This is a quick recipe for ice cream. For mousse, freeze for four hours, then refrigerate 30 minutes before serving.

¾ cup prepared fat free vanilla pudding
1 (8 ounce) container fat free frozen whipped topping, thawed

Steps:

  • Fold the pudding together with the whipped topping. Return to whipped topping container and freeze 8 hours or overnight with lid slightly open.

⅔ cup heavy cream

Steps:

  • Combine the frozen strawberries and sugar in a food processor or blender. Process until the fruit is roughly chopped. With the processor running, slowly pour in the heavy cream until fully incorporated. Serve immediately, or freeze for up to one week.

1 can(s) 14 oz. sweetened condensed milk
2 tsp vanilla extract
2 Tbsp bourbon (optional)
2 c heavy cream, cold

Steps:

  • 1. Mix together the SC milk, vanilla and bourbon.. set aside.
  • 2. Whip the heavy cream until stiff peaks form, approx. 3 minutes with mixer.
  • 3. Fold in SC milk mixture; Pour into a 4 1/2 x 8 1/2 inch loaf pan... cover and freeze 6 hours.. Enjoy!!

As I live in South Africa, I'm sometimes uncertain whether you have the same ingredients in the USA. Sometimes the names of ingredients differ: we tend to use the British terms! I have no idea where this quickie came from, but was probably passed on by a friend, as it's handwritten. Use any popular chocolate bars which can be roughly grated or chopped up.

16 fluid ounces pouring custard (shop-bought will do. It must not be too thick)
8 ounces caramelised condensed milk
4 -6 ounces roughly chopped-up chocolate candy bars (to taste, of the kind which contain nuts or toffee or nutty chocolate)
8 fluid ounces fresh cream, whipped until quite firm

Steps:

  • Mix the custard with the caramel until well mixed.
  • Stir in the chopped-up chocolate bars of your choice.
  • Fold in the whipped cream.
  • Freeze in a suitable container until firm.
  • Yield: about 1 quart/4 cups/1 litre.

600ml pot double cream
1 tsp vanilla extract

Steps:

  • Put the condensed milk, cream and vanilla into a large bowl. Beat with an electric whisk until thick and quite stiff, a bit like clotted cream. Scrape into a freezer container or a large loaf tin, cover with cling film and freeze until solid.

Warm the mixture over medium heat, just until the sugar dissolves. Remove from the heat and add the remaining cream, milk, and vanilla extract (if using extract). Stir to combine and chill in the refrigerator.
  • When ready to churn, remove the vanilla pod, whisk mixture again and pour into ice cream maker. Churn according to the manufacturer's instructions. Transfer the finished ice cream to an airtight container and place in the freezer until ready to serve. Enjoy!
