Number Of Ingredients 6

4 cups torn mixed salad greens
2 tablespoons sliced green onion
2 medium red apples, diced
2 kiwifruit, peeled and sliced
1 cup unsweetened raspberries
1/2 cup poppy seed or French salad dressing

Steps:

  • In a bowl, toss the salad greens, onion and fruit. Drizzle with dressing. Serve immediately.

With its sweet and sour crunch, this salad is sure to be a winner at your table.

Yield serves 4, 1 3/4 cups per serving

Number Of Ingredients 10

2 tablespoons chopped walnuts
6 cups torn romaine
1 cup frozen green peas, thawed
1/4 cup chopped red onion
1/4 cup dried sweetened cranberries
2 tablespoons lemon juice
1 tablespoon whole-grain mustard
1/2 teaspoon bottled minced garlic or 1 medium garlic clove, minced
2 teaspoons olive oil (extra-virgin preferred)
2 teaspoons honey

Steps:

  • In a small skillet, dry-roast the walnuts over medium heat for about 4 minutes, or until just fragrant, stirring frequently. Remove from the skillet so they don't burn.
  • In a salad bowl, gently toss together the romaine, peas, onion, and cranberries.
  • In a small bowl, whisk together the lemon juice, mustard, garlic, oil, and honey. Drizzle over the salad. Toss gently.
  • Sprinkle with the walnuts.
  • You can substitute 3 or 4 thinly sliced strawberries for the dried cranberries if you prefer.

Steps:

  • Boil 1/4 cup balsamic vinegar, 2 tablespoons brown sugar and the juice of 1 lemon in a saucepan until thickened, about 5 minutes. Whisk in 2/3 cup olive oil and season with salt and pepper. Combine torn frisee, romaine lettuce and red endive in a large bowl. Add sliced red onion, scallions, parsley and candied walnuts. Toss with the dressing.

8 to 10 ounces pasta, any short shape (try gemelli or farfalle)
1 1/2 cups frozen green peas
1 large red bell pepper, cut into narrow strips
1/3 cup pitted black olives, preferably oil-cured
1 large celery stalk, diced
5 or 6 radishes, thinly sliced, or 1/3 cup thinly sliced daikon radish, cut into half circles
1 cup diced vegan Cheddar cheese
1/4 cup minced fresh parsley or dill, or a combination
1/2 cup Salsa and Olive Oil Salad Dressing (page 223), or 1/3 cup vinaigrette, homemade (page 221), or store-bought
Salt and freshly ground pepper to taste

Steps:

  • Cook the pasta in plenty of rapidly simmering water until al dente. When the pasta is almost done, add the peas and cook briefly. Drain and rinse until cool, then drain well again.
  • Toss the pasta and peas with the remaining ingredients. Serve at once.

This recipe is more about assembly than actual cooking. (I mostly wanted to post my pics, which are pretty!) I had store-bought Romaine and Aerogarden -grown mixed greens, as well as strawberries and blueberries, needing to be eaten, so I made this salad (a variation of the usual strawberry-feta salads). I also put Recipe#49956 on it, but any bottled raspberry vinegrette will work. Also, it would be good with sliced chicken, avocado, onion, etc on top, or made with spinach. Feel free to enjoy it on the 4th, or any day!

2 cups mixed salad greens
1/4 cup crumbled feta cheese
2 tablespoons candied or toasted walnuts
4 strawberries, sliced
1/4 cup blueberries
raspberry vinaigrette dressing

Steps:

  • Lay the greens on the plate.
  • Pile the feta and walnuts in the middle of the greens.
  • Scatter the strawberries and blueberries on top.
  • Serve with the dressing on the side, and not until ready to eat (it wilts the salad).
  • Enjoy!

1 head butter or 1 head boston lettuce
12 cherry tomatoes, cut in half
1/4 cup loosely packed cilantro leaf
3 ounces ricotta salata
4 scallions (white parts only) or 4 spring onions, thinly sliced (white parts only)
4 scallions (dark green tops only) or 4 spring onions, thinly sliced (dark green tops only)
1 jalapeno pepper, chopped (seeds removed)
1/4 cup loosely packed cilantro, leaves
2 tablespoons fresh lime juice
1/4 teaspoon coarse salt
1/2 cup extra virgin olive oil

Steps:

  • To make dressing: In a mini-food processor or blender, add scallions, 1 tsp jalapeno pepper, cliantro, lime juice, and salt; pulse to combine. Taste and adjust flavour as necessary.
  • To make salad: Arrange lettuce leaves in bottom of a large serving dish. Add tomatoes, then clinatro leaves, crumble ricotta over the top and sprinkle with scallions. Place avocado in centre. Serve with dressing on the side.
