This easy recipe for Cowboy Caviar is fun, fresh, colorful, and endlessly adaptable. It makes a great dip, salad, side dish, or even a topping for grilled meats. Always a potluck favorite!

1/2 cup olive oil
1/4 cup granulated sugar (or to taste (see note 1))
1/4 cup white wine vinegar ((see note 2))
1 teaspoon chili powder
Salt
1 pound Roma tomatoes (seeded and diced)
1 (15 ounce) can black-eyed peas (drained and rinsed)
1 (15 ounce) can black beans (drained and rinsed)
1 (11 ounce) can sweet corn (drained (see note 3))
1 red onion (diced)
1 green bell pepper (diced)
1 red bell pepper (diced)
1 cup fresh cilantro (or fresh parsley, chopped, from 1 bunch)

Steps:

  • To make the dressing, in a small bowl whisk together the olive oil, sugar, white wine vinegar, chili powder, and salt to taste (I like 1 teaspoon).
  • In a large bowl, add tomatoes, black-eyed peas, black beans, corn, red onion, bell peppers, and cilantro. Drizzle with the dressing and stir to combine. Cover and chill until serving time.

A co-worker brought this dish to a work potluck, and everyone was absolutely raving! I couldn't get enough of it, so I knew I had to get the recipe :) It is great with tortilla chips as a dip, or over some lettuce for a salad. As a bonus, it's so simple and quick to put together!

1 (15 1/4 ounce) can black-eyed peas, rinsed and drained
1 (15 1/4 ounce) can corn, rinsed and drained
1 (10 ounce) can Rotel tomatoes & chilies
3/4 green bell pepper, diced
1/2 red onion, diced
4 green onions, sliced
1/2 jalapeno, seeded and diced
1 cup zesty Italian dressing

Steps:

  • Combine all ingredients and mix well.
  • It can be made up to 24 hours in advance and kept in the fridge.

1/2 cup vinegar
1/2 cup oil
3 cans black-eyed peas, drained and rinsed
1 can niblet corn, such as Green Giant Mexicorn, drained and rinsed
2 green bell peppers, chopped
1 medium onion, chopped
1 red bell pepper, chopped

Steps:

  • In a small pot, heat the sugar and vinegar. Once the sugar dissolves, remove from the heat and add the oil. Mix well.
  • In a bowl, mix the black-eyed peas, corn, green bell peppers, onions and red bell peppers and toss with the dressing. Place in the fridge until ready to eat.

1 (15-ounce) can black beans
1 (8 1/2-ounce) can whole kernel corn
1 (2-ounce) jar diced pimentos
1/2 cup green peppers, diced
1/4 cup yellow onion, diced
1 teaspoon garlic salt
2 cups Italian salad dressing

Steps:

  • Combine the peas, beans, corn, and pimentos in a colander and drain. Transfer to a medium-sized mixing bowl. Add the green peppers, onions, garlic salt, and dressing. Stir to incorporate the ingredients, cover, and marinate in the refrigerator for 24 hours. Drain the vegetable caviar before serving it as a side dish to your favorite barbecued meat.

½ cup diced jalapeno chile pepper
1 ½ cups finely chopped onion
2 ounces diced pimento peppers, drained
1 tablespoon minced garlic

1 pinch ground black pepper

Steps:

  • Place black-eyed peas in a large saucepan with enough water to cover. Bring to a boil. Reduce heat and simmer 90 minutes, or until black-eyed peas are tender.
  • Drain black-eyed peas. Cover with Italian-style salad dressing.
  • In a large bowl, mix together jalapeno, onion, pimento peppers, garlic, green bell pepper, and ground black pepper. Toss in black-eyed pea mixture. Chill in the refrigerator 8 hours or overnight before serving.

Steps:

  • Combine all the ingredients in a large bowl, stir gently to combine, and refrigerate overnight. Serve with corn chips. This recipe will keep in the refrigerator for up to 2 weeks.
