SPINACH STUFFED PORTOBELLO MUSHROOMS



Spinach Stuffed Portobello Mushrooms image

Mix together spinach, pepperoni, and cheese for delicious easy appetizer.

4 large portobello mushroom caps, stems and gills removed
1 tablespoon reduced-fat Italian salad dressing
1 egg
1 clove garlic, minced
salt and ground black pepper to taste
1 (10 ounce) bag fresh spinach, chopped
¼ cup chopped pepperoni
¼ cup grated Parmesan cheese
¼ cup shredded mozzarella cheese, divided
3 tablespoons seasoned bread crumbs, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Brush both sides of each portobello mushroom cap with Italian dressing. Arrange mushroom on a baking sheet, gill sides up.
  • Bake mushrooms in the preheated oven until tender, about 12 minutes. Drain any juice that has formed in the mushrooms.
  • Beat egg, garlic, salt, and black pepper together in a large bowl.
  • Stir spinach, pepperoni, Parmesan cheese, 3 tablespoons mozzarella cheese, and 3 tablespoons bread crumbs into the eggs until evenly mixed.
  • Divide spinach mixture over mushroom caps; sprinkle mushrooms with remaining 1 tablespoon mozzarella cheese and 1 tablespoon bread crumbs. Return mushrooms to the oven.
  • Continue baking until topping is golden brown and cheese is melted, about 10 minutes more.

Red Bell Pepper & Spinach Stuffed Portabellas (Vegetarian) image

I tried the Vegetable Wellington on the cover of Vegetarian Times, but wasn't crazy about it so I kept messing around with similar ingredients. I finally came up with this and holy cow, is it delicious! This could be either a main dish or appetizer, depending on the size of the mushrooms. Please forgive me for not having exact amounts, I really just threw stuff in 'to taste.' I'm an inexperienced cook but pulled this off nicely. Any helpful comments are welcome!

4 -6 portabella mushroom caps (cleaned, stems removed)
1 (10 ounce) jar green pesto sauce
1 (8 ounce) package cream cheese
baby spinach leaves
1 medium red pepper, thinly sliced
1 medium red onion, thinly sliced
sliced smoked gouda cheese
olive oil

Steps:

  • In a small bowl, mix cream cheese with some of the prepared pesto. (However much tastes good to you!).
  • Heat 2 tablespoons of olive oil in a pan.
  • Add red onions and red peppers, cook until tender.
  • Remove from heat. Toss in torn-up spinach leaves, let them wilt.
  • While onions and peppers are cooking, brush mushrooms with olive oil.
  • Add a nice sized dollop of cream cheese mixture, and then a spoonful of veggie mixture to each mushroom.
  • Roast mushrooms 10 minutes or so until they look and smell impressive! :).
  • Add a square of smoked gouda on top, cook a few more minutes until melted.
  • Enjoy!

2 (10 ounce) bags spinach, washed and trimmed (10 oz. each)
1 tablespoon olive oil
4 garlic cloves, slivered
1/4 teaspoon hot pepper flakes
1 sweet red pepper, thinly sliced
3/4 teaspoon salt
1 pinch pepper

Steps:

  • Shred spinach and cook in dry skillet until wilted (about two minutes), transfer to plate.
  • Heat oil in same skillet.
  • Cook garlic and pepper for one minute.
  • Add spinach, red pepper, salt and pepper.
  • Cook, stirring often, for 4 minutes or until red pepper is tender crisp.

These are good for an everyday supper since they're so easily prepared, yet look no further of you want something elegant enough to present at a dinner party. This dish is nice served on a bed of pasta topped with Tomato Sauce.

4 large portabella mushrooms (4 1/2 to 5 inches)
3 tablespoons olive oil
1 cup minced onion
3 garlic cloves, minced or pressed
2/3 cup minced red bell pepper
3 tablespoons chopped fresh basil
2/3 cup ricotta cheese
1 cup grated mozzarella cheese
1/4 cup grated parmesan cheese
1/4 teaspoon salt
2 tablespoons breadcrumbs

Steps:

  • Preheat the oven to 400 degrees F.
  • Lightly oil a baking dish.
  • Carefully brush or wipe off any soil from the mushrooms.
  • Twist off the stems and discard.
  • Rinse the mushroom caps and pat dry with a towel.
  • In a skillet, warm 2 Tbs of the olive oil and sauté the onions for about 5 minutes, until they begin to soften.
  • Add the garlic and peppers and sauté for 5 minutes more.
  • Remove from the heat and set aside.
  • In a bowl, mix together the basil, ricotta cheese, mozzarella, Parmesan, salt, and bread crumbs.
  • Stir the sautéed vegetables into the cheese mixture.
  • Brush the portabellos with the remaining Tbs of oil and place them gill side up in the prepared baking dish.
  • Mound cheese mixture in each.
  • Bake uncovered for 20-25 minutes, until the mushrooms release their juices and the cheese is melted.
  • Serve hot.

2 tablespoons extra-virgin olive oil
2 medium shallots, thinly sliced lengthwise
1 pound baby or regular spinach, tough stems discarded
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
2 teaspoons fresh lemon juice

Steps:

  • Place bell pepper directly over the flame of a gas-stove burner or under the broiler. Roast pepper, turning with tongs, until blackened all over. Transfer pepper to a medium bowl, and cover immediately with plastic wrap. Let steam 15 minutes. Discard skin, stem, seeds, and ribs; slice pepper lengthwise into 1/8-inch-thick strips, and set aside.
  • Heat oil in a large skillet over medium heat. Add shallots; cook, stirring, until golden, 1 to 2 minutes. Add roasted pepper; cook, stirring, until heated through, about 30 seconds. Raise heat to medium-high. Add half the spinach, and cook, stirring, until wilted, about 2 minutes. Add remaining spinach, and cook until wilted, about 2 minutes more. Stir in salt, pepper, and lemon juice, and serve.
