EASY 3-INGREDIENT CHOCOLATE ORANGE FUDGE
Steps:
- Break chocolate pieces into a large microwaveable bowl and microwave in 30 second increments at 50% power until completely melted and smooth.
- Stir in the sweetened condensed milk and orange extract (and orange zest, if you wish) until everything is combined and microwave on 50% power for another 45 seconds to 1 minute (stopping after 30 seconds to stir).
- Line an 8-inch x 8-inch square baking pan with parchment paper and pour the fudge mixture into the lined pan, smoothing out the top.
- Chill the fudge in the refrigerator for one to 4 hours, or until completely set.
- Slice into small squares, garnish with some additional orange zest or orange slices (I like to dip my orange slices in sugar before garnishing!) and serve.

QUICK & DIRTY CHOCOLATE ORANGE MICROWAVE FUDGE
Another adaptation from my Eagle brand dessert cookbook. If you like chocolate candy with orange cream this is the recipe for you.

Steps:
- Line an 8x8 inch pan with wax paper.
- I tape it in to make it easier.
- In a medium bowl combine milk chocolate chips, 2/3 can of sweetened condensed milk, and vanilla extract.
- Microwave 45 seconds to 1 minute at a time, stirring in between heating.
- Continue until smooth.
- Spread ½ of the mixture evenly across the bottom of the pan.
- Reserved other ½ of mixture.
- Chill 10-15 minutes.
- In a small bowl combine white chocolate chips, remaining sweetened condensed milk, and orange extract.
- Microwave 45 seconds to 1 minute at a time, stirring in between heating.
- Continue until smooth.
- Stir in red and yellow food coloring until you achieve an orange color you like.
- Spread the mixture evenly across the first chocolate layer.
- Chill 10-15 minutes.
- Reheat reserved chocolate mixture.
- Spread the mixture evenly across the orange layer.
- Chill for an hour.
- Remove from pan and cut into squares.
- Tips: I always use Eagle Brand sweetened condensed milk.
- It costs about twice as much but I've often been disappointed with the consistency of cheaper brands.

CHRISTMAS COLORS - QUICK & DIRTY MICROWAVE FUDGE
I like this combination of fudge because the green and red stripes help make a nice Christmas display. It's an adaptation from a cookbook featuring recipes made with Eagle brand sweetened condensed milk. Please note that I've fashioned the recipe to yield 1 batch of chocolate mint fudge and 1 batch of chocolate almond (tastes like chocolate cherry) fudge.

- Chocolate Mint Fudge: Line an 8x8 inch pan with wax paper.
- I tape it in to make it easier.
- In a medium bowl combine 12 oz of milk chocolate chips, 2/3 can (approx 10 oz) of sweetened condensed milk, and 2 tsp vanilla extract.
- Microwave 45 seconds to 1 minute at a time, stirring in between heating.
- Continue until smooth.
- Spread ½ of the mixture evenly across the bottom of the pan.
- Reserved other ½ of mixture.
- Chill 10-15 minutes.
- In a small bowl combine white chocolate chips, remaining 4 oz sweetened condensed milk from can#1, peppermint extract, and green food coloring to taste.
- Microwave 45 seconds to 1 minute at a time, stirring in between heating.
- Continue until smooth.
- Spread the mixture evenly across the first chocolate layer.
- Chill 10-15 minutes.
- Reheat reserved chocolate mixture.
- Spread the mixture evenly across the mint layer.
- Chill for an hour.
- Remove from pan and cut into squares.
- Chocolate Almond (actually tastes more like chocolate cherry) Fudge: Repeat same steps as above but use almond extract and red food coloring.
- Tips: Serve together on a platter for a nice display of Christmas colored desserts!
- Refrigerate separately so that the mint does not overpower the other fudge.
- I always use Eagle Brand sweetened condensed milk.

CHOCOLATE ORANGE FUDGE
This is so easy and yet it is probably the best fudge I've ever had. I usually omit the pecans. My niece used this recipe, substituting 3-4 drops peppermint extract for the orange zest, and earned a blue ribbon at the county fair. Even my 12-16 year old 4H girls had no problems making it. Note: make sure you use fresh orange zest. Dried will make the fudge bitter. Also make sure you don't get any of the bitter white part of the rind when you are zesting your orange.

- Line a 8x8x2-inch baking pan with lightly buttered waxed paper or aluminum foil.
- Set aside.
- Melt chocolate chips with condensed milk in the top of a double boiler or in a bowl in the microwave.
- Stir until smooth.
- Remove from heat and stir in pecans and grated orange peel.
- Spread in prepared dish and chill until firm.
- Carefully remove fudge from pan using the edges of the foil.
- Cut into squares.
- Store covered in refrigerator.
