4 Cups Pepper Jack Cheese (Shredded)
2-3 Jalapenos (Diced (Seeds Removed))
1/2 Cup Flour
1 Egg
1 Cup Milk
1 1/2 Cup Bread Crumbs
1 teaspoon Cayenne Pepper
1 teaspoon Paprika
1 teaspoon Garlic Powder
Oil (For Frying)

Steps:

  • In a large bowl, stir pepper jack cheese and Jalapeno together.
  • Shape into balls about 1 1/2" in diameter. Freeze for 30-60 minutes.
  • Heat oil in a deep pot to 350 degrees F.
  • Combine bread crumbs, cayenne pepper, paprika, and garlic powder.
  • Set up 3 bowls containing: flour, egg and milk, and finally breadcrumbs.
  • Roll cheese mixture in flour, milk/egg mixture, and finally bread crumbs.
  • Fry a few at a time for 3-4 minutes.
  • Drain on paper towels before serving.

1 c. shredded mozzarella
1 c. Shredded Monterey Jack
2 jalapeños, minced
1 clove garlic, minced
1 c. all-purpose flour
kosher salt
Freshly ground black pepper
3 large eggs, beaten
1 c. plain bread crumbs
1 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. cayenne pepper
Canola or vegetable oil, for frying
Ranch dressing, for serving

Steps:

  • Line a large, rimmed baking sheet with parchment. In a large bowl, mix together cheeses, jalapeños, and garlic.
  • Using a tablespoon, scoop into balls and squeeze tight. Place on baking sheet and freeze until solid, at least 30 minutes.
  • Set up dredging station: In a shallow bowl, add flour and season with salt and pepper. In another shallow bowl, add eggs. In a third shallow bowl, add bread crumbs, paprika, garlic powder, and cayenne. Mix to combine.
  • Roll frozen cheese balls into flour, then eggs, and then bread crumbs, repeating until all are well coated.
  • In a large, deep skillet, heat 1/4" oil over medium heat until shimmering. In batches, fry bites until golden on all sides, about 3 minutes. Drain on paper towels.
  • Serve bites with ranch.

  • 1. In large skillet, cook beef and chilies over medium heat until meat is no longer pink; drain. Add ream cheese, cumin and chili powder. Cool slightly.
  • 2. Preheat over to 375. Separate crescent dough into 24 triangles. Place 1 tablespoon of beef mixture along the short end of each triangle.; carefully roll up.
  • 3. Place point side down 2 inches apart on ungreased baking sheets. Bake 11-14 minutes or until golden brown. Serve warm.

1 cup chopped jalapenos
1 cup red bell peppers
4 cups monterey jack cheese, shredded
1 1/2 cup bread crumbs, seasoned or unseasoned
1 1/2 cups buttermilk
vegetable oil

Steps:

  • 1. Preparation: In a shallow bowl, mix cheese, jalapenos and peppers.
  • 2. Roll into a firm ball, place in covered bowl and let set over night in the refrigerator.
  • 3. The next day roll into one ounce balls,dip in buttermilk , then dip balls in breadcrumbs. Deep fry in hot oil until golden brown.
  • 4. Serve immediately with Ranch Dressing or Cajun Horseradish Sauce!

12 jalapeno peppers
1 egg
2 tablespoons milk
1 tablespoon flour
1 dash salt
1 dash pepper
1 1/2 cups breadcrumbs
vegetable oil, enough for frying
1 cup shredded monterey jack cheese
12 ounces softened cream cheese
1 tablespoon bacon bits

Steps:

  • Wash jalapeno and sliced them lengthwise.
  • Remove the seeds from each half.
  • In a small bowl, mix together the Monterey Jack cheese, cream cheese, and the bacon bits.
  • Fill each jalapeno half with about four or five teaspoons of the Monterey Jack cheese and cream cheese mixture.
  • Mix flour, egg, milk, salt, and pepper to taste in a deep plate (for example, a pie plate).
  • Place breadcrumbs in another deep plate.
  • Roll each jalapeno half in egg mixture to coat.
  • Roll the coated jalapeno in breadcrumbs until covered.
  • Place the Rattlesnake Bites in the freezer for at least 30 minutes. This will firm up the filling, making it easier to fry the bites.
  • Deep fry in hot oil until golden brown.
