Quick Breakfast Quinoa image

Apples, blueberries, and almonds make this breakfast pseudo-grain bowl filling, satisfying, healthy.

Number Of Ingredients 8

1 cup dry quinoa
2 cups water
1 medium apple, cored and diced
1/2 cup raw almonds, chopped
1 cup fresh or thawed frozen blueberries
1/2 cup raisins or chopped, pitted dates
1 teaspoon cinnamon
1/2 cup unsweetened soy, hemp, or almond milk

Steps:

  • Place quinoa and water in a saucepan, bring to a boil, cover, reduce heat, and simmer for 15 minutes or until quinoa is done and all the water is absorbed. Fluff with a fork.
  • Add remaining ingredients and stir for 2-3 minutes.

Number Of Ingredients 5

2 cups whole or low-fat milk, plus more for serving
1 cup quinoa, rinsed
3 tablespoons light-brown sugar, plus more for serving
1/8 teaspoon ground cinnamon, plus more for serving
1 cup (1/2 pint) fresh blueberries, plus more for serving

Steps:

  • Bring milk to a boil in a small saucepan. Add quinoa, and return to a boil. Reduce heat to low, and simmer, covered, until three-quarters of the milk has been absorbed, about 15 minutes.
  • Stir in sugar and cinnamon. Cook, covered, until almost all the milk has been absorbed, about 8 minutes. Stir in blueberries, and cook for 30 seconds. Serve with additional milk, sugar, cinnamon, and blueberries.

2 cups water, milk or soy milk
1 cup quinoa, rinsed
1/4 teaspoon ground cinnamon
1 cup fresh or frozen blueberries (thawed)
1/4 cup toasted pecans or walnuts
Maple syrup (optional)

Steps:

  • In a small saucepan, heat water to boiling over high heat. Add quinoa; return to boiling. Reduce heat to low; cover and cook for 15 minutes or until liquid is absorbed (mixture will still be moist).
  • Stir in cinnamon. Spoon quinoa into bowls. Top with blueberries, nuts, and sweeten to taste with a drizzle of maple syrup.

2 cups water (or apple juice)
1/2-1 teaspoon cinnamon
2 apples, diced
3/4 cup dried cranberries (can use cherries or raisins)
1/2 cup pecans, chopped (almonds are wonderful too)
1 1/2 cups low-fat vanilla yogurt

Steps:

  • cook quinoa in water or juice with cinnamon according to package. usually it is bring to a boil, reduce heat cover and simmer for 15 minutes.
  • cool a little and stir everything in.
  • keep in the fridge and serve cold.
  • this will keep for a few days in the fridge.
