Frying the walnuts in the oil with paprika and cayenne for a minute really wakes up their flavor and enhances the whole dish. I have used this as both an appetizer and a side dish. 1¼ teaspoon kosher salt, divided
1 pound fairly thin "pencil" asparagus, ends trimmed and discarded, cut into 2 inch pieces
2 tablespoons extra-virgin olive oil
1/2 cup Fisher® Walnut Halves, lightly chopped
1/2 teaspoon paprika
1/8 teaspoon cayenne
2 tablespoons lemon juice

Steps:

  • 1. Fill a large bowl halfway with ice cubes and add some cold water. Place a colander squarely inside the ice bath. The colander will keep you from having to pick the asparagus out from amongst the ice cubes in the ice bath.
  • 2. Bring a large pot of water to a rolling boil. Add 1 teaspoon salt. Add the asparagus and cook for 1 to 1½ minutes. You want them to be crunchy. If the asparagus are thicker, cook for 1½ to 2 minutes.
  • 3. Remove the asparagus from the water using a slotted spoon and transfer them to the colander inside the ice bath. Move them around gently so the ice water penetrates the asparagus and accelerates the cooling process. Vegetables take longer than you think to cool so allow them to sit a few minutes in the ice water. Hold a piece of the asparagus in your hand for a few seconds to assure that it's really cool (even in the center). If the piece still feels warm, allow them to cool longer in the ice bath. Place them on a kitchen towel to drain any excess moisture.
  • 4. Heat oil a medium skillet until hot (but not smoking), add the walnuts and season with 1/4 teaspoon salt. They should bubble and fry slightly in the oil. When you can smell the walnuts, add the paprika and cayenne and lower the heat to medium. Cook for about 30 seconds, stirring constantly, and transfer the mixture to a bowl. Set aside.
  • 5. Toss the asparagus in the bowl with the walnuts and the oil. Let this mixture sit in the refrigerator for a few hours or a few minutes. When ready to serve, stir in the lemon juice. Serve immediately.

COLD ASPARAGUS WITH TRUFFLE MAYONNAISE

Basic Boiled Asparagus, recipe folows
1 tablespoon extra-virgin olive oil
Salt and pepper
1/2 tablespoon truffle oil
1 cup of your favorite mayonnaise
2 pounds asparagus, the thicker the better
2 tablespoons salt (for boiling water)

Steps:

  • Toss the cold asparagus with the extra-virgin olive oil, salt and pepper. Stir truffle oil into the mayonnaise. Plate the asparagus. Spoon mayonnaise to one side of asparagus.
  • Bring about 6 quarts of water to a rapid boil in a covered pot large enough to hold the asparagus. Cut the bottom section- usually about 1 to 2 inches off the asparagus stalks with a sharp knife. Peel the asparagus by laying them flat, one at a time, on a cutting board. If the asparagus are thinner than 1/2-inch, use a vegetable peeler and peel the asparagus starting at the base of the tip and peeling them all the way down to the base, eliminating the fibrous peel and revealing the pale green flesh. If the asparagus are very thick or woody, use a paring knife and start peeling from the base. When ready to cook, toss the salt into the boiling water and carefully lower in the asparagus. Turn the heat to low and simmer the asparagus, uncovered, until the spears are easily penetrated with a knife, usually after about 5 minutes but from 1 minute for very thin asparagus to 12 minutes for the very thickest. If serving cold asparagus, plunge the hot cooked asparagus into ice water or rinse under cold water in a colander. Pat dry.

salt
fresh ground pepper
1 tablespoon butter, cut in small pieces
3 tablespoons walnut oil or 3 tablespoons olive oil
1 1/2 tablespoons lemon juice
salt, to taste
fresh ground black pepper, to taste
4 tablespoons finely chopped walnuts, toasted

Steps:

  • To cook asparagus: Preheat oven to 300°F.
  • Break off woody stems of asparagus.
  • If stalks are thick, peel with a vegetable peeler, pulling from stem end toward tip.
  • (Pencil-thin spears do no need peeling.) Place in a greased or sprayed 9x13 inch glass baking dish.
  • Sprinkle lightly with salt and pepper.
  • Dot with margarine.
  • Cover with foil and bake for 30 to 35 minutes, or until tender but still crisp.
  • (Asparagus may be baked 1 day ahead and reheated in microwave.) To make topping: In a small bowl, whisk together oil, lemon juice, salt and pepper.
  • (Topping may be refrigerated overnight. Bring to room temperature before using.)
  • Before serving: Spoon topping over asparagus and sprinkle with walnuts.

16 asparagus spears , trimmed
400g potato , cut into chunks
400g skinned smoked haddock , cut into large chunks
16 quail eggs
25g butter
2 tbsp milk
50g plain flour
2 eggs , beaten
100g breadcrumb
sunflower oil , for frying
100g bag watercress
1 tbsp lemon juice
150ml mayonnaise

Steps:

  • For the Scotch eggs, tip the potatoes into a large pan and cover with water. Bring to the boil, then tip in the haddock and then the quail's eggs. Cook the eggs for exactly 2 mins, then remove them and cool under cold running water. Continue cooking the haddock until it flakes, and the potatoes until soft. Drain the fish and potatoes well, then mash with the butter and milk until you have a thick mash. Set aside to cool.
  • Meanwhile, peel the eggs. When everything is cool, pat out spoonfuls of mash mix and mould them around the eggs so that they are completely encased. Roll the covered eggs in the flour, then the beaten egg and finally the breadcrumbs. Chill for 1 hr to firm up, or overnight if you're assembling ahead.
  • For the watercress mayonnaise, blitz the watercress with the lemon juice until finely chopped, then stir through the mayonnaise. Blanch the asparagus for 4 mins, then drain under cold water. This can all be done a day in advance.
  • To serve, heat a good layer of sunflower oil in a frying pan. Fry the eggs until crisp on all sides, then drain on kitchen paper. Serve with the asparagus and watercress mayonnaise for dipping everything into.

1/2 cup grated Parmesan cheese
1/2 cup finely chopped walnuts, toasted
1 teaspoon grated lemon zest
1 teaspoon kosher salt
1/2 teaspoon coarsely ground pepper
1/2 teaspoon crushed red pepper flakes
1 pound fresh asparagus, trimmed
1/4 cup fresh lemon juice
1/4 cup lightly packed fresh mint leaves, chopped
1/4 cup olive oil, preferably extra virgin

Steps:

  • In a saucepan, bring to a boil enough water to cover eggs by an inch. Gently lower in eggs and reduce heat to a simmer. Boil for 8-1/2 minutes, then quickly transfer eggs to an ice-cold water bath. Leave them there while you prepare the other ingredients, but ideally at least 10 minutes., Place Parmesan, walnuts, and lemon zest in the bottom of a large bowl, along with 1 teaspoon salt, many grinds of black pepper, and about 1/2 teaspoon red pepper flakes. Stir to combine., Cut the asparagus on a sharp angle into very thin slices and add to the Parmesan mixture. Add 1/4 cup lemon juice and toss some more. Taste and adjust the flavors to your preference by adding more salt, black pepper, red pepper flakes, or lemon juice. Add mint and olive oil; toss, adjusting seasoning again., Peel eggs. Cut in half, then each half into 6 to 8 chunks. 1 pound green asparagus (preferably thin), trimmed
Kosher salt to taste
2 tablespoons white-wine vinegar (preferably tarragon)
2 teaspoons whole-grain mustard
1 teaspoon Dijon mustard
1/3 cup safflower or grapeseed oil
1 small shallot, thinly sliced into rings
3 teaspoons coarsely chopped fresh tarragon
1 cup pale green celery leaves (from center of bunch)

Steps:

  • Cover eggs with cold water in a very small saucepan. Bring to a simmer and cook, covered, 5 minutes. Rinse eggs under cold running water to stop cooking, then peel and quarter.
  • Cut asparagus on a very sharp diagonal into 3/4-inch-thick slices (about 2 inches long), leaving 2-inch tips. Halve tips lengthwise if thicker than rest of slices. Arrange asparagus on a steamer rack and sprinkle with kosher salt. Steam, covered, over boiling water until just tender, 2 to 3 minutes, then transfer to a bowl of ice water to stop cooking. Drain well and pat dry with paper towels.
  • Whisk together vinegar and mustards. Add oil in a slow stream, whisking. Stir in shallot, 2 teaspoons tarragon, and salt and pepper to taste.
  • Toss asparagus and celery leaves with half of vinaigrette and mound on 4 plates. Tuck quail eggs decoratively into salads. Drizzle salads and plates with remaining vinaigrette and sprinkle with remaining teaspoon tarragon.
