BEETROOT & RED ONION TARTE TATIN
Try this vegan tart for a show-stopping centrepiece. The bold red of beetroot against the vibrant green salad also makes it ideal for a meat-free celebration.

- Heat oven to 200C/180C fan/gas 6. In a bowl, toss the beetroot and onion in 2 tbsp of the oil, the vinegar and sugar. Add the star anise and season well. Heat the rest of the oil in a large, ovenproof non-stick frying pan, then nestle in the veg so that they cover the surface of the pan. Cover with foil and cook in the oven for 45 mins.
- On a well-floured surface, roll the pastry to a thickness of 0.5cm and cut out a circle the same size as your frying pan. Carefully take the pan out of the oven, remove the foil and wiggle the beets and onion around in the pan to make a compact layer. Put the pastry on top, tucking it in all around the edges, then return the pan to the oven and bake for 35 mins or until the pastry has puffed up and is a deep golden brown.
- Slide a palate knife around the edge of the tart, then put a plate on top of the pastry, serving side down. Flip the pan over to turn the tart out onto the plate - be careful not to burn yourself with the handle. Top with the orange zest and a sprinkle of sea salt, then serve with a peppery salad on the side.

MUSHROOM AND GOAT CHEESE TARTINE WITH PICKLED RED ONIONS
Tartines can be considered dressed-up open-faced sandwiches, but I love them for their versatility and beautiful presentation. These have autumn written all over them and the variety of mushrooms adds to the appeal. The technique of twice cooking the mushrooms is a restaurant trick that ensures crispy, well caramelized and deeply flavorful mushrooms.

- Preheat the oven to 450 degrees F.
- Put the red wine vinegar, 1 tablespoon kosher salt and 1/4 cup water in a small saucepan and bring to a boil over medium-high heat. Put the onions in a small heatproof bowl, then pour over the hot liquid to completely submerge them. Let sit at room temperature to pickle and turn bright pink, about 15 minutes.
- Meanwhile, heat 3 tablespoons of the olive oil in a small saute pan over low heat. Add the garlic and cook until tender, about 5 minutes; the garlic will sizzle but not brown. Set aside in the warm oil to soften and cool, about 5 minutes more.
- Heat 1 tablespoon olive oil in a large saute pan over medium-high heat. Add the mushrooms and a good pinch of kosher salt and cook until just tender and starting to release their liquid, about 5 minutes. Transfer to a colander set over a large bowl to drain. Wipe out the saute pan and reserve for later use.
- Use a pastry brush to brush about 1 tablespoon of the garlic oil on the sliced bread; transfer to a baking sheet. Bake until the bread is toasted on the outside but still soft on the inside, 12 to 15 minutes.
- Add the remaining garlic oil and softened garlic to a medium bowl, then stir in the goat cheese, lemon zest and good grind of pepper.
- Heat the butter and remaining 1 tablespoon olive oil in the reserved saute pan over high heat. Once the oil is very hot and shimmering, add the drained mushrooms and cook, undisturbed, until lightly browned and crisp at the edges, about 2 minutes. Give the mushrooms a good toss, then continue to cook until they are well browned and crisp all over, about 4 minutes more. Add the parsley and thyme and toss until well combined.
- Spread the goat cheese mixture on the toasted bread, then top with the mushrooms. Top with some pickled onions and sprinkle lightly with flaky sea salt. Cut each tartine in half and serve warm.
RED ONION TRI-MUSHROOM QUICHE
A wonderful brunch offering! This quiche is made without cheese and has a variety of mushrooms for added interest. Simply delicious, we are in love with this breakfast fare. This dish does take a while to make, but very much worth the work. High return on compliments and flavor! You may wish to add cheese, it's very good that way too.

- Sift flour and salt into a bowl.
- Add the butter and cut it into the flour until mixture resembles breadcrumbs.
- Beat the egg yolk with the water in small bowl.
- Sprinkle liquid onto flour mixture and combine with your fingertips.
- Form dough into a ball.
- Cover and chill for 30 minutes.
- Preheat the oven to 375 degrees and grease pie or quiche pan with butter.
- Roll out dough on floured surface and then line the pan.
- Prick bottom with fork and chill for 30 minutes.
- Line with foil and dried beans and bake in the oven for 25 minutes.
- Remove the foil and beans and cool on a wire rack.
- Reduce oven temp to 350 degrees.
- Melt butter in a large, heavy bottomed skillet.
- Add the onions, cover and cook over very low heat, stirring occasionally, for 20 minutes.
- Add mushrooms and thyme and cook for an additional 10 minutes, stir often.
- Spoon mixture into cooled tart shell and place the pan on a cookie sheet.
- Lightly beat the egg with the egg yolks and cream ans season to taste with salt and pepper.
- Pour mixture over mushroom filling and bake for 20 minutes or until the filling is set and golden.
- Serve hot or at room temperature.

ONION, WALNUT & MUSHROOM TARTE TATIN

- Heat oven to 200C/180C fan/gas 6. Peel the onions and cut each into 6 wedges through the root. Heat the oil in a large pan, add onions, then gently fry for 20 mins until softened and lightly coloured.
- Add the mushrooms, sugar, salt and pepper and give it a good stir. Gently cook, stirring now and then for a further 5 mins. Stir in the walnuts. Line the base of a 20-23cm sandwich cake tin (not loose-based) with baking parchment. Spoon over the onion mixture and press it down lightly. Crumble the cheese over.
- Roll out the pastry and trim to a round, about 5cm larger than the tin. Put the pastry over the filling and tuck in the ends. Bake for 35-40 mins until the pastry is crisp and golden. Cool for 5 mins in the tin, then turn out onto a flat plate and cut into wedges. Serve with a green salad.

This is what I like to do year round. It is so easy to do, and it only requires a few main ingredients. Edited Note: After much consideration, I have decided to change the measurements. Steps:
- Saute onions in olive oil until translucent, about 5 minutes on medium heat.
- Add mushrooms and saute for another five minutes.
- Add red pepper, and saute for two more minutes.
- Put on low and add lemon juice and wine.
- Add seasonings. It is best served warm.
