Steps:
- In a trifle bowl, break up enough graham crackers to cover the bottom.
- Add 1/3 cup of lemon curd, spread on crackers. Arrange berries along sides and in center. Add 1 cup of whipped cream and spread until smooth.

STARS AND STRIPES BERRY TRIFLE
Little pound-cake sandwiches make this dish something special, not to mention it's delicious! A glass trifle bowl is needed for this, and straight-sided works best. I usually put the berries in as is and skip the sugar step, although admittedly the berries do look prettier with the glossy sugar. I have also made this with just one pound cake, half the amount of custard and blueberries but double the raspberries, and it was equally good! I have also served it with some chocolate shavings on top or with chocolate sauce on the side - or both! And serving this in individual serving dishes looks nice also. I make recipe#238798 for the custard, but make sure to double it to get the full four cups you'll need for this trifle. This recipe comes from Cook's Country.

Steps:
- FOR THE STARS:.
- Slice each cake lengthwise into 5 equal pieces.
- Spread scant 2 teaspoons jam each on 5 cake slices and top with remaining slices to create jam sandwiches.
- Using 2-inch star cookie cutter, cut out 3 stars from each sandwich.
- Chop remaining sandwich scraps into 1/2-inch pieces and set aside.
- FOR THE BERRIES:.
- Toss blueberries, 1 T. sugar and water in bowl.
- In separate bowl, toss raspberries with remaining sugar.
- Let sit until sugar dissolves and berries are glossy, about 5 minutes.
- TO ASSEMBLE:.
- Arrange 7 star sandwiches upright around bottom of 3-quart trifle dish.
- Place 2 cups sandwich scraps in center of dish.
- Arrange 3 cups blueberries around stars, piling up blueberries so that they surround all edges of stars.
- Spread 2 cups custard in even layer on top of blueberry and cake layer.
- Place 1 cup sandwich scraps on center of custard layer.
- Arrange 2 cups raspberries around perimeter of dish.
- Spread remaining custard in even layer on top of raspberries.
- Arrange 7 star sandwiches upright around perimeter of dish.
- Arrange remaining blueberries around stars and pile remaining raspberries in center of dish.
- Spoon whipped cream on top of raspberries and top with remaining star.

TREMENDOUS TRIPLE BERRY TRIFLE
From a children's cookbook called Monkey Pudding, this is simple to make and very tasty. I cut the sugar -- it originally called for 1/2 cup, and it was plenty sweet. The original recipe said to chill for 30 minutes, but 24 hours is needed if you want the cookies to be nice and soft (so cooking time is actually chilling time). I use Voortman Vanilla Wafer Cookies -- about 3/4 of the package.

Steps:
- In a large mixing bowl, add berries, lemon juice, and sugar; fold ingredients together, being careful not to smash the berries.
- Cover the bottom of a trifle bowl or serving dish with a layer of cookies.
- Spread about a cup of the whipped topping over the cookies.
- Spread 1/3 of the berry mixture over the whipped topping.
- Continue layers until dish is full, ending with whipped topping (keep a few berries back to decorate the top).
- Chill in the refrigerator 24 hours.

- Beat the pudding mix and milk with a whisk for 1-2 minutes till well blended.
- Gently stir in the whipped topping and mix well; set aside.
- Cut the cake into 12 slices and spread 6 slices with the strawberry jam.
- Place the other 6 slices on top of the jam slices so that it is like 6 sandwiches and then cut these into 1/2" cubes.
- Place half the cake cubes in a trifle dish or decorative bowl.
- Cover this layer with 1/2 cup raspberries and 1/2 cup strawberries sliced.
- Slice the banana on top of this layer.
- Top with 1 cup of the pudding mixture.
- Layer again with the cake cubes, 1/2 cup raspberries, 1/2 cup strawberries, and topping (no more banana).
- Garnish with 3-4 pretty strawberries or a few raspberries.
- Refrigerate for several hours.

- Pour milk into large bowl & add pudding mixes. Beat with wire whisk 2 minutes or until well blended. Gently stir in 1 cup whipped topping.

- Coat a 15x10x1-inch jellyroll pan with cooking spray, and line with wax paper.
- Coat wax paper with cooking spray.
- Spread sponge cake batter evenly onto prepared pan.
- Bake at 350°F for 15 minutes or until cake springs back when touched lightly in center.
- Immediately loosen cake from sides of pan, and invert onto a wire rack.
- Peel off wax paper, and cool completely.
- Cut cake into 3/4-inch cubes and set aside Place a colander in a 2 quart glass measure or medium bowl.
- Line colander with 4 layers of cheesecloth, allowing cheesecloth to extend over edges.
- Spoon yogurt into colander, cover loosely with plastic wrap, and chill 1 hour.
- Spoon yogurt cheese into a bowl; discard liquid.
- Add sugar and stir well.
- Cover and chill Position knife blade in food processor bowl, and add raspberries in bowl.
- Process until smooth.
- Pour into a bowl and stir in blueberries and 3 cups strawberries. Set aside.
- Line bottom of a 2 qt trifle bowl with 1/3 of cake cubes and drizzle with 1 Tbs sherry.
- Spoon half of berry mix over cake cube layer and spoon 1/3 of yogurt mix over berry layer.
- Repeat layers.
- Place remaining cake cubes over yogurt mix.
- Drizzle remaining 1 Tbs sherry over the cake cubes.
- Spoon remaining yogurt mix over top.
- Cover and chill up to 4 hours.
- Arrange 3 strawberry halves on top of trifle.

- Combine boiling water and gelatin in a large bowl; stir until gelatin dissolves (about 2 minutes). Add cold water and ice cubes, stirring until slightly thickened. Remove any unmelted ice. Stir in banana and blueberry pie filling; set aside.
