TAHINI SHORTBREAD COOKIE RECIPE

My family's favorite tahini cookies! Nutty, slightly sweet, and perfectly satisfying with the perfect crumbly texture. These shortbread cookies are made with a bit less butter than normal but don't lack any buttery goodness or tenderness, thanks to rich organic tahini paste! These cookies take just 5 ingredients, a couple bowls, and a hand mixer. So simple! But be sure to read the tips and step-by-step guide above.

1 3/4 sticks (7 oz) unsalted butter, at room temperature
1 cup sugar
1 cup tahini paste
2 cups all-purpose flour
1 tsp baking powder
pinch salt
Powdered sugar, optional

Steps:

  • In a large bowl combine the butter and sugar. Using a hand mixer on medium speed, combine until light and fluffy.
  • Now add the tahini and continue mixing on medium speed until well-incorporated.
  • In a separate mixing bowl, combine the flour, baking powder, and salt.
  • Transfer the dry ingredients to the tahini mixture, and mix until well-incorporated into a dough.
  • Take the tahini cookie dough out of the bowl and make it into a log (about 2 inches in diameter). Place the log on the short end of a large piece of plastic wrap. Roll the wrap twisting the ends in opposite direction so that the dough log is tightly wrapped. Refrigerate for at least one hour or overnight.
  • Preheat the oven to 350 degrees F.
  • Slice the dough into 1/3 to 1/2 inch rounds, and arrange on a very large baking sheet (or two baking sheets) lined with parchment paper.
  • Bake in the 350 degrees heated oven for 15 minutes or so until the cookies are light brown around the edges and set.
  • Remove from the heat and leave the cookies in the baking sheets to cool briefly (about 10 minutes). Then transfer to a cooling rack to completely cool. Dust with powdered sugar, if you like.

Quinoa Power Bowls with Butternut Squash and Tahini Sauce image

One of my go-to meals during the week is a grain bowl filled with vegetables; I especially love it because I can switch up the produce with the seasons. This autumnal version is extra delicious because it has a good balance of sweetness from the butternut squash, tartness from the dried cranberries and a savory nuttiness from the tahini sauce (which I seriously put on everything).

1 cup quinoa
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
1 small butternut squash (about 1 pound) peeled and cut into 3/4-inch cubes
1 medium yellow onion, thinly sliced
3 cups coarsely chopped kale (about 2 1/2 ounces or 1/2 bunch)
1/4 cup tahini
1 clove garlic, grated
1/2 lemon, juiced
1 tablespoon honey
1/2 cup dried cranberries
1/2 cup roasted pecans, coarsely chopped

Steps:

  • Rinse the quinoa in a fine-mesh sieve under running water, then drain. Transfer to a medium saucepan; add 1 3/4 cups water and 1 teaspoon salt and bring to a boil over medium-high heat. Reduce to a simmer, cover and cook until the water is absorbed, about 15 minutes.
  • Meanwhile, melt the butter in a large skillet over medium heat and cook until it browns and smells nutty, about 3 minutes. Add the squash, onion and 1 teaspoon salt and cook, stirring occasionally, until the squash is golden brown and tender, 10 to 12 minutes.
  • While the squash cooks, make the tahini sauce: Whisk together the tahini, garlic, lemon juice, honey, 1 1/2 tablespoons water, 1/2 teaspoon salt and pepper, to taste, in a medium bowl until smooth. Set aside.
  • Once the squash is golden and tender, add the kale to the skillet and cook, stirring, until the kale is slightly wilted, about 1 minute.
  • Transfer the cooked quinoa and vegetables to a large bowl. Stir in the dried cranberries and pecans. Serve warm or cold with the tahini sauce.

LEMON-TAHINI QUINOA WITH RAW CHICKPEAS

On a slow day, I tried sprouting chickpeas. After eating quite a few, I tried planting a few. They grew into the most beautiful seedlings I have ever seen. And now I am harvesting fresh garbanzo beans. I tossed them into a quinoa salad I make frequently with fresh peas. The results were excellent.

¼ cup olive oil
¼ cup fresh lemon juice
2 tablespoons tahini
2 cloves garlic, minced
1 pinch salt and ground black pepper to taste
2 cups water
1 cup quinoa
1 teaspoon salt
1 ½ cups thinly sliced red cabbage
1 cup raw chickpeas
1 bunch fresh parsley, minced
3 stalk (blank)s scallions, thinly sliced

Steps:

  • Mix olive oil, lemon juice, tahini, garlic, salt, and pepper together a bowl until smooth. Set lemon-tahini sauce aside.
  • Bring water, quinoa, and salt to a boil in a saucepan. Reduce heat to medium-low and simmer, uncovered, until quinoa is tender, about 15 minutes. Remove from heat, cover, and let sit for for 5 minutes. Fluff with a fork.
  • Toss lemon-tahini sauce with quinoa, red cabbage, raw chickpeas, fresh parsley, and scallions.

Addictively delicious tahini cookies: nutty, salty-sweet, vegan, gluten-free, and incredibly fast! Just 1 bowl, 7 ingredients, and less than 30 minutes required!

1/2 cup tahini, unsalted and smooth
1/2 cup maple syrup
1 ¼ cup almond flour
3/4 cup tapioca starch ((also called tapioca flour))
1/2 tsp baking soda
1/2 tsp sea salt
1/4 cup raw sesame seeds

Steps:

  • Preheat the oven to 350 F (176 C) and line a baking sheet with parchment paper.
  • To a medium mixing bowl, add tahini and maple syrup and use a whisk to thoroughly combine. Next add the almond flour, tapioca starch, baking soda, and salt to the tahini mixture. Use a wooden spoon or rubber spatula to mix well.
  • Place the sesame seeds into a small bowl and set it nearby. Use a tablespoon or small cookie scoop to scoop the dough, then roll them into near perfect balls before gently rolling each ball in the sesame seeds and placing them 2 inches apart on the baking sheet. Gently press down on the balls to flatten slightly. Recipe as written should make ~20 cookies and they won't spread much, so they should all fit on a standard size baking sheet.
  • Bake in the oven for 12-15 minutes until golden. Let cool for 5 minutes, then enjoy!
  • Store leftovers covered at room temperature up to 3-4 days, or in the freezer for up to 1 month. Enjoy at room temperature for best texture.

These cookies resemble oatmeal cookies, but they are crispier and have a unique taste. They don't contain any wheat, gluten, common headache triggers, milk or eggs. They're a nice treat for someone on a restrictive diet like mine, but I think they'll appeal to others too. (It didn't take long for my husband to ask for a second one, and he can eat anything.) I've only made this recipe at high altitude (5200 feet), so you'll have to test my low altitude suggestions.

1/3 cup brown sugar
1/2 cup butter or 1/2 cup margarine
1/2 cup tahini (or peanut butter, if your diet allows)
1 1/4 cups rice flour (reduce to 1 cup if not high altitude)
7/8 cup quinoa (like delicate oatmeal, reduce to 3/4 C if not high altitude)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon vanilla (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Combine first four ingredients; mix until creamy.
  • Add remaining ingredients. Mix well.
  • Spoon rounded teaspoonfuls of batter onto cookie sheets.

1 cup quinoa, rinsed and drained
1/2 teaspoon salt, divided
2 tablespoons lemon juice
2 tablespoons olive oil
2 tablespoons warm water
1/4 cup tahini
1 garlic clove, minced
1/2 teaspoon ground cumin
1/4 teaspoon pepper
1/4 teaspoon aleppo pepper
2 cups grape tomatoes, halved (can sub cherry tomatoes)
1 cup English cucumber, diced
2/3 cup parsley, chopped
1/3 cup of fresh mint, chopped
3 green onions, thinly sliced

Steps:

  • Cook quinoa according to package directions, using 1/4 teaspoon salt. Let cool.
  • In a large bowl, whisk together lemon juice, oil, tahini, warm water, garlic, cumin, peppers and remaining 1/4 teaspoon salt.
  • Stir in cooled quinoa, tomatoes, cucumber, parsley, mint and green onions, stirring to coat quinoa and vegetables with dressing.
  • This recipe can be refrigerated up to 3 days.
  • The original recipe called for 1 cup of canned lentils to be added with vegetables and quinoa and doubled the amounts of lemon juice, olive oil and water for the dressing.

1 red onion (8 ounces), cut into 1/2-inch rounds
2 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
1 cup quinoa, rinsed and drained
1/2 cup tahini, well stirred
1/4 cup fresh lemon juice (from 2 lemons)
2 cups packed mint leaves, plus more for serving
Sliced avocado, sliced cucumber, and lightly toasted sliced almonds, for serving

Steps:

  • Preheat oven to 425 degrees. Toss broccoli and onion with oil on a rimmed baking sheet; season with salt and pepper. Roast, flipping vegetables once, until golden brown and tender, about 25 minutes.
  • In a small pot, bring quinoa, 1 1/2 cups water, and a pinch of salt to a boil. Reduce heat to low, cover, and simmer 14 minutes. Turn off heat and let stand 10 minutes. Fluff with a fork.
  • Combine tahini, lemon juice, 1/2 cup water, and mint in a blender. Blend until smooth; add 3/4 teaspoon salt and 1/4 teaspoon pepper. Serve quinoa topped with roasted vegetables, avocado, and cucumber, and sprinkled with almonds and mint, with dressing on the side.
