Time 1h25m

Yield 12 cups

Number Of Ingredients 17

1 green bell pepper
1 red bell pepper
1 poblano pepper
1 dried guajillo chile
1 dried pasilla chile
3 tablespoons olive oil or vegetable oil
3 medium Spanish onions, coarsely chopped
2 teaspoons ground cumin
2 teaspoons chili powder
1 teaspoon dried oregano, preferably Mexican
1/2 teaspoon dried thyme
1 teaspoon ground black pepper
1 tablespoon kosher salt
6 to 8 garlic cloves, sliced
Two 28-ounce cans chopped tomatoes
Two 6-ounce cans chopped green chiles
1 tablespoon sugar

Steps:

  • On a gas range or under a broiler, roast the green, red and poblano peppers until well charred. Let cool. Stem and seed the charred peppers. Coarsely chop and set aside.
  • In a spice grinder or with a mortar and pestle, finely grind the whole guajillo and pasilla chiles and set aside.
  • In a large saucepan, warm the oil over medium heat. Add the onions and cook, covered, 3 to 5 minutes. Add the guajillo and pasilla chiles, cumin, chili powder, oregano, thyme, black pepper, salt and garlic. Stir and cook until the spices become fragrant and are fully coated in oil, 3 to 5 minutes.
  • Add the tomatoes, green chiles and sugar. Stir and continue to cook until the sauce starts to simmer. Reduce the heat to medium-low and continue to cook until the vegetables soften and the flavors come together, 30 to 40 minutes. Taste and add additional salt and pepper as needed.

RANCHERO SAUCE

Ranchero Sauce image

This is one of my favorite sauces-it's simple, but often poorly executed. When it's done right-the tomatoes and serranos blackened, the onion and garlic sautéed, the sauce gently fried with some cilantro and roasted poblanos-it's a rustic, vivid, soulful sauce that goes great with eggs, chicken, pork, tamales, and seafood.

Yield makes 4 cups

Number Of Ingredients 8

3 poblano chiles, oil-roasted, peeled, cored, and seeded (page 154)
2 1/2 pounds (about 20 small) Roma tomatoes, blackened (page 164)
3 serrano chiles, stemmed and blackened (page 154)
1 tablespoon vegetable oil or lard
1 medium white onion, finely chopped
4 large cloves garlic, finely chopped
1/2 bunch cilantro, tied with kitchen string
1 teaspoon kosher salt

Steps:

  • Cut the prepared poblano chiles into 1/4-inch-thick strips (rajas); set aside. Chop together the blackened tomatoes and serranos and set aside. In a large, heavy skillet, heat the oil over low heat and sauté the onion and garlic until soft but not brown, about 10 minutes (add up to 1/4 cup water, if necessary, to provide moisture and prevent browning). Add the chopped tomatoes and serranos, two-thirds of the poblanos (reserve one-third of the strips to add at the end), the cilantro, and the salt to the pan. Cover and cook over low heat until the flavors have married and the ingredients have lost their raw taste, 20 to 30 minutes. Remove the cilantro and stir in the reserved poblano strips.
  • Serve immediately, or hold at room temperature for up to 2 hours. It can be prepared up to 1 day ahead, refrigerated, and gently warmed before serving (don't overcook).

RANCHERO SAUCE (SALSA RANCHERO)

Ranchero Sauce (Salsa Ranchero) image

I made this sauce one day by fooling around with a recipe in "Border Cooking." I had on hand some great homemade chicken broth and a fresh batch of my Diablo Dust (chile powder made with guajillos and anchos). A good quality chile powder like Gephardt's works nicely, and canned broth should be fine, although, I think homemade is superior. Use this sauce for huevos rancheros, egg dishes, burritos, chimichangas, enchiladas, etc. It is not a table sauce, but is best for topping hot foods.

Number Of Ingredients 12

1 tablespoon olive oil
1 cup chopped onion
2 -3 minced jalapenos
3 cloves chopped garlic
2 tablespoons dry oregano (Mexican, if possible)

2 (10 ounce) cans rotel
salt and pepper
2 tablespoons chopped cilantro leaves
2 tablespoons chopped green peppers

  • Saute onions and jalapenos over a medium heat for 1-2 minutes. Add garlic. Saute another 30 seconds. In a medium size sauce pan, smoke the oregano, cumin, and chile powder over a medium high heat until fragrant. Quickly add chicken stock, then all the rest of the ingredients. Bring to a boil, turn heat to low. Reduce sauce by at least one half. Will freeze.

  • Add the olive oil to a medium-sized saucepan over medium-high heat. Stir in the onion and jalapeño and sauté for about 5 minutes, until softened. Add the garlic and sauté 1 minute more.
  • Carefully pour in the tomatoes and using the back of a wooden spoon, crush the tomatoes. Stir in the salt, pepper, cumin, and paprika. Reduce the heat to medium and allow to simmer 10 minutes, stirring occasionally.
  • For a smooth sauce, transfer the contents of the saucepan to a blender or food processor. Remove the feed tube (to prevent a build-up of steam and pressure), cover with a dish towel and process until smooth. Serve and enjoy.
