QUICK CUMIN-RICH TOMATOES
This is a quick, even hastily prepared side dish. It goes well with Mediterranean, Middle Eastern and North African foods, and also amazingly well with curries. It's low cal, and fat-free.

Steps:
- Open a large can of whole peeled tomatoes.
- Remove the tomatoes, and put them into a bowl.
- Pour the liquid from the can into a small saucepan.
- Add the salt, garlic and cumin.
- Cook this on medium heat, and reduce the amount by half.
- The sauce will thicken.
- Add the tomatoes, and heat them in the sauce.
- Serve immediately, or reheat just before serving.
- The longer the tomatoes can soak up the flavors, the better.
- You could add basil, or any herb.

CUMIN-TOMATO RELISH

- If you're using cumin seeds, place them in a small skillet and toast over medium heat, shaking the pan occasionally, just a minute or two, until they are fragrant. Finely grind all but 1/2 teaspoon.
- Combine the ground cumin, the tomatoes, the optional pepper, the onion, the salt, the cayenne and the lime juice; taste and adjust seasoning if necessary. Just before serving, toss with the cilantro and reserved cumin seeds.

RICE AND TOMATOES WITH CUMIN
I made this up when I had some rice and tomatoes left over. It turned out better then the dish I made the rice for -- I used a mix of wild and Jasmine rice, but any rice would do. Time does not include cooking rice.

- Add Cumin to taste and mix well.
- Nuke in microwave until all ingredients are at serving temperature.

Steps:
- Heat oil in large nonstick skillet over medium heat. Add garlic and cumin; stir 1 minute. Add greens by large handfuls; stir just until beginning to wilt before adding more, tossing until coated with oil. Cook until tender, 1 to 6 minutes. Add tomatoes and sauté until heated through, about 2 minutes. Season to taste with salt and pepper and serve.
