Stuffed Shells with Chorizo Sauce image

Number Of Ingredients 13

12 uncooked jumbo pasta shells
1 Tbsp. olive oil
½ cup white onion, minced divided
½ Tbsp. garlic, minced
1 cup well packed canned artichoke, drained, chopped
4 cups fresh spinach, well packed, rough chop
½ tsp. kosher salt
½ tsp. ground black pepper
1 (7.6 oz. Pkg.) Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
1 link from a 14 oz. pkg. Supremo® Brand Pork from V&V SUPREMO®
2 Tbsp. Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
1¼ cup your favorite jarred pasta sauce
½ cup water

Steps:

  • Preheat oven to 375°F. ; Cook shells according to directions on package. Drain and set aside.; Stuffing: Preheat large saute pan on medium heat for 2 minutes. Add olive oil, ¼ cup onion, and garlic. Sauté for 1 minute. Add artichoke, spinach, salt, and pepper. Sauté for 2 minutes. Add in sour cream, 1¼ cup cheese, and stir for 30 seconds. Set aside and let cool.; Chorizo sauce: Preheat medium skillet for 2 minutes on medium heat. Add chorizo and cook for 8 minutes. Add remainder of onion and sauté for 2 minutes. Stir in pasta sauce and water. Cook for 2 minutes.; Place 1 cup of chorizo sauce into the bottom of a 8"x8" baking dish.; Stuff shells with approximately 2 Tbsp. of filling.; Place the stuffed shells onto the sauce. Cover shells with remaining chorizo sauce and top with remaining cheese. ; Place dish in the oven for 10 minutes or until the cheese is melted. Serve and enjoy!

A quick and super tasty version of an old classic but with chorizo. Way better than processed cheese and canned chili, but just as easy! Top with cilantro, onions, and fresh tomatoes and serve with tortilla chips!

1 (10 ounce) package fresh chorizo (such as Hempler's)
1 cup diced onion
3 cloves minced garlic
2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk, or more as needed
1 (12 ounce) bag shredded Mexican cheese blend
1 (4 ounce) can chopped green chilies

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium heat. Cook and stir chorizo in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion and garlic and cook until transparent, 4 to 5 minutes more.
  • Melt butter in saucepan over medium-high heat until sizzling. Stir in flour and whisk until a paste forms, about 5 minutes. Whisk in milk and continue to cook, whisking, until sauce begins to thicken, about 5 more minutes. Stir in the chorizo mixture, shredded cheese, and green chiles. Continue stirring until smooth and thick.
  • Transfer mixture into a shallow baking dish.
  • Bake in the preheated oven until browned, about 25 minutes.

When I couldn't figure out what to do with a roll of bulk chorizo sausage, this recipe was born. It may sound similar to other dip recipes, but don't let that fool you...the flavor of this dip definitely sets it apart from the rest. This also reheats well. Enjoy!

10 ounces bulk chorizo sausage
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), drained
1 (8 ounce) package cream cheese, cubed
1 (8 ounce) package processed cheese (such as Velveeta®), cubed

Steps:

  • Cook and stir chorizo sausage in a skillet over medium heat until cooked completely, 5 to 7 minutes; drain and transfer to a slow cooker.
  • Stir diced tomatoes, cream cheese, and processed cheese in with the chorizo.
  • Cook on Low until cheese is melted, stirring occasionally, 1 1/2 to 2 hours.

This recipe for Chorizo Stuffed Jumbo Shells is super easy and ready to eat in only one hour, making it perfect for this holiday season

3 Spanish-style chorizo sausage, casing removed
¼ cup olive oil
1 clove garlic, finely chopped
1/2 small red onion, chopped
6 white mushrooms, very finely chopped
¼ cup parmesan cheese
½ cup mozzarella cheese, shredded
¼ cup fresh Italian parsley, chopped
Can use pre-made or here's my recipe for simple sauce.
Mozzarella cheese, shredded
1 package jumbo shells

Steps:

  • Pre-heat oven to 350 F
  • Heat olive oil in a large skillet over medium-high heat. Remove casing from chorizo before adding the filling to the skillet. Use a spoon/flipper to break the up the sausage into medium pieces. Cook until browned, about 5 minutes.
  • Add garlic and onion and cook until soft, for about 5-7 minutes.
  • Add finely chopped mushrooms to meat mixture until softened, about 4-6 minutes.
  • Remove mixture from heat; stir in parmesan cheese and parsley.
  • Cook jumbo shells for about 8 minutes until al dente (still a little firm when you bite) but malleable to spoon in the filling (Caution: Avoid over-cooking shells because they will cook further in oven).
  • Drain pasta shells and run under cool water.
  • Spread 125mL of sauce on the bottom of a large baking dish.
  • Fill 2 Tbsp of meat filling into each shell and place into the baking sheet.
  • Top with remaining sauce and sprinkle with mozzarella.
  • Bake for 15-20 minutes until cheese is melted and filling is heated thoroughly.
  • Garnish with fresh parsley.

1/2 pound butter
1/2 pound flour
2 quarts heavy cream
Two 12-ounce bottles Mexican lager
3 3/4 pounds American cheese, shredded
3 pounds Cheddar, shredded
1 3/4 pounds smoked Gouda, shredded
1 quart cooked chorizo

Steps:

  • Melt butter in a stockpot over medium heat, then whisk in flour slowly, adding more only after it incorporates with butter. Whisk in heavy cream and lager until combined with roux. One quart at a time, add cheeses. Once all cheese is melted, add chorizo.

1 pound(s) lean ground beef
1 1/2 cup(s) my homemade queso-see my posted recipe for ingredients-or use jarred or your own homemade queso
1 can(s) ro tel tomatoes with chilies
2 jar(s) salsa-any brand
- mexican crema-or sour cream
- colby jack-or sharp cheddar and pepper jack cheeses-shredded
1 box(es) cooked large shell noodles-drained and cooled
- pickled jalepeno peppers if desired

Steps:

  • Pre heat oven to 350 In a large skillet, brown chorizo and ground beef-drain well and return to pan. Add in ro tel tomatoes and 1 cup of queso-reserve half a cup. ***at this stage if desired-add jalapenos*** Stir well and remove from heat.
  • In a baking dish, pour 1 jar of salsa. Stuff meat mixture into shells and place in pan on top of salsa. Top shells with remaining jar of salsa.
  • pour on remaining queso and top with shredded cheeeses of choice. Bake covered for 20 mins, uncovered for 15 or until cheeses are bubbling
  • When cooked, before serving, dollop with Crema or Sour cream and top with any of your favorite taco toppings! Enjoy this dish!
