Sun-Sentinel, February 28, 2008. Want to try this but haven't yet. It was described as a recipe for picky eaters and I have one of those in my family! This recipe serves 2 adults or 4 kids.

1 teaspoon butter
1 teaspoon honey
2 tablespoons chicken broth
1/4 teaspoon salt
1/2 lb snow peas, about 3 cups

Steps:

  • Place all ingredients, except the peas, in a shallow, wide, saute pan over medium-high heat.
  • Stir and bring to a boil.
  • Add snow peas, toss to coat and stir occasionally, 3 minutes just until peas are cooked.
  • Serve immediately.

Steps:

  • In a large skillet, heat olive oil to medium-high heat. Add garlic and sauteé until golden-brown, about 1 minute.
  • Add sugar, soy sauce, and snow peas, stirring to coat. Add water and cover skillet.
  • Cook until tender, stirring occasionally, about 8 minutes.

2 teaspoons extra-virgin olive oil, plus more for brushing
3 pounds chicken wings, split at the joints, tips removed
2 teaspoons paprika
1 teaspoon curry powder
1/2 teaspoon ground cumin
Kosher salt
12 ounces snow peas, sliced lengthwise
1 1/2 tablespoons soy sauce
1 lime (1/2 juiced, 1/2 cut into wedges)
2 tablespoons honey

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 425 degrees F. Lightly brush 2 rimmed baking sheets with olive oil. Put the chicken wings in a large bowl and toss with the paprika, curry powder, cumin and 1/2 teaspoon salt. Spread the wings in a single layer on the prepared baking sheets. Roast 15 minutes, then flip the wings, switch the position of the baking sheets and roast 15 more minutes. Meanwhile, bring a saucepan of lightly salted water to a boil. Add the snow peas and cook until bright green and crisp-tender, about 1 minute. Drain the snow peas and rinse under cold water, then transfer to a medium bowl. Toss with 2 teaspoons olive oil, 1/2 tablespoon soy sauce and the lime juice. Whisk the remaining 1 tablespoon soy sauce and the honey in a large bowl. Add the wings and toss to coat. Divide among plates and serve with the snow peas and lime wedges.

Steps:

  • In a large saucepan of boiling water cook the carrots for 3 minutes, or until they are crisp-tender. Add the snow peas, cook the vegetables for 30 seconds, and drain them well. Spicy Wok-Charred Snow Peas image

High-heat stir-fries are ideal for peas - either snow peas or the sugar snap variety. Assertive seasoning and the slight charring from the wok complement the peas' sweetness wonderfully. The method works well for other spring vegetables, too, like asparagus or baby bok choy clusters. Use a wide cast -iron pan if you don't have a wok. Take care to avoid overcooking; the peas should be a vibrant green color and firm to the bite.

6 to 8 small dried red chiles
1 pound snow peas, trimmed
1 bunch scallions, trimmed, chopped in 1-inch lengths
Salt and pepper
4 garlic cloves, minced
1/2 teaspoon grated ginger
1/2 teaspoon toasted sesame oil
3 tablespoons crushed roasted peanuts
2 tablespoons roughly chopped cilantro

Steps:

  • Put vegetable oil in a wok over high heat. When oil looks wavy, add chiles and let sizzle for a few seconds.
  • Add snow peas and scallions and season well with salt and pepper. Cook vegetables over high heat, stirring constantly, until cooked through and lightly charred, 2 to 3 minutes. Peas should be bright green and crisp-tender.
  • Add garlic, ginger and sesame oil, toss well and cook 1 minute more. Transfer to a serving platter and sprinkle with peanuts and cilantro.
