This is an old Seattle recipe for a simple cake to turn overripe bananas into a delicious dessert.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease and flour one 9 x 13 inch cake pan.
- Cream together the butter or margarine and the sugar.
- Add eggs, bananas, flour, soda, salt, nuts, and vanilla. Mix thoroughly and pour batter into the prepared pan.
- Bake at 375 degrees F (190 degrees C) for 30 minutes. Cool and frost cake.

- Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13-inch pan.
- Beat sugar and butter together in a bowl using an electric mixer until creamy and smooth; mix in milk, eggs, and vanilla extract.
- Sift flour, baking powder, baking soda, cream of tartar, and salt together in a bowl; stir flour mixture into butter mixture until just combined. Fold in bananas and walnuts. Pour batter into prepared pan.
- Bake into the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 30 minutes.

Steps:
- Heat oven to 350ºF.
- Cover bottom of 8-inch round pan with parchment; spray with cooking spray.
- Beat egg, milk and vanilla in medium bowl with whisk until blended. Stir in bananas. Add muffin mix and cinnamon; mix well. Pour into prepared pan.
- Bake 20 min. or until toothpick inserted into center comes out clean. Cool 10 min. Invert cake onto wire rack; gently remove pan. Cool cake completely.
- Beat cream cheese and brown sugar with mixer in large bowl with mixer until blended. Blend in COOL WHIP. Spread onto top of cake; sprinkle with nuts.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - 8 inch round pans. In a small bowl, whisk together flour, baking soda and salt; set aside.
- In a large bowl, cream butter, white sugar and brown sugar until light and fluffy. Beat in eggs, one at a time. Mix in the bananas. Add flour mixture alternately with the buttermilk to the creamed mixture. Stir in chopped walnuts. Pour batter into the prepared pans.
- Bake in the preheated oven for 30 minutes. Remove from oven, and place on a damp tea towel to cool.

- Frosting Instructions: Mix all ingredients in large bowl with mixer until of spreading consistency.. Spread on cooled cake. Can sprinkle nuts over cake if so desired.
- Chocolate Frosting Instructions: Bring milk, butter and cocoa to a boil on top of the stove. Remove from heat and stir in sugar, vanilla and nuts. Spread over cake.
- Third Cake Option: The third way is made in a bundt pan using a white cake mix instead of yellow and I added one cup of coconut to the cake ingredients and 1 teaspoon of almond extract. If you make the bundt pan version bake at same temperature, spray pan and bake for 40 to 45 minutes. I used the cream cheese frosting above but added 1 teaspoon clear almond extract and sprinkled some coconut on top of the cake.
