CHARLOTTE ROYALE WITH CHOCOLATE ICE CREAM



Charlotte Royale with Chocolate Ice Cream image

Nonstick cooking spray, for the pan
2 (7-ounce/200-gram) tubes almond paste
9 eggs, separated, at room temperature
1/2 teaspoon salt
1/4 teaspoon cream of tartar
3/4 cup (150 grams) granulated sugar
1 tablespoon vanilla extract
3/4 cup (65 grams) Dutch-process cocoa powder (I use Cacao Barry Extra Brute)
1 cup (100 grams) confectioners' sugar, for dusting
1/2 cup (120 milliliters) coffee
1/2 cup (100 grams) granulated sugar
1 1/2 cups crushed chocolate wafer cookies
1 gallon chocolate ice cream, softened slightly

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Line a half sheet pan (18-by-13-inch baking sheet) with parchment paper and spray only the bottom with nonstick cooking spray.
  • Roll the almond paste between two sheets of parchment paper into a 9-by-14-inch rectangle; set aside.
  • In the bowl of a stand mixer fitted with the whisk attachment, add the egg whites and salt and whisk just until foamy. Whisk in the cream of tartar. Slowly add 1/2 cup (100 grams) of the granulated sugar and whisk on high speed until stiff peaks form. (Be careful not to overwhip to the point of dryness or clumping.) Transfer the egg whites to a large clean bowl.
  • In the same stand mixer bowl (you needn't clean it), add the egg yolks, vanilla and the remaining granulated sugar and whisk on high speed until the mixture is pale yellow and forms ribbons when you lift the whisk.
  • Stir one-third of the egg whites into the yolk mixture. Using a large rubber spatula, gently fold in the remaining egg whites. Sift the cocoa powder over the egg mixture and fold into the batter until just combined. Transfer the mixture to the prepared sheet pan. Using a large offset spatula, spread the batter evenly into the prepared pan. Bake for 25 minutes, or until the cake springs back lightly when touched.
  • Sprinkle the confectioners' sugar onto a clean kitchen towel in an even layer. Run a very sharp paring knife along the side of the pan and release the cake. Invert the cake onto the towel and remove the parchment.
  • While the cake is still very warm, place the rectangle of almond paste onto the cake. Using the kitchen towel to help you, roll the cake into a jelly roll and wrap the towel tightly around the cake to keep it in place. Allow to cool completely.
  • For the coffee simple syrup: Put the coffee and granulated sugar in a small saucepan and heat, stirring, until the sugar is dissolved. Let cool.
  • To assemble the Charlotte Royale: Line a 10-inch metal mixing bowl with plastic wrap so that the plastic wrap hangs over the side. Cut the jellyroll into rounds 1/3 inch thick. Dip the bottom of each round quickly into the coffee simple syrup and use the rounds to line the bowl. Start at the middle and place them packed tightly together soaked-side down. Use 1/2 cup of the cookie crumbs to coat the inside of the rolls in the bowl, pressing gently with your hands to get in between any gaps in the rolls.
  • Add 1/2 gallon of the softened chocolate ice cream into the center of the cake-lined bowl, packing it in gently and spreading to even and smooth the top. Add 1/2 cup crushed chocolate wafer cookies in an even layer, then top with the remaining 1/2 gallon ice cream, packing it in gently again and using an offset to spread evenly. Finish with an even layer of the remaining 1/2 cup cookie crumbs. Place in the freezer until firm (at least 4 hours or overnight).
  • Trim any overhang from the cake base. Invert onto a serving platter and use the plastic wrap to coax the Charlotte out of the bowl. Remove the plastic wrap. Allow the cake to rest for about 30 minutes in the refrigerator to thaw to a temperature where it can be sliced. Slice and serve immediately.

½ tsp flavourless oil for greasing, such as sunflower oil
5 gelatine leaves
140g golden caster sugar
500g raspberries , plus extra to serve
juice 1 lemon
clotted cream or ice cream, to serve

Steps:

  • Use the oil to lightly grease the inside of a 600ml jelly mould. Put the gelatine leaves in a small bowl of cold water, one at a time so they don't stick together. Leave to soak while you cook the raspberries.
  • Pour 300ml water into a large saucepan. Add the caster sugar, heat gently over a medium heat, stirring occasionally until the sugar has dissolved, then add the raspberries. Bring to the boil, then turn the heat right down so the mixture is barely simmering, and cook for 5 mins until the raspberries break down. Stir well, but don't mash them too much as the raspberries will break down in the heat.
  • Carefully pour the raspberry mixture through a sieve set over a large heatproof measuring jug. Stir in the lemon juice, then either top up with cold water or pour some away to ensure you have exactly 600ml total liquid. Drain the water from the gelatine leaves and squeeze out any excess before adding to the raspberry mix. Stir well until the gelatine has completely dissolved, then pour into your jelly mould (see tip below). Once cold, place in the fridge and leave overnight to set.
  • Turn the jelly out onto a large plate just before serving. Serve with a scoop of clotted cream or ice cream, and some raspberries.

1/4 medium ripe melon such as cantaloupe, honeydew, Crenshaw or watermelon
1 1/2 cups fresh raspberries
1 pack unflavored gelatin (1/4 ounce)
2 cups Prosecco or other sparkling wine, fresh or flat
3/4 cup sugar
1/4 cup water
1/2 cup heavy cream
1 tablespoon confectioners' sugar

Steps:

  • For the Gelatines: Use a melon baller to portion the melon into small round balls. Divide the melon balls and half the raspberries evenly among 4 tall narrow glasses or dessert cups, about 8 ounces each.
  • Sprinkle the gelatin over 1 cup of the Prosecco and stir to combine (fresh sparkling wine will bubble up, so do this in a medium bowl with room for froth). Let stand until the gelatin softens, about 5 minutes.
  • Toss the remaining raspberries with the sugar and water in a medium saucepan and heat over low heat until raspberries break down and sugar dissolves, about 5 minutes. Pour off about 3 tablespoons of the raspberry juice, and reserve for flavoring the whipped cream.
  • Add the remaining Prosecco to the berries in the saucepan and heat over medium-low until the berries break up and flavor the wine, about 2 minutes. It's best not to let the wine boil. Stir in gelatin mixture until dissolved, about 1 more minute. Strain and press through a fine mesh strainer to remove any fruit pips. Pour Prosecco gelatin into glasses over the fruit and refrigerate until set, about 3 hours.
  • For the Cream: Just before serving whip the cream and sugar until soft peaks form. Fold in the reserved raspberry juice. Dollop the cream on top of each set gelatin and serve.

LAVENDERTINI

1 cup sugar
1 tablespoon dried lavender
2 3/4 cups vodka (recommended: Smirnoff)
1/4 cup creme de cassis
1 tablespoon curacao
1 cup sparkling water, chilled
Fresh lavender sprigs, for garnish

Steps:

  • In a small pot over medium heat, dissolve the sugar in 1 cup water. Bring to a boil, add the lavender, and remove from the heat. Let sit until cool and strain. (The simple syrup will keep for 2 weeks in the refrigerator).
  • When ready to serve, in a pitcher stir together the vodka, cassis, and half the lavender simple syrup. (You can adjust the sweetness level to your liking). Chill each martini glass with ice until well chilled and remove ice, filling them about 3/4 full with the lavendertini. Top with sparkling water and garnish with fresh lavender sprigs.

  • Coating the rims of the glasses: In a flat dish or saucer, pour a small amount of framboise. Place 1/4 cup vanilla sugar in another saucer. Briefly dip the rim 6 champagne glasses, 1 at a time, in the framboise, and then in the sugar. Set aside to dry.
