QUICK AND EASY CHICKEN IN CREAM SAUCE



Quick and Easy Chicken in Cream Sauce image

I used to make this constantly when I first learned to cook. It's a great little dish that takes no time or effort to prepare. I used to serve it with boiled rice or new potatoes and vegetables.

Number Of Ingredients 7

2 chicken breasts
2 teaspoons cornflour
2 tablespoons oil
4 ounces sliced mushrooms
4 tablespoons white wine
5 fluid ounces whipping cream
salt and pepper

Steps:

  • Slice the chicken into thin strips and toss in the seasoned cornflour.
  • Heat the oil in a pan and fry the chicken pieces until golden brown.
  • Add the mushrooms and cook until tender,about 2 minutes.
  • Remove the chicken and mushrooms and keep warm.
  • Pour the wine into the pan, bring it to the boil, and then add the cream. Cook for 1-2 minutes, until the sauce is thick and creamy. Season to taste.
  • Pour the sauce over the chicken, sprinkle with fresh parsley and serve.

This sauce is so quick and delicious! It can accompany any meat, fish or veggie medley! It's so rich, noone would know it was so cheap.

1/2 cup cream cheese (any variety, I love chive and veggie)
1/2 cup chicken broth
1 teaspoon butter or 1 teaspoon margarine

Steps:

  • In a large pan, melt all of the butter.
  • Add the cream cheese and the chicken broth.
  • While stirring the sauce, bring sauce to a boil for a minute.
  • Don't burn the sauce!
  • Simmer for 2-5 more minutes.
  • Serve atop any meal; it's delicious!

  • Season chicken with salt and pepper. Heat olive oil in a large heavy skillet or pan. Add chicken to the pan and cook for 5-6 minute per side or until the outside is golden and the chicken is cooked through (cooking times will vary depending on the thickness of the chicken breasts).
  • Remove chicken from the pan, reduce heat to low-medium, and add garlic; stir for 30 seconds. Add the cream, Italian seasoning, and parmesan cheese. Stir to combine. Stir in 1 cup of chopped spinach if desired. Simmer for another 2-3 minutes.
  • Return chicken to the pan and simmer for another minute then turn off heat. Spoon sauce over chicken. Serve with pasta or veggies.

  • Heat a large skillet over medium-high heat and grease lightly with cooking spray or 1 teaspoon of olive oil. Cook diced bell peppers for 3 to 5 minutes, until the peppers just start to lose their crunch (this is all the cooking they will get, so if you prefer softer peppers, cook them longer). Transfer to a plate, set aside, and wipe out the pan.
  • Cut your chicken breast into 3 even cutlets by placing one hand flat on top of the breast and running a sharp knife horizontally through the breast 1/3 of the way down and then again with halfway through the bottom piece of the meat so you have three thin, even pieces.
  • Over medium heat, add chicken broth to the pan and use a spatula or wooden spoon to scrape the cooked bits of breading and chicken off the bottom. Add half and half and bring to a simmer. Allow to simmer for 1 minute until slightly reduced.
