 5 minutes.
  • Drain, cool, remove skins and cut each into 4 or 5 pieces.
  • Heat the oil in a large saucepan and fry the onion, garlic and ginger, carrots and potatoes, stirring until the onions are soft. Add the curry powder and cook a minute or two.
  • Add the tomato paste, chutney, apple sauce, stock and coconut milk. Stir well, then return the sausage chunks to the saucepan.
  • Bring too the boil then cover and simmer about 45 minutes. Remove the lid and allow to cook about 15 minutes more to reduce the sauce a bit. If you can't be bothered, mix two tablespoon cornflour (corn starch) with 2 tablespoons water and stir this through to thicken.
  • 1 cup of peas can be added in the last 15 minutes as well.
  • Season with salt and pepper and serve garnished with copped fresh coriander.

750 g thick beef sausages
1 onion, sliced
2 garlic cloves, crushed
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon sweet paprika
1/2 teaspoon garam masala
1/2 cup sultana
2 apples, peeled and sliced
1 (400 ml) can coconut milk

Steps:

  • Cook sausages till browned all over and cooked through in frypan.
  • Drain on paper towel and cut into thin slices.
  • Discard all but 1 tblsp liquid from frypan and add onion and garlic.
  • Cook till onion is soft.
  • Add spices, stir till fragrant.
  • Add remaining ingredients including sausages.
  • Cook gently till apples are tender.
  • Serve.
