Our classy update of the popular tuna-noodle casserole pairs tortellini and Alfredo sauce with flaked white tuna.

1 (9-oz.) pkg. refrigerated cheese-filled tortellini
1 1/2 cups frozen broccoli florets, large pieces cut up
1 (10-oz.) container refrigerated light Alfredo sauce
1 (5-oz.) can water-packed white tuna, drained, flaked
1 tablespoon butter, melted
1/4 cup Progresso™ Italian Style Bread Crumbs

Steps:

  • Cook tortellini to desired doneness as directed on package, adding broccoli during last 4 minutes of cooking time. Drain; return to saucepan.
  • Add Alfredo sauce and tuna; mix well. Cook and stir over medium heat until thoroughly heated. Spoon into ungreased shallow 1-quart casserole or gratin dish. In small bowl, combine butter and crumbs; mix well. Sprinkle over top.
  • Broil 4 to 6 inches from heat for 1 to 2 minutes or until topping is golden brown.

This tortellini tuna casserole is my updated version of the one I loved growing up. The creamy from-scratch sauce is made with fresh mushrooms, garlic, white wine, and peas. Plus, the tortellini cooks right in the sauce - no need to boil it ahead of time.

1 tablespoon olive oil
8 ounces baby bella mushrooms, finely chopped
1/2 cup finely chopped yellow onion
4 large cloves of garlic, finely chopped
1/2 teaspoon kosher salt
1/4 cup dry white wine
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 cup 2% milk
1/4 heavy cream
1/4 teaspoon black pepper
1 (4-oz) can white albacore tuna packed in water, drained
1 cup frozen peas
2 cups cheese tortellini
1/2 cup dried breadcrumbs
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 cup grated Parmesan cheese, divided

Steps:

  • Preheat oven to 375°F.
  • In a 10-inch skillet, heat 1 tablespoon of olive oil over medium heat. Add the mushrooms, onions, and garlic and stir to coat them in the oil. Add 1/2 teaspoon of salt and stir. Cook the mushrooms, stirring occasionally, for ten minutes or until they've released their moisture.
  • Add the wine to the pan and, as it simmers, scrape up the browned bits off the bottom of the pan. Add the butter to the pan and stir until it's melted. Sprinkle the flour over the mushrooms and butter and stir.
  • Add the milk and cream to the pan. Stir and bring it to a low simmer and adjust the heat to keep it from boiling. Simmer the sauce for five minutes or so or until it starts to thicken (it should lightly coat the back of a spoon). Add the black pepper, tuna, and peas and stir to combine. Add the tortellini and stir to coat it in the sauce. Transfer the pasta and sauce to a 1 1/12-quart baking dish.
  • In a small bowl, combine the breadcrumbs, olive oil, salt and half of the grated Parmesan cheese. Sprinkle the topping over the top of the pasta and sauce in the casserole dish. Sprinkle the remaining Parmesan cheese over the top of the breadcrumbs.
  • Bake the casserole for 30 minutes. Let the casserole stand for a few minutes before serving.

2 (6 ounce) tuna steaks, about 1 inch thick
1 cup Italian-style salad dressing

Steps:

  • Place tuna steaks with Italian dressing in a bowl, coating both sides; marinate in refrigerator for 20 minutes.
  • Preheat outdoor grill for medium-high heat, and lightly oil the grate.
  • Grill tuna on the preheated grill until tuna lightens in color but retains a thin line of pink in the center, about 5 minutes on each side.

Incredibly simple, and really good. Start to finish about 10 minutes, and my family says it tastes like good restaurant fare. The key is to use ONLY high quality ingredients. Tuna packed in olive oil is also sometimes called "tonno".

2 lbs frozen cheese tortellini
1 (6 ounce) can tuna in olive oil
2 tablespoons pesto sauce
1 tablespoon extra virgin olive oil
1 lb frozen broccoli florets
garlic powder
salt (optional)
freshly grated romano cheese or parmesan cheese

Steps:

  • Cook the pasta in boiling, salted water, with about 1 tbs olive oil. for 3-5 minutes - until the tortellini floats to the surface. Do not overcook.
  • Microwave the broccoli for about 3-4 minutes - till warm, but not soft.
  • Drain pasta.
  • Meanwhile, unceremoniously dump the canned tuna (with oil) into the pot.
  • Add pesto, olive oil, garlic powder and salt if desired.
  • Toss together, then add drained pasta and broccoli.
  • Toss all together, gently, until mixed.
  • Top each serving with freshly grated cheese, and a sprig of fresh basil, if you are lucky enough to have some handy.
  • Enjoy.

I stole this idea from one of those dinner assembly place menus. The addition of tortellini as the "noodles" in tuna noodle casserole almost makes it decadent. It is still just a basic tuna noodle casserole recipe - not really meant to be real spicy or or exciting :-) Just comfort food . . .

2 (6 ounce) cans tuna, flaked
1 (10 1/2 ounce) can cream of mushroom soup, 98% fat free
1 cup 2% cheddar cheese or 1 cup swiss cheese, shredded
2 (4 cup) bags frozen cheese tortellini
1 cup skim milk
1 stalk celery, chopped
1 onion, chopped

Steps:

  • Fill a large pot with 4 quarts water and put on high heat to boil.
  • Chop onion and celery and saute in a little oil or spray. (Note: Feel free to add mushrooms or peppers, I can barely get away with celery with my family's tastes).
  • Preheat oven to 350 degrees.
  • Add tortellini to water and cook per package directions - you can undercook a little.
  • In a 2 quart casserole, mix tuna, soup, and milk.
  • Add celery and onion mixture to casserole.
  • Drain tortellini and add to casserole. Add cheese and fold in with tuna mixture.
  • Sprinkle with crushed potato chips, bread crumbs, etc., if you desire.
  • Bake for 25-30 minutes.

1 tsp olive oil
1 red and 1 yellow pepper , deseeded and sliced
2 garlic cloves , crushed
pinch crushed dried chillies
2 x 400g cans chopped tomatoes
50g mixed pitted olives , whole or roughly chopped (optional)
pinch caster sugar
250g wholemeal pasta shapes
2 x 200g cans tuna steak in spring water, drained and flaked
25g fresh wholemeal breadcrumbs
2 tbsp grated parmesan

Steps:

  • Heat the oil in a large saucepan and fry the peppers for about 5 mins until starting to caramelise. Add the garlic and chillies, cook for 30 secs, then tip in the tomatoes and olives (if using). Season, add a pinch of sugar, bring to the boil, then simmer, uncovered, for 10 mins.
  • Meanwhile, cook the pasta according to pack instructions. Heat the grill. Drain the pasta and mix into the tomato sauce, along with the tuna. Tip into a large ovenproof dish. Mix the breadcrumbs and Parmesan together and scatter over the top. Grill for 3-4 mins or until the topping is crisp and golden. Serve with a green salad, if you like.

What I like most about this recipe (other than the fact it's quick and easy) is how many tasty variations there are. You can use prepackaged alfredo sauce or make your own, or change it by using a cheese sauce or even tomato sauce. You can change the vegetable too!

1 (9 ounce) package refrigerated cheese-filled egg tortellini
1 1/2 cups frozen broccoli florets
1 (10 ounce) container alfredo sauce (refrigerated kind, the jar kind, 10 oz. of homemade, or probably even the dry mix if you cooked it u)
1 (7 ounce) package solid white tuna (the dry pack is my favorite but 6 oz. of drained canned tuna works fine too)
1 tablespoon butter or 1 tablespoon olive oil
1/4 cup Italian style breadcrumbs
garlic or garlic powder, to taste

Steps:

  • Preheat oven to broil.
  • Cook tortellini according to package directions and add the broccoli florets during the last 4 minutes of cooking.
  • Drain and return to pan.
  • Note: It's ok if the broccoli is still very crunchy at this point because it will cook more after the sauce is added.
  • Add Alfredo sauce and tuna and mix well.
  • If you are using the dry-packed tuna, break up large chunks as you stir.
  • Cook over medium heat until thoroughly heated, stirring occasionally.
  • Add garlic after the addition of sauce and tuna, if desired.
  • Spoon mixture into an ungreased shallow casserole dish.
  • Sprinkle bread crumbs over top of casserole and dot with butter or drizzle with oil (I have an oil sprayer that I like to use to distribute the oil over the crumbs evenly).
  • Broil casserole 4 to 6 inches from heat for about 3 minutes or until the topping is golden brown.
