Curtido is a salad made out of cabbage and served with El Salvadoran pupusas. Stuff cooked pupusas with the curtido for a delicious treat!

Number Of Ingredients 7

½ head green cabbage, cored and shredded
1 carrot, grated
1 quart boiling water
3 green onions, minced
1 cup distilled white vinegar
½ cup water
2 teaspoons dried oregano

Steps:

  • Combine the cabbage and carrot in a large bowl and pour the boiling water over the mixture. Allow the mixture to steep for 5 minutes; drain well. Return the cabbage and carrots to the bowl. Mix in the green onion, vinegar, 1/2 cup of water, and oregano. Toss until all ingredients are combined. Chill for 20 minutes before serving.

2 cups masa harina
5-1/4 cups water, divided
1/2 cup KRAFT Shredded Mozzarella Cheese with a TOUCH OF PHILADELPHIA
3 cups coleslaw blend (cabbage slaw mix)
1 large onion, thinly sliced (about 3 cups)
1/3 cup KRAFT Zesty Italian Dressing

Steps:

  • Mix masa harina and 1-1/4 cups water. If dough seems dry, add additional water, 1 Tbsp. at a time, for proper consistency. Let rest 5 min. Divide into 16 equal balls.
  • Flatten each dough ball on lightly floured surface or with tortilla press into 5-inch round. Cover to keep from drying out. Place 1 Tbsp. cheese between 2 tortillas; pinch edges together to seal.
  • Add coleslaw blend and onions to 4 cups boiling water; cook 5 min. Drain; place in bowl. Add dressing; toss to coat.
  • Heat skillet on medium-high heat. Cook pupusas, in batches, 2 min. on each side or until cheese is melted and tortillas are lightly browned. Served topped with pickled cabbage.

  • In 10-inch skillet, heat oil over medium heat; stir in garlic and chopped onion. Cook 1 to 2 minutes or until onion is transparent. Stir in refried beans. Cook 1 to 2 minutes to blend flavors. Set aside.
  • In large bowl, mix pupusa masa ingredients by hand. Stir until soft, smooth dough forms. Using wet hands, shape mixture into 1/3-cup balls, shaping each into 4-inch circle, 3/4 inch thick. Place 1 tablespoon filling mixture in center of each circle and fold in half, sealing edges. With wet hands, carefully flatten and shape back into 4-inch circle, 3/4 inch thick. Wet hands, as needed, to prevent dough from cracking and sticking to hands. Cover pupusas with waxed paper while making remainder of pupusas.
  • Heat 12-inch nonstick skillet over medium heat. Cook papusas in skillet about 4 at a time 8 to 10 minutes, or until dough is golden brown and dark spots appear, turning once or twice. Keep warm.

  • Season the turkey with the salt and pepper, and place in a medium saucepan set over medium heat.
  • Meanwhile, combine the tomatoes, pepper, onions, oregano, and cinnamon in a blender and purée until smooth. Add the tomato mixture to the turkey in the saucepan and stir to loosen any browned bits from the bottom of the pan.
  • In a bowl, combine the masa flour with the warm water and salt. Mix the ingredients until a soft dough forms. Let the dough stand for 20 to 30 minutes.
  • Stir in about ¼ cup cold water until the dough become soft but not sticky. Divide the dough into 16 golf-ball-size pieces. Keep the dough covered as you work.
  • Rub the palm of your hands with a little olive oil. While holding of the dough balls in 1 hand, press the thumb of the other hand in the middle of the ball of dough to form an indentation, then turning the dough, begin to flatten it with your fingertips into a 4-inch concave disk resembling a small bowl.
  • Lightly rub the pupusas with oil and place them on a heated, greased griddle over medium-high heat. Cook each side until golden brown in spots and slightly puffy, 3 to 4 minutes per side.
