HOLY SMOKE BASTING SAUCE



Holy Smoke Basting Sauce image

This Southern-style basting sauce recipe is excellent for large cuts of pork and chicken when smoking or grilling. It adds moisture and flavor.

1 gallon (3.8 liters) apple cider vinegar
1 quart (900 ml) Worcestershire sauce
10 ounces (300 ml) lemon juice
3 tablespoons (45 ml) black pepper

Steps:

  • Mix all ingredients in a large pot.
  • Bring to a hard boil for 10 minutes.
  • Use for basting meat while smoking or grilling. If you don't need this much basting sauce, you can cut the recipe down by half or even to one quarter.

3/4 cup olive oil
3/4 cup dry red wine
1 tablespoon lemon juice (or lime)
2 garlic cloves, minced
1/3 cup minced onion
1/2 teaspoon dried thyme
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Combine all ingredients in a covered jar. Shake until well blended. Spread liberally over both sides of steak and let marinate for about an hour before broiling. Baste more on while cooking.
  • There's enough here to do 4-6 steaks depending on the size of the steaks and how liberally you use it.

This was a 'secret' recipe some guy in Michigan gave my parents. Too good not to share.

¾ cup Catalina salad dressing
½ cup butter, melted
½ lemon, juiced
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
1 ½ teaspoons garlic powder
1 ½ teaspoons onion powder
1 pinch dried dill weed
6 (4 ounce) fillets salmon

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Whisk Catalina salad dressing, melted butter, lemon juice, Worcestershire sauce, brown sugar, garlic powder, onion powder, and dill together in a bowl. Brush over the salmon fillets.
  • Cook salmon on the preheated grill, basting regularly with the sauce, until the flesh flakes easily with a fork, about 15 minutes.

Marinade and Basting Sauce for Beef Brisket image

This is one of my adopted recipes. It looks like a dish my family and I would enjoy, so I hope to make it and edit it in the future.

Number Of Ingredients 10

3 cups dry red wine
3 teaspoons salt
1 cup olive oil or 1 cup peanut oil
3 tablespoons Grey Poupon, Dijon mustard
2 tablespoons red wine vinegar or 1 tablespoon wine vinegar and 1 tbsp balsamic vinegar
2 tablespoons prepared horseradish
2 teaspoons onion powder
3 tablespoons lime juice
1 teaspoon garlic powder
2 teaspoons ground cayenne pepper

Steps:

  • Mix all of the ingredients well and then pour over whole beef brisket.
  • Let marinate in refrigerator for several hours, or overnight if possible.
  • Cook your brisket as you normally would, basting with a bit of marinade occasionally, until cooked to your preference. Enjoy!
