1 box Betty Crocker™ Super Moist™ yellow cake mix
1/3 cup butter or margarine, melted
1 egg
1 1/2 cups white vanilla baking chips (from 12-oz bag)
1 bag (7 oz) dried tropical fruit mix, chopped into 1/2-inch pieces
1 cup flaked coconut
1 cup cashew pieces, coarsely chopped
1 can (14 oz) sweetened condensed milk (not evaporated)

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom and sides of 13x9-inch pan with baking spray with flour.
  • In large bowl, stir cake mix, butter and egg until mixed. Press in bottom of pan. Sprinkle evenly with baking chips, dried fruit, coconut and cashews; lightly press topping. Pour milk evenly over top.
  • Bake 35 to 40 minutes or until edges and center are golden brown. Cool completely, about 2 hours. For bars, cut into 8 rows by 4 rows. Store covered.

Nonstick spray, for the cookie sheet and bowl
2 cups skin-on roasted almonds,
3/4 cup chopped pecans, toasted
1 1/4 cups chopped dried pineapple
1 cup puffed millet
1 cup rolled oats
1/4 cup sweetened coconut flakes
1/2 cup brown sugar
1/2 cup maple syrup
1/4 cup frozen pineapple juice concentrate
Pinch salt

Steps:

  • Line a small cookie sheet or quarter sheet pan with parchment paper. Spray lightly with nonstick spray.
  • Spray a large bowl. Add the almonds, pecans, dried pineapple, millet, oats and coconut flake and stir well.
  • In a medium saucepot fitted with a candy thermometer, add the brown sugar, maple syrup, pineapple juice concentrate and salt; mix together with a heatproof spatula. Place the pot over high heat and cook the syrup to the soft-ball stage (240 degrees F), about 10 minutes.
  • Pour the syrup over the nut mixture and toss well. Scrape onto the prepared cookie sheet and press firmly and evenly into a tight, compact layer. Cool for about 20 minutes in the refrigerator.
  • Transfer to a cutting board and cut into 16 to 20 bars. Store in an airtight container.

How to make delicious tropical fruit cups filled with fresh pineapple, kiwi, mango, strawberries, mandarin oranges, and more. Refreshing and easy to make!

1 pineapple
2 quarts strawberries
2 mangoes
30 ounces mandarin oranges (drained)
5 kiwi
3 bananas
1 teaspoon lime juice
1 tablespoon sugar (optional)

Steps:

  • Wash all the fruit before getting started with prep. I like to soak any type of fresh fruit or vegetable in a mixture of vinegar and water for about 10 minutes, then rinse well before preparing or eating.
  • Core, peel, and chop the pineapple into chunks; then add them to a large mixing bowl.
  • Stem, then slice the strawberries into the bowl.
  • Peel and slice the mangoes into the mixing bowl, as well.
  • Next drain the mandarin oranges, and add them to the mixture.
  • Peel and chop the kiwi into chunks; then add the kiwi chunks to the fruit mixture.
  • Peel and slice the bananas into chunks, and add them to the mixing bowl.
  • Squeeze fresh lime juice into the fruit mixture.
  • If desired, add a tablespoon of sugar.
  • Give everything a good stir, mixing all the fruit together until you have a hodge podge of colorful fresh fruit all combined together.
  • Finally, add the fresh fruit mixture to plastic cups or containers, and serve.

2 cups Gold Medal™ all-purpose flour
1/2 cup powdered sugar
1/2 cup flaked coconut
1 cup butter or margarine, softened
4 eggs
2 cups granulated sugar
1/4 cup Gold Medal™ all-purpose flour
1 teaspoon baking powder
1 teaspoon grated lemon peel
2 tablespoons lemon juice
2 teaspoons grated lime peel
2 tablespoons lime juice
2 teaspoons powdered sugar

Steps:

  • Heat oven to 350°F (or 325°F for dark or nonstick pan). In large bowl, beat 2 cups flour, 1/2 cup powdered sugar, 1/4 cup of the coconut and the butter with electric mixer on low speed, or mix with spoon, until crumbly. Press in ungreased 13x9-inch pan. Bake 20 to 25 minutes or until light golden brown.
  • Meanwhile, in large bowl, beat remaining 1/4 cup coconut, eggs, granulated sugar, 1/4 cup flour, the baking powder, lemon peel, lemon juice, lime peel and lime juice with electric mixer on low speed, or mix with spoon. Pour over partially baked crust.
  • Bake 20 to 25 minutes longer or until light golden brown. Run sharp knife around edges of pan to loosen bars. Cool completely, about 1 hour. Sprinkle with 2 teaspoons powdered sugar. For bars, cut into 6 rows by 6 rows.

3 tbsp vegetable oil , plus extra for the tin
2 large, very ripe bananas
1 large egg , beaten
70g light brown soft sugar
250g nutty muesli
100g tropical dried fruit mix

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Lightly oil and line a 20cm deep square tin with baking parchment.
  • Mash the bananas in a bowl until smooth, then stir through the oil, egg and sugar. Fold through the muesli, most of the tropical mix and a pinch of salt. Spoon the mixture into the tin and sprinkle with the remaining tropical mix. Bake for 35-40 mins, leave to cool in the tin, then turn out on to a board and slice into 10 bars. Will keep in an airtight container for four days.

1 1/2 cups graham cracker crumbs
1/2 cup flaked coconut
1/2 cup brown sugar, packed
1/2 cup butter, melted
1 (300 ml) can sweetened condensed milk
3 tablespoons rum
2 tablespoons all-purpose flour
1 1/2 cups cashews, coarsely chopped
1 cup flaked coconut
1 cup dried mango, chopped
1/2 cup butter, softened
1 tablespoon milk
1 tablespoon rum
2 cups icing sugar

Steps:

  • Grease a 13" x 9" baking pan; set aside.
  • To make the base, combined the crumbs, coconut and sugar in a bowl; stir in the butter until evenly moistened.
  • Press into the prepared pan.
  • Bake in the centre of a 325 degree F oven until browned, 15 minutes.
  • Let cool on a rack.
  • In another bowl, stir together the condensed milk, rum and flour; stir in the nuts, coconut and mango.
  • Spread over the base.
  • Bake in the centre of a 325 degree F oven until golden and set, 35 minutes.
  • Let cool.
  • To make the icing, beat the butter, milk and rum together until creamy; beat in the icing sugar in two additions until fluffy.
  • Spread over the filling.
  • Refrigerate until firm, 1 hour.

8 ounces fat free cream cheese
2 tablespoons Splenda sugar substitute
1 cup crushed pineapple, packed in own juice, drained
1 teaspoon coconut extract
2 medium bananas, sliced
2 cups mandarin oranges, rinsed anddrained
6 ounces white grapes, sliced (1 cup)
1 (7/8 ounce) box sugar-free cook and serve vanilla pudding
1 (3 ounce) box sugar-free lemon gelatin
1 1/2 cups water
2 tablespoons shredded coconut
butter-flavored cooking spray

Steps:

  • Preheat oven to 425°F.
  • Spray a 9x13 cookie sheet with rim with butter-flavored cooking spray.
  • Roll Pillsbury Crescent rolls out on cookie sheet and pat to seal perforations.
  • Bake 6 to 8 minutes or until light golden brown.
  • Cool on wire rack.
  • Mix together cream cheese, sugar substitute, drained crushed pineapple and coconut extract, In a medium bowl.
  • Spread on cooled crust.
  • Lay sliced bananas, mandarin oranges and sliced grapes evenly over cream cheese mixture.
  • Combine pudding mix, dry gelatin and water, in a medium sauce pan.
  • Cook over medium heat until mixture starts to boil, stirring constantly.
  • Drizzle over fruit, cool 15 minutes and sprinkle coconut on top.
  • Chill for 2 hours.
  • Cut into 16 bars.
