BAKED RANCH TILAPIA BURGERS



Baked Ranch Tilapia Burgers image

These super easy fish burgers are a great, wholesome meal. Assemble buns with whatever you please. I prefer to eat the tilapia with lettuce only but my boyfriend puts ketchup and cheese on his. We always eat this with steamed broccoli and fruit salad.

1 large egg
1 tablespoon olive oil
1 cup unseasoned dry breadcrumbs
1 ½ teaspoons dry ranch seasoning mix, or to taste
2 (4 ounce) tilapia fillets
2 hamburger buns, split
½ cup shredded lettuce, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spread olive oil on a baking sheet.
  • Beat egg in a bowl. Mix bread crumbs and ranch dressing mix in a second bowl. Submerge tilapia in the egg, remove, and coat with bread crumb mixture. Place breaded tilapia on the baking sheet.
  • Bake in the preheated oven until fish flakes easily with a fork, about 15 minutes. Assemble fillets on hamburger buns and top with lettuce.

If you're incorporating more fish into your diet, try this Parmesan crusted tilapia. It was gobbled up in our kitchen. The mayo ranch mixture has a great creamy ranch flavor and acts as a sauce. The bread crumb and Parmesan mixture add texture and a lovely cheesy flavor. Easy to prepare, once baked the tilapia is very tender.

6-8 - tilapia fillets
1 package(s) dry ranch dressing
1/2 cup(s) mayo
1 cup(s) plain bread crumbs
1/2 cup(s) Parmesan cheese
- cooking spray, butter flavor

Steps:

  • Mix mayo with dry ranch dressing packet.
  • Combine the bread crumbs and Parmesan cheese. Pour onto a paper plate; set aside.
  • Using a BBQ brush, cover the fish, on both sides, with the herb mayo (I find this easier if the fish is still partially frozen).
  • Dredge each piece of fish in the bread crumbs/cheese mixture and place on a greased cookie sheet. Lightly spray the top of the fish with butter-flavored spray, before baking, for extra crispiness.
  • Bake at 375 for 8-12 minutes (thawed) or 20-25 minutes (partially frozen).
  • Note: When fish "flakes with a fork," it is usually a bit overcooked and may be dry. This test is better: Using your finger, press on the cooked flesh gently. When it is done, the fibers will separate into solid flakes. If the fibers fall apart, the fish has been cooked too long.

A quick and yummy way to prepare crispy tilapia the whole family will love, without frying. I get asked to make this several times a week by everyone in my family, especially the kids!

cooking spray
½ cup milk
½ cup prepared ranch dressing
½ cup all-purpose flour
1 cup dry bread crumbs
½ cup grated Parmesan cheese
½ teaspoon seasoned salt
½ teaspoon ground black pepper
½ teaspoon celery salt
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon ground paprika
½ teaspoon dried parsley
¼ teaspoon dried basil
cooking spray
8 (6 ounce) tilapia fillets

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Line an 11-17-inch baking sheet with aluminum foil and lightly spray with cooking spray.
  • Mix milk and ranch dressing in a shallow bowl. Place flour in a separate shallow bowl; set aside.
  • Whisk together bread crumbs, Parmesan cheese, seasoned salt, black pepper, celery salt, garlic powder, onion powder, paprika, parsley, and basil in a bowl.
  • Spray bread crumb mixture with cooking spray until damp, then whisk bread crumbs. Repeat spraying and whisking 3 more times to lightly moisten crumb mixture with cooking spray.
  • Transfer crumb mixture to a large resealable plastic bag.
  • Gently press tilapia fillets into the flour to coat, and shake off the excess flour.
  • Dip the fillets into the ranch dressing mixture.
  • Place all the fillets into the resealable plastic bag; seal bag and shake to coat fish with bread crumb mixture.
  • Arrange tilapia on prepared baking sheet. Lightly spray the breaded fish with cooking spray.
  • Bake in the preheated oven until the fish is easily flaked with a fork, 20 to 25 minutes.

Cooking oil spray
1 tilapia fillet (about 4 to 6 ounces)
2 teaspoons light Ranch dressing
1/4 cup Italian-style Panko crumbs*
Lemon and lime wedge, to garnish

Steps:

  • Preheat oven to 425 degrees F. Line a large baking pan (13 X 9 inches or larger) with foil. Place a wire rack over a baking pan, and spray rack with cooking oil spray. Set aside. Place tilapia fillet on a plate* and rub front and back with dressing, covering well. Place crumbs on a second plate* and shake to distribute crumbs evenly on plate. Place fillet on crumbs, pressing so crumbs adhere. Lift filet, shake plate again to redistribute crumbs, and turn to place second side of filet in crumbs, again, pressing so crumbs adhere. Place fillet on baking rack. (*Repeat this process with as many fillets as desired.) Bake, uncovered, until crumbs are just beginning to brown and fish is opaque in the center, about 20 to 25 minutes, depending on size of fillet. Remove from oven, place fillet on a plate with lemon and lime wedges. Serve at once, squirting fish with citrus juices to taste.
