Raspberry Zinger Cake Recipes

RASPBERRY ZINGER CAKE

Steps:

• Preheat oven to 350 degrees. Grease and flour two (9-inch) round cake pans. Place two wire rack over two baking sheets; set aside.
• CAKE: In a large bowl, whisk together cake mix and vanilla pudding mix. Make a "well" in the center. Add eggs, water and cooled melted butter. Beat on medium speed for about 1 minute until batter is smooth and thick. Spread evenly into prepared pans.
• Bake for 20 -25 minutes or until tops spring back when lightly touched, or a toothpick inserted in center of cake comes out clean. Let cake cool in pans for 5 minutes, remove to wire rack to cool completely.
• RASPBERRY TOPPING: Pour Jell-O mix into a medium bowl. Pour boiling water over Jell-O, whisk until dissolved. Pour into a large, shallow pan and set in the refrigerator until slightly thickened, about 15-20 minutes.
• Meanwhile, place coconut in a food processor and pulse a few times until coconut is in smaller pieces. Pour into a bowl and toss with cornstarch until coated; set aside.
• Trim the domed tops from cooled cakes. Dip cakes one at a time into the slightly thickened Jell-O mixture, working quickly so the cakes don't get too soggy and fall apart.
• Place cakes back on wire racks and gently press coconut onto the top of each cake. Let cakes set for 1-2 hours.
• FILLING: In a large bowl, beat 1/2 cup softened butter, vanilla, and whipping cream on medium low speed. Add marshmallow cream and beat on medium until smooth. Slowly beat in confectioners' sugar until just combined. Increase speed to high and beat for one minute, until fluffy. Pipe frosting over bottom cake layer. Place top layer over frosted bottom layer. Slice and serve.
• Keep leftovers in the refrigerator.

RASPBERRY ZINGER CAKE

Steps:

• 1. You will need a batch of your best vanilla batter. I didnt include my receipe. Bake the batter in a 10 inch cake pan.
• 2. Once cake is cool, cut cake vertically in half. Once you have made your cream filling, I did not include my receipe, top secret; place entire batch of cream filling on one layer and place last layer on top of cream filling.
• 3. Use your best raspberry frosting. I used cream cheese, confectioners' suger, and raspberries. Frosting entire cake then cover with coconuts. Know you got this recipe first frm Taymi's Sweet!!

WEIGHT WATCHERS RASPBERRY ZINGER CAKE

Steps:

• Take dry cake mix and add the 2 egg whites and soda. Mix well with electric mixer. Pour into ungreased 9x13 dish and bake as directed on the box. Let cool for 15 minutes.
• Then take the boiling water and add the jello. Stir till jello is disolved.
• Poke holes into your cake with end of wooden spoon. Then pour jello mixture over the cake. Cover and referigerate 2 hrs or overnight. Then spread on the cool whip and top with coconut.

RASPBERRY & GINGER FRIDGE CAKE

Steps:

• Using an electric whisk, beat the cream to soft peaks, then fold in the vanilla extract and chopped preserved ginger.
• Arrange about 5-6 biscuits (depending on their size) in a circle on a serving plate, then fill the gap in the centre with more biscuits. Spoon a layer of the whipped cream in blobs onto each biscuit and dot over some raspberries, pushing them into the cream. Add another, smaller circle of biscuits in a layer, and add more cream and raspberries. Repeat until you have used all the cream and biscuits, then decorate with any remaining raspberries.
• Put the cake in the fridge to chill for at least 3 hrs. To test if the cake is ready to serve, poke a skewer into the biscuits in the centre. Once they're soft enough to cut, the cake is ready. Drizzle over some ginger syrup just before serving, if you like.
