Not sure quiche is the right word but eggs + milk, baked, sounds like a quiche to me. The "secret" ingredient is cornmeal. The cornmeal sinks to the bottom so you have a kind of polenta-y/cornbread-y bottom. Recipe from WW Core forum. IHNTY

2 cups egg substitute (or use 8 eggs)
4 cups nonfat milk
16 ounces nonfat cheddar cheese, shredded
1 cup plain cornmeal
1 teaspoon garlic powder (optional)
1 teaspoon black pepper (optional)
3 tablespoons minced parsley (optional)
1 cup minced ham (optional)
1 cup corn kernel (optional)
1/2 cup sauteed onion (optional)
1 cup sauteed mushroom (optional)
1 (4 ounce) can chopped green chilies (optional)
1 (10 ounce) package frozen spinach, thawed and squeezed dry (optional)

Steps:

  • Preheat oven to 350*F. Coat a 9-inch by 13-inch baking pan with cooking spray.
  • Thoroughly mix eggs, milk and cornmeal. Stir in any additions.
  • Pour mixture into pan and bake for 45 minutes -1 hour or until set in the center and brown on top.
  • Cooks note: Add whatever cheese, veggies, spices or herbs that you want, not limited to those I've listed, but keep the egg to milk ratio the same. Within reason, you can use more or less cornmeal depending on how firm you want the "crust" to be.
  • NB - any veggies you add must be well drained!

Perfect recipe for using up leftovers! If you have eggs, milk, rice and cheese, you can practically clean out your fridge right into your quiche pan. Sometimes I even add some leftover meat. It can be served fresh hot or cold or freeze it for a quick, easy meal during the week!

2 cups rice, cooked
1 egg, beaten
1 teaspoon soy sauce
1/2 lb vegetables, any leftover cooked veggies, chopped
4 eggs, beaten
1 1/2 cups milk
1 cup cheese, grated
1/2 teaspoon salt (optional)
1 pinch pepper
1 pinch nutmeg

Steps:

  • CRUST:.
  • Mix together cooked rice, egg and soy sauce.
  • Spread evenly to cover well-buttered quiche pan or pie plate.
  • Bake rice crust at 350 F for 10 minute.
  • FILLING:.
  • Place chopped vegetable in bottom of crust.
  • Mix together: eggs, milk, salt, pepper and nutmeg. Pour over vegetables.
  • Top with grated cheese.
  • Bake at 350 F for 45 minutes or until set.
  • Remove from oven and let sit ten minutes before serving.

1/2 pint whipping cream
6 extra large eggs
1 1/2 cups shredded swiss cheese
1 ready-made pie crust
6 -8 slices crisp bacon or 6 -8 slices pepperoni
1 cup fresh onion, chopped
fresh broccoli, spinach, red or yellow pepper, chopped

Steps:

  • thinly coat round glass or 6 X 9 Pyrex baking dish bottom and sides with canola or vegetable oil. Prepre and arrange your own pie crust or pre-formed one in baking dish and bake for approx ten minutes at 350 degrees. Remove from oven and evenly spread chopped or diced desired ingredients in the pie dish. Combine remaining ingredients in a large mixing bowl including the shredded cheese. Pour over into pie dish. Preheat and bake uncovered on middle or top oven rack at 350 degrees for approximately 30 - 35 minutes or until quiche begins to lightly brown on top. Remove from oven, allow to cool a bit, and serve with a dollup of mild or medium (Pace) Salsa and a side of fresh fruit.
