PUERCO ENCHILADO TACOS

2 tablespoons vegetable oil
4 cloves garlic
1 small white onion, roughly chopped
Salt
8 dried guajillo chile peppers, seeded
1 small Roma tomato, quartered
1 bay leaf
For the tacos:
3 tablespoons vegetable oil
1 russet potato, peeled and cut into 1-inch cubes
1 1/2 pounds boneless pork butt, cut into 1-inch cubes
Freshly ground pepper
1 1/2 cups beef broth
Corn tortillas, warmed, for serving
Fresh cilantro and diced white onion and radishes, for topping

Steps:

  • Make the salsa: Heat the vegetable oil in a heavy saucepan over medium-high heat. Add the garlic, onion and 1/2 teaspoon salt and cook, stirring, until the onion is translucent, about 4 minutes. Add the chiles, tomato, 2 cups water and the bay leaf. Bring to a boil, then reduce the heat to medium; simmer until the chiles are soft and tender, about 20 minutes. Remove from the heat and let cool slightly.
  • Remove the bay leaf, then transfer the vegetables and about 1 cup cooking liquid to a blender and puree until smooth, adding more cooking liquid if necessary. Strain through a fine-mesh sieve back into the pan; cook until slightly reduced, about 10 minutes. Set aside.
  • Make the tacos: Heat the vegetable oil in a large heavy saute pan (do not use a nonstick pan) over medium-high heat. Add the potato and saute until golden, 8 to 10 minutes; transfer to a bowl. Add the pork to the pan, season with pepper and sear until browned, about 3 minutes per side. Add the broth and bring to a simmer. Add 1 cup of the prepared salsa and return the potato to the pan; cover and simmer until the pork is fork-tender, 50 minutes to 1 hour. Serve in tortillas; top with more salsa, cilantro, onion and radishes.

CRISPY CHICKEN MINI-TACOS



Crispy Chicken Mini-Tacos image

1 cup finely chopped tomato
1/2 cup finely chopped white onion
1 jalapeno, stemmed and deveined
2 1 tablespoons chopped fresh cilantro leaves
Salt and freshly ground black pepper
1 bone-in chicken breast, with skin
2 teaspoons olive oil, plus 2 tablespoons
Vegetable oil, for frying
6 corn tortillas
1/4 cup Mexican crema or sour cream
3 tablespoons shredded iceberg lettuce
3 tablespoons queso fresco or mild feta cheese

Steps:

  • Salsa: Combine the tomato, onion, jalapeno, and cilantro in a bowl. Mix well and season with salt and pepper, to taste. Set aside.
  • Preheat the oven to 350 degrees F. Brush the chicken breast with olive oil and sprinkle generously with salt and pepper, to taste. Put the chicken on a small sheet pan and roast until fully cooked through, about 25 minutes. Remove the chicken from the oven and allow it to cool before shredding.
  • In a medium shallow skillet heat enough vegetable oil to come half way up the sides of the pan. Shred the chicken into small pieces and put about 2 tablespoons down the center of each corn tortilla. Roll up each tortilla like a cigar and secure them with a toothpick. Fry the tacos until golden brown on all sides, turning once, about 4 minutes total. Remove the toothpicks and cut each taco in half.
  • To serve: Top with shredded lettuce and freshly made salsa. Drizzle with Mexican crema and sprinkle with crumbled queso fresco.

CLASSIC SHRIMP GOBERNADOR TACOS

1 tablespoon olive oil
1 small white onion, minced
2 tomatoes, chopped*
1 green bell pepper, stemmed, seeded, and diced
1 pound shrimp, peeled and deveined, chopped
1 cup canned tomato puree
1 teaspoon dried oregano
1 bay leaf
1/2 teaspoon smoked paprika
Salt and freshly ground black pepper
8 corn tortillas
1/2 cup shredded Oaxaca or mozzarella cheese
Lime wedges, for serving
Hot sauce, for serving (recommended: Tapatio)

Steps:

  • In a large heavy saucepan, heat the olive oil over medium-high heat. Add the onions and cook until translucent, about 3 minutes. Add the tomatoes and bell pepper and cook for 3 minutes. Add the shrimp and cook for 3 minutes. Stir in the tomato puree, oregano, bay leaf, and smoked paprika. Cook for another 3 minutes. Season with salt and pepper, to taste. Remove the pan from the heat and set aside. Remove the bay leaf and discard.
  • Heat a large heavy skillet over medium-high heat. Lay 2 tortillas, flat on the bottom of the pan, side by side. Put a small mound of cheese on 1 side of each tortilla. Wait until the cheese melts slightly, about 1 minute, and then add about 2 tablespoons of the shrimp mixture to each tortilla. Fold the tortillas over into half-moon shapes and cook to melt the cheese completely, another 1 to 2 minutes. Transfer to a platter and keep warm.
  • Repeat with the remaining tortillas, cheese, and shrimp mixture. Arrange the tacos on a serving platter and serve with lime wedges and hot sauce on the side.
  • *Cook's Note: Use only the outer part of the tomatoes without seeds.

  • While that is boiling prep your grill and wooden skewers by submerging them in water to prevent them burning wile on the grill. Once the pulpo is cooled down cut it up into about 1 – 2 inch sizes. Keep the size consistent so they grill evenly. Skewer the pulpo and brush with a little bit of olive oil. Grill them on direct heat for just a minute or two per side. If you’re using a charcoal grill the flavor will be even more intense!
