2 cups fresh or frozen sliced carrots
1 tablespoon butter
2 tablespoons sliced green onions
1 tablespoon water
1/4 teaspoon salt
Chopped fresh parsley

Steps:

  • In a large saucepan, combine first five ingredients. Cover and simmer for 8-10 minutes or until the carrots are crisp-tender. Sprinkle with parsley.

2 pounds carrots, peeled and cut into sticks
¼ cup butter
¼ cup packed brown sugar
¼ teaspoon salt
⅛ teaspoon ground white pepper

Steps:

  • Place carrots into a large saucepan, pour in enough water to reach depth of 1 inch, and bring to a boil. Reduce heat to low, cover, and simmer carrots until tender, 8 to 10 minutes. Drain and transfer to a bowl.
  • Melt butter in the same saucepan; stir brown sugar, salt, and white pepper into butter until brown sugar and salt have dissolved. Transfer carrots into brown sugar sauce; cook and stir until carrots are glazed with sauce, about 5 more minutes.

8 medium carrots (1 pound)
2 tablespoons olive oil
1/4 teaspoon plus 1 pinch kosher salt
1 tablespoon chopped fresh thyme (or other fresh herbs - we used a combination of thyme and chives)

Steps:

  • Peel the carrots and slice them diagonally into rounds (on the bias).
  • Heat the olive oil in a large skillet over medium high heat. Add the carrots and cover. Cook for 4 minutes without stirring.
  • Remove the lid, stir, and add the 1/4 teaspoon kosher salt. Continue to saute uncovered 3 to 4 minutes until browned, stirring occasionally. Remove from the heat and stir in the fresh herbs and a few more pinches kosher salt to taste. Serve immediately.

1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon white sugar

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Arrange carrots in a shallow baking dish. Spray with cooking spray and sprinkle with nutmeg, cinnamon, and sugar.

A quick different way with carrots. You can use other herbs if you like in place of the basil. I have used both fresh garlic and crushed from a jar with little difference.

500 g carrots (sliced diagonally)
2 teaspoons olive oil
2 large garlic cloves (sliced thinly or 1 teasp crushed garlic from a jar)
2 tablespoons fresh basil (thinly sliced or chopped)

Steps:

  • Cook carrots in boiling water for for 2 -3 mins until tender but crisp or microwave if desired.
  • Drain and reserve 1/2 cup of liquid.
  • Combine the garlic and oil in a nonstick pan and cook over a moderate heat until fragrant (you can smell the garlic).
  • Add the carrots and stirring, cook until well combined and hot, adding a little of the reserved cooking liquid if necessary.
  • Remove from the heat and stir in the basil.
  • Serve hot.

1 cup apple cider vinegar
1/4 cup sugar
2 tablespoons kosher salt

1 tablespoon mustard seeds

Steps:

  • Place carrots in a heatproof resealable container or jar. Combine vinegar, sugar, salt, peppercorns, mustard seeds, and 1/2 cup water in a small pot. Bring to a boil over high heat, stirring occasionally. Immediately pour over carrots. Let cool to room temperature, then cover and refrigerate at least 2 hours before serving.

1/2 teaspoon cornstarch
1/2 teaspoon salt

Steps:

  • In a Medium or Large Ziploc® Zip 'n Steam™ Bag, combine carrots, brown sugar, butter, cornstarch and salt. Seal bag and shake gently to combine ingredients. Pat carrots into a single layer. Place in microwave oven., Cook on full power for 6 minutes for crisp-tender carrots. If needed, continue microwaving at 30-second intervals until carrots have reached desired level of tenderness. Allow bag to stand 1 minute before handling. Shake gently to coat carrots with glaze. Carefully open bag. Garnish with parsley if desired.
