Red and Yellow Watermelon Salad image

Easy to make; sweet and refreshing! I used two varieties of watermelon-seedless red and seedless yellow! Fresh mint from the garden, too! For the fruit-flavored vinegar, raspberry flavor was used. From Quick and Simple magazine with a few minor changes.

3 cups cubed red watermelon, seeded if necessary
3 cups cubed yellow watermelon, seeded if necessary
1/3 cup scallion, chopped
1/3 cup red onion, diced small
2 tablespoons fruit vinegar (white wine or white balsamic can be substituted instead)
1/4 cup extra virgin olive oil
salt, to taste
cracked black pepper, to taste
2 tablespoons fresh mint leaves, chopped
2 tablespoons fresh basil leaves, chopped
1 tablespoon garlic chives, minced

Steps:

  • In a large salad bowl, combine the watermelon cubes, scallions and red onion.
  • In a small non-reactive bowl whisk together the vinegar and olive oil. Season with salt and pepper to taste.
  • Pour the vinaigrette over the melon mixture. Add the herbs and toss gently to coat.
  • Cover and refrigerate 1 hour.

6 cups cubed seedless watermelon
2 medium yellow summer squash, chopped
2 medium zucchini, chopped
1/2 cup lemon juice
12 fresh mint leaves, torn
1 teaspoon salt
8 cups fresh arugula or baby spinach
1 cup (4 ounces) crumbled feta cheese

Steps:

  • In a large bowl, combine the first 6 ingredients. Just before serving, add arugula and cheese; toss gently to combine.

In this refreshing summer salad, aromatic mint ties together the sweetness of watermelon and the savory notes from ricotta salata.

1 small (2 1/2 pounds) seedless red watermelon
1 small (2 1/2 pounds) seedless yellow watermelon
2 ounces ricotta salata
1/2 teaspoon coarse sea salt, preferably Maldon
3 tablespoons sliced fresh mint

Steps:

  • Using a sharp knife, cut off rinds from watermelons. (You should have a total of 2 pounds peeled fruit.) Quarter each melon, and then cut into 3-inch-long, 1/4-inch-thick slices. Arrange slices on a serving platter.
  • Using a vegetable peeler, shave paper-thin slices of ricotta salata over watermelon. Sprinkle with salt and mint, and serve immediately.

GINGERED WATERMELON AND YELLOW TOMATO SALAD



Gingered Watermelon and Yellow Tomato Salad image

Yield Serves 4

Number Of Ingredients 7

a 4-pound piece watermelon (preferably seedless)
2 pounds vine-ripened tomatoes (about 6 medium; preferably yellow)
1 teaspoon coarse salt (preferably sea salt)
1/2 small red onion
2 tablespoons fresh lime juice, or to taste
1 teaspoon finely grated fresh gingerroot
1/2 teaspoon sugar

Steps:

  • Remove rind and any seeds from watermelon. Cut fruit into 1 1/2-inch pieces and put in a large bowl. Cut tomatoes into 1 1/2-inch pieces. Add tomatoes and salt to watermelon, tossing to combine. Let mixture stand at cool room temperature 3 hours.
  • In a colander set over a small saucepan drain mixture and transfer to a bowl. Simmer liquid until reduced to about 2 tablespoons and cool completely. Halve onion and thinly slice enough to measure 1/4 cup. Add onion to watermelon mixture. (For best results do not chill salad, as it will lose flavor.) In a small bowl stir together reduced watermelon-tomato juice, lime juice, gingerroot, and sugar.
  • Just before serving, toss salad with juice mixture.
