This spicy chili recipe is the culmination of several years' worth of experimenting to get just the right flavor. For those who like their chili very hot, the secret is to add more jalapenos. The most I ever used in a recipe was five...was it spicy! -Liesha Hoek, Somerset, New Jersey

- In a Dutch oven, cook beef and sausage over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. Add the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes, stirring frequently. If desired, serve with additional jalapeno and sour cream.

EASY HOMEMADE CHILI
Easy homemade chili. Goes great with cornbread or over corn chips for a chili pie! I like to use spicy pinto beans.

- In a large saucepan over medium heat, combine the beef and onion and saute until meat is browned and onion is tender. Add the stewed tomatoes with juice, tomato sauce, beans and water.
- Season with the chili powder, garlic powder, salt and ground black pepper to taste. Bring to a boil, reduce heat to low, cover and let simmer for 15 minutes.

- Place the beef in a skillet over medium heat, and cook until evenly brown. Drain grease.
- In a large pot, mix the beans, corn, tomato sauce, tomato paste, and water. Bring to a boil, and reduce heat to low. In a food processor, finely chop the jalapenos, habanero, onion, and garlic. Mix into the pot. Mix in the cooked beef. Stir in masa flour. Season with cayenne pepper, chili powder, salt, black pepper, and sugar. Cook 45 minutes to 1 hour, stirring occasionally.

QUICK SPICY CHILI
Add a little beef and a little beer and a little chipotle, and you've got chili in no time.

- Heat the olive oil in a large heavy skillet over medium-high heat. Add the onions, garlic, chili powder, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onion is soft, 3 to 5 minutes. Stir in the tomato paste, the chipotle chiles and sauce, and cook for 1 minute. Add the beef and cook, breaking it up with a wooden spoon, until no longer pink, about 3 minutes.
- Add the beer and simmer until reduced by about half, about 8 minutes. Add the tomatoes and beans and bring to a boil. Cook, uncovered, stirring occasionally, until thick, about 10 minutes. Adjust the seasoning with salt and pepper and serve with desired assorted toppings.
SWEET AND SPICY CHILI
This recipe for sweet and spicy chili is the result of much experimenting. I knew I had perfected it when my husband took a pot to work, where one guy ate five bowls himself!

KATHY"S EASY NOT SO SPICY CHILI
This is really easy takes no time at all to put together and tastes great. This can also be prepared in a slow cooker.

- Brown meat in skillet. Combine all the ingredients in a large stock pot over medium heat. Stir to combine and bring to a boil.
- Cover and reduce heat to simmer and simmer for 2 1/2 hours, stirring occasionally. Remove from heat.
- Let sit for about 10 minutes (be sure to remove the bay leaf before serving) then serve.
- Serving suggestions: Top with bacon bits and cheese/place over a small amount of cooked pasta or rice.

BASIC SPICY CHILI
This is a basic chili recipe, but my favorite. Since I am a vegetarian, I omit the beef and add more beans for a great meatless chili. I also add more hot sauce for extra kick. This chili is great served with sour cream and/or cheese.

- In a large skillet, saute beef and onions together until beef is browned.
- Drain beef and add to a large soup pot (this step can be skipped if you wish to brown the beef in the soup pot).
- Add tomato juice and simmer over medium heat.
- Add tomatoes (with their juice), crushing between fingers to break apart.
- Add kidney beans, chili powder (the entire 4 tablespoons may be a bit much for some people, so start out small and add to taste), and optional hot sauce.
- After mixture comes to a simmer, add baking soda (the baking soda will help cut down the acidity of the tomatoes).
- Simmer for about 20-30 minutes, adding water if necessary to thin out the chili.
- Taste for seasoning.
LINDA'S MEDIUM HOT CHILI
The layers of flavor as cooking continues is what makes this stand out from other chili recipes. This is the method I use for chili cook offs in our local area. Everyone seems to enjoy it.

- In a stock pot, combine onion, green chile, garlic, tomato sauce, chicken broth, 6 tablespoons California chili powder, salt, 1 teaspoon adobo seasoning blend, and hot sauce. Bring to a simmer and cook for 1 hour. After chili has simmered for 1 hour, add the remaining 2 tablespoons California chili powder.
- In a large skillet, brown ground beef and sausage until cooked throughly. Add meat mixture and kidney beans to chili and simmer for 30 minutes.
- Add canned tomatoes and diced tomatoes, mild New Mexico chili powder and 2 tablespoons cumin and simmer another 45 minutes.
- Add the remaining 1/2 teaspoon adobo seasoning blend, 1 tablespoon cumin, 1 tablespoon hot New Mexico chili powder, and the lime juice. Cook for another 30 minutes. Season with additional salt, to taste.
