Categories     main-dish

Time 1h20m

Yield 4 to 6 servings

Number Of Ingredients 11

2 tablespoons oil (I'm using olive oil)
2 pounds ground meat of your choice, such as beef, pork, turkey, chicken, lamb (I'm using beef)
1 onion, diced (I'm using yellow onion)
2 cloves garlic, minced
1/4 cup tomato paste
3/4 cup liquid of your choice, such as beef stock, chicken stock, water or wine (I'm using red wine)
One 28-ounce can tomato product (I'm using crushed tomatoes)
2 tablespoons oregano (if you have it)
Salt and pepper
1 pound dry pasta (I'm using rigatoni)
3 tablespoons grated hard cheese (I'm using Parmesan)

Steps:

  • Heat a large saucepan over medium heat and add the oil. When hot, add the meat and cook, without stirring, until browned, 3 to 5 minutes. Break it up with a wooden spoon, then add the onion and garlic and cook, stirring, until starting to soften, about 2 minutes. Add the tomato paste and cook for 2 to 3 minutes. Add the wine and bring to a simmer. Add the crushed tomatoes and oregano and season with salt and pepper. Simmer until thickened and the flavors come together, about 1 hour.
  • About 20 minutes before the sauce is done, bring a large pot of water to a boil and salt liberally. Drop in the pasta, give it a stir and cook until al dente according to the package instructions. Drain the pasta and add it to the sauce. Remove from the heat, toss in the cheese and serve.

RED MEAT SAUCE FOR PASTA

Red Meat Sauce for Pasta image

I just tried this sauce and let me tell you, it is incredible! It is a very thick meat sauce that tastes oh-so authentic. I prepared this the day before serving, and I think it's even better the second day. True to how they used to do it in the old days, Renata has left the seasoning measurements up to the cook. This is a great way to make the sauce your own by simply adjusting the spices to your family's tastes. I started out with light seasoning - about 1 teaspoon of each of the dry spices - then kept adding until it was to my liking. In the end, I used 2 teaspoons of each of the dry spices and about 1/2 cup of both the fresh basil and oregano. You may like even more spice. Give it a taste and let us know what works best for you!

EASY RED PASTA SAUCE

Easy Red Pasta Sauce image

Plain, simple, no frills, basic red sauce that tastes great on a variety of pasta and is not watered down. For making a good sauce, use canned tomatoes. Except for the summer months, the 'fresh' tomatoes are usually harvested when green and left a long time to ripen. Add more red pepper flakes if you like your sauce spicy!

Time 1h

Yield 6

Number Of Ingredients 9

4 tablespoons olive oil
2 cloves garlic
¼ cup chopped onion
2 tablespoons dried parsley
1 tablespoon dried basil
ground black pepper to taste
1 (29 ounce) can Italian-style stewed tomatoes, drained
1 pinch crushed red pepper flakes
12 ounces angel hair pasta

Steps:

  • In a medium saucepan over low heat, warm oil and saute garlic; heat through until the garlic turns translucent, not brown. Add onion and cook over low heat until translucent; 5 to 10 minutes.
  • Add parsley, basil and ground black pepper; stir. Add tomatoes and cover; raise heat to medium and bring to a strong simmer. Lower heat and add red pepper flakes. Cover saucepan and cook for 25 to 35 minutes.
  • The sauce can be run in the food processor for 2 to 3 seconds to achieve a more uniform sauce or let the sauce cook over medium-low heat uncovered for 10 minutes or until it thickens.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 6 to 8 minutes or until al dente; drain and serve with sauce.
