These Oatmeal Scotchies are a simple and easy oatmeal cookie full of butterscotch chips!

1 cup unsalted butter (softened)
1 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups quick-cook oats
2 cups butterscotch chips

Steps:

  • Preheat oven to 350°. Line your baking sheets with parchment paper or silpat liners.
  • Mix flour, baking soda, cinnamon, and salt in a medium bowl. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugars until creamy. Add the eggs and vanilla and beat well. Add the dry ingredients and mix until combined. Stir in the oats and butterscotch chips.
  • Drop by tablespoonfuls onto your prepared baking sheets. I like to use a 2 tablespoon sized ice cream scoop for this so the cookies will all be the same size.
  • Bake 10-12 minutes. Cool five minutes and then remove from pan to cool completely.

These soft & chewy oatmeal scotchies cookies are loaded with butterscotch chips in every bite. The centers are chewy and soft, the edges are crisp, and every bite is buttery delicious!

1 and 1/2 cups (188g) all-purpose flour (spoon & leveled)
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks; 230g) unsalted butter, softened to room temperature
1 cup (200g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
2 large eggs, at room temperature
1 Tablespoon unsulphured or dark molasses
2 teaspoons pure vanilla extract
3 cups (240g) old-fashioned whole rolled oats
2 cups (280g) butterscotch morsels

Steps:

  • Whisk the flour, cinnamon, baking soda, and salt together in a medium bowl. Set aside.
  • In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter, brown sugar, and granulated sugar together on medium-high speed until combined and creamy, about 2 minutes. Add the eggs, molasses, and vanilla and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. With the mixer running on low speed, beat in the oats and butterscotch morsels. Dough will be thick and sticky. Cover and chill the dough for at least 45 minutes in the refrigerator (and up to 4 days). If chilling for longer than a few hours, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard.
  • Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
  • Scoop cookie dough (here's the cookie scoop I love), about 3 Tablespoons of dough per cookie, and place 4 inches apart on the baking sheets. Bake for 13-14 minutes or until lightly browned on the sides. The centers will look very soft.
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. While the cookies are still warm, I like to press a few more butterscotch morsels into the tops- this is only for looks!
  • Cookies stay fresh covered at room temperature for up to 1 week.

¾ cup white sugar

2 cups butterscotch chips, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
  • In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, mash the butter, white sugar, and brown sugar together until smooth and creamy, and beat in the eggs to make a creamy mixture. Gradually beat in the flour mixture, rolled oats, and 1 1/2 cup of butterscotch chips.
  • Press the dough into the prepared baking dish, and sprinkle the top with remaining 1/2 cup of butterscotch chips.
  • Bake in the preheated oven until the top is golden brown, 30 to 35 minutes. Allow to cool in the pan before cutting into bars and serving.

⅓ cup white sugar
3 ⅓ cups fat-free milk
½ cup egg substitute with yolk
2 teaspoons vanilla extract
⅓ cup firmly packed brown sugar

Steps:

  • Heat oven to 350 degrees F. Spray 8-inch square oven-safe baking dish with cooking spray.
  • In large bowl, combine oats and granulated sugar.
  • In medium bowl, combine milk, egg substitute and vanilla; mix well. Add to oat mixture; mix well. Pour into prepared baking dish.
  • Bake 40 to 45 minutes or until center jiggles slightly. Remove from oven to cooling rack.
  • Sprinkle brown sugar evenly over top of oatmeal. Using back of spoon, gently spread sugar into a thin layer across entire surface of oatmeal.
  • Return to oven; bake just until sugar melts, about 2 to 3 minutes.
  • Set oven to broil. Broil 3 inches from heat until sugar bubbles and browns slightly, 1 to 2 minutes. (Watch carefully to prevent burning. It may be necessary to turn baking dish.) Spoon into bowls to serve.

1 cup brown sugar
1/2 cup white sugar
1 egg
1/4 cup water
1 teaspoon vanilla

1 cup raisins
1/2-1 cup nuts, chopped

Steps:

1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup butter, softened

3 cups Old-Fashioned Quaker oats
1 (11 ounce) package NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels (about 2 cups)

Steps:

  • Preheat oven to 375 degrees F.
  • Combine flour, baking soda, salt, and cinnamon in a small bowl; set aside.
  • Beat butter, granulated sugar, brown sugar, eggs, and vanilla extract in a large bowl.
  • Gradually beat in flour mixture.
  • Stir in oats and morsels.
  • Drop by rounded Tablespoonfuls onto an ungreased baking sheet.
  • Bake 7 to 8 minutes for chewy cookies, 9 to 10 minutes for crisp cookies.
  • Cool on baking sheets for 2 minutes, remove to wire racks to cool completely.
  • Pan Cookie Variation: Grease 15x10-inch jelly-roll pan.
  • Prepare dough as above.
