3-INGREDIENT APPLESAUCE (NO SUGAR ADDED)
Steps:
- To a medium saucepan (see notes for Instant Pot instructions) add peeled chopped apples, cinnamon, a dash of water (~2-3 Tbsp / 30-45 ml as original recipe is written), and lemon juice or apple cider vinegar. Stir.
- Cover and cook over medium heat until it simmers, then reduce heat to low / medium-low and continue cooking until the apples are very tender and slightly caramelized - about 15-20 minutes. Stir occasionally.
- Use the back of a wooden spoon or potato masher to mash into a loose sauce. You could also blend with an immersion blender, in a food processor or high-speed blender for smoother texture (optional) - a helpful step if you left the skins on. Add a dash of maple syrup or sugar of choice to sweeten (optional - depends on sweetness of your apples).
- Enjoy fresh, or store cooled leftovers in the refrigerator up to 4-5 days, or in the freezer up to 1 month. Enjoy cold or reheated in the microwave or on the stovetop over low heat until hot (add more water as needed if dry).

RASPBERRY ROASTED APPLESAUCE
Steps:
- Preheat the oven to 350 degrees F.
- Place the zest and juice of the oranges and lemon in a large (11-inch) ovenproof pot or Dutch oven, such as Le Creuset. Peel, quarter, and core the apples and add them to the pot, tossing them with the juices as you go.
- Add the brown sugar, butter, cinnamon, and raspberries, cover, and bake for 1 to 1 1/4 hours, until the apples are very soft. Stir vigorously with a wire whisk. The applesauce will be smooth but still have a lot of texture. Serve warm with a scoop of ice cream and a dusting of orange zest.
NEW CROP APPLESAUCE
New-crop apples (that is, ones just picked) don't necessarily make it to supermarkets, where the general rule is to stock four or five dependable varieties that travel well. Those may come from eastern Washington or New Zealand or Peru. Not that there is anything intrinsically wrong with supermarket apples. They still have more or less the same health benefits and versatility in the kitchen. They just aren't going to make your heart beat faster. If you long for the thrill of new-crop apples, head to a farmers' market, a farm stand or an honest-to-goodness apple tree on a cool day. What you will find is firm, dense fruit, some with the leaves still attached. When you take your first bite into the crisp flesh, the sweet juices fairly drip upon the tongue, not at all like the apples you recall. Smack your lips and swoon.
