STIR-FRIED SPINACH WITH GARLIC AND LEMON ZEST
This recipe comes from Williams-Sonoma Essentials of Healthful Cooking. According to the intro they gave to the recipe "Spinach is one of the most nutritious vegetables." It went on to say that when it was cooked its nutrients become even more concentrated. It is high in iron, potassium and vitamins A and C; the leaves are rich in leutine and zeaxathin, phytochemicals that protect vision. Besides being healthy it is delicious!

Steps:
- Carefully rinse the spinach in several changes of water.
- Discard the tough stems and any damaged leaves, drain briefly in a colander, shaking off excess water.
- Over medium-high heat, in a deep sauté pan or wok, combine the olive oil, lemon zest and garlic.
- After about 30 seconds, the garlic should begin to sizzle; immediately stir in the damp spinach and using tongs or 2 wooden spoons, toss and stir quickly until wilted, 2 to 3 minutes.
- Transfer the spinach to a warmed serving dish and sprinkle with a pinch of salt and a few grinds of fresh pepper.
- Serve at once.

- In a large skillet, heat oil over medium. Add garlic; cook, stirring, until fragrant and beginning to brown, about 1 minute. Using a slotted spoon, remove garlic and discard.
- Raise heat to high. Add spinach to skillet gradually, waiting for one batch to wilt before adding the next. Cook, tossing, until tender, 3 to 4 minutes.
- Drain liquid from skillet; add lemon juice, salt, and pepper to taste.

QUICK SPINACH STIR FRY WITH LEMON JUICE
I remember how I used to order this at a tiny pizza joint in Frankfurt. A definite winner given that I hate veggies in general... well, except for this light and easy spinach stir fry I tried to mimic from the family run pizza place! Great as a side dish, accompanied by perhaps a healthy grilled fish! Do also take note that spinach tends to shrink when heated, so you may like to add more to the pan!

- Heat oil in large skillet or wok. Add garlic and cook until starting to brown, remove with slotted spoon and set aside. Add onion and red pepper to wok and cook until slightly softened.
- Add shrimp, paprika and optional red pepper flakes. Cook for a few minutes, until shrimp have turned pink.
- Stir in spinach by handfuls as it wilts. Add garlic back to pan, stir in lemon juice, season to taste with salt and pepper. Sprinkle with lemon zest and parsley before serving.

- Melt the butter with the canola oil in a large skillet over medium heat until it stops bubbling. This allows the water from the butter to evaporate. - Toast the sesame seeds in a dry pan over medium heat for 3 to 4 minutes, shaking the pan gently, until seeds are golden brown; remove from the pan at once to prevent burning.
- Trim the ends from the spinach, roughly chop the leaves and wash to remove the grit.
- Combine the garlic, spring onion, cayenne pepper and pork, mixing well. Heat the oils in a pan and stir-fry the pork quickly in three batches over very high heat until golden brown. Remove the meat and set aside.
- Add the soy sauce, sugar and spinach and toss lightly. Cover and cook for 2 minutes or until the spinach is just soft. Return the pork to the pan, add the sesame seeds, toss well and serve immediately.

- 1. Mix the sauce ingredients together (I did so in a measuring cup for easy pouring). Set aside. Place each veggie in its own bowl for easy access.
- 2. Heat wok or large skillet, with enough oil to coat bottom, over med-high heat.
- 3. Throw broccoli and carrots into the skillet (I say this because it will probably spit at you). Cook stirring constantly for about 1 minute.
- 4. Add the bell pepper and mushrooms. Stir another 1-2 minutes, until just softened.
- 5. Add the green onion and zucchini. Continue to cook, stirring constantly, until mushrooms are just browned around the edges. Turn heat down to medium.
- 6. Add the sauce and cook, stirring for about 2 minutes, until thickened. Serve immediately.
