PICKLED GRAPES WITH JICAMA AND CELERY SEED



Pickled Grapes with Jicama and Celery Seed image

We love this combination for its appearance and textural contrasts as well as for its flavors. The crunchy texture of the jicama is perfect next to the grapes; it also can provide a pleasant surprise to those who don't know exactly what's in this pickle. The cream-colored chunks quickly take on some yellow color from the turmeric, so people think they're about to bite into a piece of pineapple, and then they get that great jicama crunch. Serve this pickle with anything spicy, especially chicken or fish. It is very nice with curries and spicy Asian-style stews, too.

Number Of Ingredients 14

1 cup distilled white vinegar
1 1/2 cups cider vinegar
1/2 cup white grape juice
1 cup white sugar
1/2 cup brown sugar
1 teaspoon celery seed, bruised with a rolling pin
3/4 teaspoon ground turmeric
2 teaspoons yellow mustard seed, slightly crushed with a rolling pin
7 whole cloves
1 teaspoon salt
Piece fresh ginger the size of your little finger, peeled and cut into rounds about the thickness of a dime
3 red or green jalapeno peppers or other small chiles of your choice, thinly sliced
4 cups mixed red and green seedless grapes
1 medium jicama, peeled and cut into cubes about 3/8-inch thick (about 2 cups)

Steps:

  • In a large, nonreactive saucepan, combine the vinegars, grape juice, white and brown sugars, celery seed, turmeric, mustard seed, cloves, and salt, and bring to a boil over medium-high heat. Turn the heat to low and simmer for 3 minutes, stirring several times to dissolve the sugars.
  • Remove from the heat, add all the remaining ingredients, and mix well to combine. Cool to room temperature, then cover and refrigerate. These pickles will keep, covered and refrigerated, for 2 to 3 months.

1 1/2 cups distilled white vinegar
1 cup sugar
1/2 cup firmly packed light brown sugar
2 teaspoons ground coriander
1 teaspoon ground cinnamon
10 whole cloves
1/4 cup crystallized ginger
2 medium jalapenos, diced
1 bunch green or red seedless grapes, plucked from stems

Steps:

  • Mix the vinegar, sugars, coriander, cinnamon and cloves together in a saucepan. Boil over medium heat for 2 to 3 minutes. Remove the saucepan from the heat and stir in the ginger and jalapenos. Add the grapes and allow to sit at least 1 hour or preferably, overnight. Use the grapes in your next chicken or fruit salad.

ARUGULA SALAD WITH QUICK-PICKLED GRAPES, FENNEL, PEAR AND BRIE



Arugula Salad with Quick-Pickled Grapes, Fennel, Pear and Brie image

5 ounces arugula
4 ounces brie, cut into bite-size pieces
1 bulb fennel, trimmed and sliced
1 green pear, cored and sliced
Quick-Pickled Grapes, chilled (see recipe below)
Dressing (see recipe below)
1 cup apple cider vinegar
1 1/2 cups green seedless grapes, cut in half
1/3 cup apple cider vinegar
1/4 cup extra-virgin olive oil
1 teaspoon whole grain mustard
Kosher salt and freshly ground black pepper

Steps:

  • To assemble the salad: add the arugula to a large serving bowl. Top with the brie, fennel, pear and grapes. Top with the dressing and toss to combine.
  • Add the vinegar and 1 cup of water to a small saucepan and heat over medium-high heat. Bring the mixture to a simmer, then turn off the heat and add the grapes. Let the grapes sit in the warm liquid for 20 minutes and then drain. Refrigerate in an airtight container for up to 3 days.
  • Add the vinegar, olive oil, mustard and a pinch each of salt and pepper to a jar, secure the lid and shake vigorously to emulsify. Set aside until ready to dress the salad.

1/2 cup sugar
1/2 cup white vinegar
1/2 cup cider vinegar
1 banana pepper, sliced
2 jalapeno peppers, sliced
1 red chili pepper, sliced
4 cinnamon sticks (3 inches)
2 inches fresh gingerroot, peeled and thinly sliced
1 tablespoon coriander seeds
1 teaspoon whole allspice
4 drops hot pepper sauce
1-1/2 pounds green grapes, halved
1-1/2 pounds seedless red grapes, halved

Steps:

  • In a large saucepan, bring the first 11 ingredients to a boil. Reduce heat; simmer until sugar is dissolved, 3-5 minutes. Remove from heat and cool slightly. Place grapes in a large bowl; add pickling liquid. Refrigerate, covered, at least 12 hours before serving.

1 pound seedless red grapes
1 ½ cups apple cider vinegar
1 cup water
1 cup raw sugar
½ small red onion, cut into slivers
2 teaspoons yellow mustard seeds
1 teaspoon whole black peppercorns
1 cinnamon stick
1 bay leaf
1 star anise pod
1 whole allspice

Steps:

  • Remove stems and discard any grapes that aren't firm and unblemished. Place grapes in a quart-size mason jar and set aside.
  • Combine vinegar, water, sugar, red onion, mustard seeds, peppercorns, cinnamon stick, bay leaf, star anise pod, and allspice in a saucepan; bring to a boil. Reduce heat to low and simmer until onion is softened, about 10 minutes. Remove saucepan from heat and cool for 15 minutes.
  • Carefully pour cooled liquid over grapes and gently swirl jar to incorporate spices. Cover jar and refrigerate 1 day before eating.

  • Prepare the grapes: pluck them from the stem and either cut off a small portion of the top for smaller grapes, or cut in half for large grapes. This cut is important for allowing the pickling liquid to infuse. Place the cut grapes into a clean 1 quart glass jar.
  • In a small pot add the remaining ingredients. Bring to a boil, and let boil for about 1 minute. Then turn off the heat and let cool for at least 15 minutes. Take the cinnamon stick and bay leaves and nestle them into grapes so they don't just float on top, then pour the pickling liquid into the glass jar. If needed add a little extra water or vinegar to fully cover the grapes. Let cool to room temperature before putting the lid on, then transfer to the refrigerator. Give them at least a day to pickle before eating (if you can!) and they should last a week.
