This cinnamon raisin cookie recipe is truly amazing! The cookies are a melt-in-your-mouth dreamy treat. They're soft and crisp, and buttery and cinnamon-y -- all at once! So yes, they're the Best Cinnamon Raisin Cookies of all time!*Makes 2 dozen large cookies * Please note that 1 hour of the prep time is inactive (while the raisins are soaking).

1 cup unsalted butter
2 cups raisins
1½ tablespoons pure vanilla extract
1½ tablespoons ground cinnamon
2¼ cups all-purpose flour
1½ teaspoons salt
½ teaspoon baking soda
½ cup granulated sugar
1 cup golden brown sugar
2 large eggs

Steps:

  • Prepare the raisins: Add the butter to a medium-sized sauce pot and place it over low-medium heat. Once the butter has melted, turn the heat to low. Add the raisins, vanilla and cinnamon and stir to blend. Cover and let this gently simmer for 10 minutes. Then turn the heat off, keep the pot covered, and let it sit for 50 minutes.
  • Preheat oven and prep baking sheets: While the raisins are soaking, preheat the oven to 350°F. Cover 2 baking sheets with parchment paper, set aside, and adjust two racks towards the center of the oven.
  • Mix dry ingredients: In a medium-sized mixing bowl, combine the flour, salt and baking soda. Set aside. Add both sugars to a large mixing bowl and set aside.
  • Combine all of the ingredients: Once the raisins are done soaking, add the mixture to the bowl with the sugar and mix to blend. Then add the eggs and mix until they are fully incorporated. Add the dry ingredients to the wet ingredients. Mix just until you no longer see any dry spots.
  • Shape the batter: Use a cookie scoop (approximately 2¼ inch) to drop the batter onto the parchment-lined baking sheets. Gently press each one down about a bit with the palm of your hand. There should be a couple of inches between them.
  • Bake the cookies: Bake in the preheated 350°F oven until they're set and slightly golden along the edges, about 12 minutes.
  • Cool the cookies: Let them cool on the baking sheet for at least 10 minutes and then transfer them to a cooling rack.

1 tsp. baking soda

1/2 tsp. cloves
1/4 tsp. salt
2 Tbsp. butter (melted)
1 tsp. vanilla
1 3/4 cup confectioners' sugar
enough milk for spreading consistency desired

Steps:

  • Preheat the oven to 350 degrees.
  • Combine raisins and water in a small saucepan; bring to a boil.
  • Remove from heat, add butter; cool to lukewarm.
  • Whisk the flour, baking soda, cinnamon, allspice, cloves, and salt together in a medium-size bowl.
  • Pour the raisin mixture in large mixing bowl; add sugar, egg and dry ingredients.
  • With an electric mixer, beat until thoroughly blended.
  • Pour into greased and floured sheet pan (15½x10½x1-inch) and bake about 25 minutes.
  • Cool.
  • To frost:
  • In a medium bowl, mix together the butter, vanilla, confectioners' sugar and 1 tablespoon at a time of milk to the desired consistency.

2 cups old-fashioned oats
1 cup all-purpose flour
1 cup golden raisins
3/4 cup packed brown sugar
1/2 cup toasted wheat germ
3/4 teaspoon ground cinnamon
3/4 teaspoon salt
1 large egg, room temperature
1/2 cup canola oil
1/2 cup maple syrup
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with foil, letting ends extend up sides; grease foil. In a large bowl, combine the first 7 ingredients. In a small bowl, combine egg, oil, maple syrup and vanilla; pour over oat mixture and mix well. (Batter will be sticky.), Press into prepared pan. Bake 25-30 minutes or until set and edges are lightly browned. Cool in pan on a wire rack. Lifting with foil, remove from pan; cut into bars.

1 cup brown sugar, packed
1 egg
1/2 cup brewed coffee, hot
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup raisins
1 cup powdered sugar
1/2 teaspoon vanilla extract
4 -5 teaspoons water

Steps:

  • In a bowl, combine butter and brown sugar until crumbly. Add egg and mix well. Gradually beat in coffee.
  • Combine flour, baking powder, cinnamon, baking soda and salt. Add to the coffee mixture; mix well. Stir in raisins.
  • Transfer to a 13x9x2-inch baking pan coated with nonstick spray. Bake at 350 degrees 18-20 minutes, until edges pull away from sides of pan and toothpick comes out clean.
  • Cool 5 minutes.
  • In a bowl, combine powdered sugar, vanilla and enough water to make it spreading consistency. Spread on warm bars.

1/2 cup butter
1 cup brown sugar
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups rolled oats
2 tablespoons water (divided)
1/4 cup sugar
1 tablespoon cornstarch
1 cup water
2 cups raisins
1 cup powdered sugar
1/2 teaspoon ground cinnamon
1 tablespoon milk (1 to 2)

Steps:

  • Combine the raisin filling ingredients in a saucepan and heat over medium heat until the raisins are plump and the liquid has almost completely evaporated (about 10 minutes).
  • While the raisin filling is heating, cream the butter and brown sugar together, mix in the dry ingredients and 1 tablespoon of water (it will be very crumbly).
  • Press half of the mixture (about 2 cups) firmly into the bottom of a greased 9"x13" pan and spread with the raisin filling.
  • Mix 1 tablespoon of water with the remaining crumbs and scatter over the raisin filling.
  • Bake at 350°F for 35 minutes and then cool slightly.
  • Mix together the cinnamon icing, adding enough milk to make a drizzling consistency, drizzle over the top and cut into squares.

1 cup sugar
2 tablespoons plus 1-1/2 teaspoons cornstarch
1 teaspoon ground cinnamon
1-1/2 cups sour cream
3 large eggs, lightly beaten
2 cups raisins
CRUMB MIXTURE:
1-3/4 cups all-purpose flour
1-3/4 cups quick-cooking oats
1 cup packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup cold butter, cubed

Steps:

  • In a large saucepan, combine the sugar, cornstarch and cinnamon. Stir in sour cream until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into eggs; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in raisins. Cool to room temperature without stirring., Meanwhile, in a large bowl, combine the flour, oats, brown sugar, baking soda and salt. Cut in butter until crumbly. , Firmly press 3-1/2 cups of crumb mixture into a greased 13-in. x 9-in. baking pan. Spread with raisin filling. 1/2 cup Gold Medal™ all-purpose flour
1/2 cup Gold Medal™ whole wheat flour
1/2 cup packed brown sugar

1 egg, slightly beaten
1/2 cup unsweetened applesauce
1/2 cup honey
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In large bowl, stir together oats, raisins, all-purpose flour, whole wheat flour, brown sugar, wheat germ, cinnamon and salt. In small bowl, beat egg, applesauce, honey and vanilla with whisk until well combined.
