Took another good-but-boring pancake recipe and added the cinnamon, nutmeg, and raisins and presto-change-o it's a giant healthy oatmeal raisin cookie!

1 ½ cups old-fashioned rolled oats
1 ½ cups whole wheat flour
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 ½ cups buttermilk
1 cup milk
⅓ cup white sugar
¼ cup vegetable oil
1 egg
½ cup raisins
3 tablespoons chopped walnuts
1 teaspoon vegetable oil, or as needed

Steps:

  • Process oats in a food processor until finely ground. Mix oats, flour, baking soda, baking powder, salt, cinnamon, and nutmeg together in a bowl.
  • Whisk buttermilk, milk, sugar, 1/4 cup vegetable oil, and egg in a separate bowl until smooth; mix into oat mixture until batter is well-mixed, about 30 strokes. Fold raisins and walnuts into batter.
  • Lightly oil a skillet or griddle and place over medium heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 4 minutes. Repeat with remaining batter.

I was preparing to make Banana, Raisin and Oatmeal yogurt pancakes and realized that I had no bananas or oatmeal. I improvised and the resulting pancakes turned out to be quite tasty, per my husband's review.

Number Of Ingredients 12

1 cup old fashioned oats
1 cup all-purpose flour
1/4 cup packed light brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1 cup buttermilk
2 eggs
1/2 cup applesauce
1/2 teaspoon vanilla
1 cup raisins
1/4 cup melted butter (plus butter to top pancakes after cooking)

Steps:

  • Whish first 6 ingredients together in a medium bowl.
  • Whisk buttermilk, eggs, vanilla and applesauce together until blended in another medium bowl.
  • Wish dry ingredients into wet ingredients just until blended.
  • Fold in raisins and melted butter until mixed.
  • Heat nonstick griddle over medium heat, spray with non-stick spray.
  • Working in batches, pour about 1/3 cupfuls of mixture onto griddle.
  • Cook pancakes until top bubbles and flip until bottom is lightly browned (about 3 minutes per side).
  • Top pancakes with butter.

1/2 cup rolled oats
1/2 cup seedless raisin
1 teaspoon cinnamon
1/4 teaspoon vanilla
2 teaspoons honey
2 1/2 cups pastry flour
2 tablespoons sodium-free baking powder
1/2 teaspoon baking soda
3/4 cup fat free egg substitute
2 1/2 cups nonfat milk

Steps:

  • In small bowl, mix together oats, raisins, cinnamon, vanilla, honey and enough water to cover oats; let soak 5 to 10 minutes.
  • Mix flour, baking powder, baking soda, egg substitute and milk in a large bowl; batter should not be too thin.
  • Drain liquid off oat mixture and stir into batter.
  • Use a 1/3 cup measure to ladle out batter.
  • Cook in nonstick skillet or griddle, coated lightly with vegetable cooking spray, if necessary.
  • Serve with lite syrup.

2 cups quick-cooking oats
2 cups buttermilk
1/2 cup egg substitute
2 tablespoons canola oil
1/2 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup raisins

Steps:

  • In a small bowl, combine oats and buttermilk; let stand for 5 minutes. Stir in egg substitute and oil; set aside., In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon and salt. Stir in the wet ingredients just until moistened; add raisins., Pour batter by heaping 1/4 cupfuls onto a hot griddle coated with cooking spray; turn when bubbles form on top. 2 cups buttermilk
2 eggs, beaten
1/4 cup butter, softened
1/3 cup raisins
1/2 cup all-purpose flour
2 -3 tablespoons white sugar, to taste
1 teaspoon baking powder
1 teaspoon baking soda
1/2-1 teaspoon cinnamon
1/2 teaspoon salt

Steps:

  • Mix together the oatmeal and buttermilk; refrigerate overnight.
  • The next morning: add in the eggs, butter and raisins; mix well.
  • In a bowl, sift ogether the flour, sugar, baking powder, baking soda, cinnamon and salt.
  • Add in the oatmeal mixture; stir to moisten.
  • Allow the batter to sit at room temperature for 20 minutes.
  • Heat the griddle to desired temperature.
  • Pour 1/4 cup of batter onto hot griddle (if the batter is too thick, add 1 Tbsp buttermilk at a time until desired consistancy).
  • Cook pancakes until bubbles appear on top; turn to brown-- DELICIOUS!
