OLIVE LOVER'S SALAD



Olive Lover's Salad image

Mom concocted this creative salad with a few simple ingredients. Chopped olives, celery and garlic are drizzled with oil, tossed and chilled for a cool and refreshing side dish that's perfect with any warm meal. -Gina Mueller, Converse, Texas

Number Of Ingredients 5

1 can (6 ounces) pitted ripe olives, drained and chopped
1 jar (5-3/4 ounces) pimiento-stuffed olives, drained and chopped
2 celery ribs, chopped
2 garlic cloves, minced
2 tablespoons olive oil

Steps:

  • In a bowl, combine the olives, celery and garlic. Drizzle with oil; toss to coat. Cover and refrigerate for 4 hours or overnight.

Ralf's Pretty Good Olive Salad image

This is another one I got from my good online friend and co-moderator, the man known as Ralf Kramden. I've adapted it just a little to suit our tastes, but the basic recipe is his. It's pretty easy, and one of those things the family wants at every gathering. Prep time is a guess, since it depends on how quickly you can chop the olives, cook time is refrigeration.

2 (7 ounce) jars pimento stuffed olives
2 (5 3/4 ounce) cans pitted black olives
2 large tomatoes
6 cloves garlic, minced
4 tablespoons extra virgin olive oil
4 teaspoons red wine vinegar
8 ounces crumbled feta cheese

Steps:

  • Drain olives and chop in half.
  • Core, seed, and coarsely chop the tomatoes.
  • Put all ingredients in a large bowl, and mix well.
  • Best when served after being refrigerated for at least a couple of hours.
  • I sometimes add kalamata olives if I have them onhand for a slightly different taste, or sometimes I use the"Mediterranean" flavour feta cheese instead of plain.

1 lb fish fillet, thawed if necessary
1/2 cup dry breadcrumbs
1/2 cup pistachios, shelled, chopped fine and divided
2 tablespoons parmesan cheese, grated
1 tablespoon parsley, minced
3/4 teaspoon dry mustard
1/4 cup milk
2 tablespoons butter, melted

Steps:

  • Cut fish into serving-size pieces and check for bones.
  • Combine bread crumbs, 1/4 cup pistachios, cheese, parsley, and mustard in shallow dish.
  • Dip fish in milk and roll in crumb mixture; place in shallow greased baking dish.
  • Drizzle with butter; sprinkle with remaining pistachios.
  • Bake at 450°F allowing 10 minutes per inch of thickness measured at its thickest part or until fish flakes when tested with fork.

1 cup milk
1 tablespoon butter, melted
2 cups flour
4 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon onion salt
1/4 teaspoon garlic powder
1/2 teaspoon oregano
1/4 teaspoon dry mustard
2 cups sharp cheddar cheese, grated
1 tablespoon dill weed

Steps:

  • Combine egg, milk, and butter.
  • In a mixing bowl, combine the remaining ingredients.
  • Make a well in dry ingredients and add milk mixture.
  • Stir until well blended.
  • Spread into a greased 5 x 9" loaf pan.
  • Bake at 350 degrees for 45 minutes.
