UPSIDE-DOWN TAMALE PIE

Upside-Down Tamale Pie image

I've used a chunky salsa with plenty of built-in seasonings as the basis of the meat filling. I could have used a cornbread mix for the topping, but I find them too sweet. Besides, it's easy to do a from-scratch cornbread if you assemble the components while the meat filling cooks.

Yield Makes 6 servings

Number Of Ingredients 25

2 tablespoons extra-virgin olive oil or vegetable oil
1 1/2 cups chopped fresh or frozen onions (2 medium yellow onions)
1 large garlic clove, minced
Half of a 1-pound bag frozen bell pepper stir-fry mix (red, green, and yellow peppers; do not thaw)
2 teaspoons chili powder
1 teaspoon dried oregano, crumbled
1 pound lean ground beef chuck
3 tablespoons all-purpose flour
One 1-pound jar chunky salsa (as mild or hot as you like)
2 tablespoons tomato paste
One 9-ounce package frozen whole-kernel corn (do not thaw)
Salt and freshly ground black pepper
2 tablespoons coarsely chopped fresh cilantro or parsley
1 cup all-purpose flour
3/4 cup yellow cornmeal
2 tablespoons freshly grated Parmesan cheese
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon chili powder
1 teaspoon dried oregano, crumbled
1/4 teaspoon freshly ground black pepper
1 cup buttermilk
1/4 cup extra-virgin olive oil or vegetable oil
1 extra-large egg

Steps:

  • Preheat oven to 400 degrees F.
  • To prepare meat filling, heat oil in 11- to 12-inch, deep, oven-proof skillet over moderate heat 1 minute. Add onions, garlic, and stir-fry mix and cook, stirring, until onions are limp and golden, 5 to 8 minutes. Add chili powder, oregano, and beef, breaking up clumps. Cover and cook 10 minutes. Blend in flour, add salsa and tomato paste, stirring well to incorporate, then add corn and simmer uncovered 5 to 10 minutes, stirring often, until meat shows no signs of pink. Season to taste with salt and pepper, mix in cilantro, and set off heat.
  • To prepare corn bread topping, combine flour, cornmeal, and all remaining dry ingredients in bowl and make well in center. Combine buttermilk, oil, and egg in 1-quart measure, dump into well in dry ingredients, and mix briskly just until dough holds together. Spread on top of meat filling, leaving 1- to 1 1/2-inch margin all round.
  • Bake uncovered until bubbly and brown, 15 to 20 minutes. Serve at once.

Time 3h50m

Yield s: 4 to 6 servings

Number Of Ingredients 16

8 guajillo dried peppers
1 quart chicken stock, homemade or store-bought
1 can chipotle in adobo sauce
1 tablespoon fresh or 1 teaspoon dried oregano
1 1/2 teaspoon ground coriander (half a palmful)
1/2 teaspoon ground cinnamon
One 3-pound boneless pork butt (shoulder), trimmed weight
Kosher salt and freshly ground black pepper
EVOO
1 large onion, finely chopped
4 cloves garlic, finely chopped
1 1/2 cups whole milk
1 1/2 cups fine to medium ground cornmeal
1 teaspoon fennel pollen or ground fennel
3 tablespoons butter
1 1/2 cups grated sharp Cheddar or hot pepper Cheddar

Steps:

  • Heat the dried peppers in a pot. Add 2 cups chicken stock and simmer at a low bubble until tender, 10 minutes. Seed the peppers.
  • Puree the chipotle in adobo sauce in a food processor. Remove all but about 2 round tablespoons to a plastic bag and freeze for another use. Add the softened dried peppers and their broth to the food processor along with the oregano, coriander and cinnamon. Puree until smooth.
  • Meanwhile, sprinkle the pork with salt and pepper. Heat 2 tablespoons EVOO in a Dutch oven over medium-high heat, add the pork, brown and then remove. Add another turn-of-the-pan of oil, onions and garlic and stir to soften. Return the pork to the pan, add the pepper puree, the remaining stock and about 1 quart water to raise the liquid level halfway up the pork. Bring to a boil, and then reduce the heat and simmer over medium-low heat, partially covered, for 2 to 2 1/2 hours until very tender.
  • Remove the pork, cool to handle, shred and return to the sauce. Bring back to a simmer and reduce to thicken, 15 minutes. For a make-ahead meal, remove from the heat, cool and cover, store in the fridge. Reheat over medium heat, stirring frequently.
  • To serve, while the pork reheats, place the rack in center of the oven and turn the broiler on high or the oven to 500 degrees F.
  • Place the milk in a pot and warm to a low bubble over medium heat while you bring 3 cups water to a full boil in a tea kettle or another pot. Add the cornmeal to the milk and whisk in the boiling water, fennel pollen and about 1 1/2 teaspoons kosher salt. Whisk constantly for 15 minutes. Remove from the heat and stir in the butter.
  • Place the pork in a casserole or individual ovenproof bowls. Top with cornmeal about 1-inch thick and sprinkle with the cheese. Place in the broiler or oven to set and brown the top, a few minutes for individual bowls, 10 to 15 minutes for a large casserole.

CHILE TAMALE PIE

Chile Tamale Pie image

This crowd-pleasing potluck dish is easy to prepare. It packs a little heat, a little sweet and a big-time authentic southwestern flavor. There is no substitute for freshly ground chiles. A small food processor on high speed may be used to grind the chiles and cumin, or use a dedicated coffee grinder for fresh spices. It is a fantastic $15 investment for fresh spices anytime-and your palate will thank you! -Ralph Stamm, Dayton, Ohio

SPICY PORK TAMALE PIE WITH PICKLED JALAPEñOS

Spicy Pork Tamale Pie with Pickled Jalapeños image

This American tamale pie features a spicy pork chili topped with a cornbread batter made using masa harina instead of cornmeal. The chili gets its heat from a combination of poblano and jalapeño peppers, while store-bought enchilada sauce gives it an extra boost of flavor with minimal effort. Before baking, the cornbread batter is studded with pickled jalapeños for extra tangy heat.

Number Of Ingredients 23

2 tablespoons extra-virgin olive oil
1 1/2 pounds ground pork
Kosher salt and freshly ground black pepper
1 medium yellow or red onion, finely chopped
1 poblano pepper, stemmed, seeded and chopped
1 jalapeño, stemmed, seeded and minced
3 garlic cloves, minced
1 teaspoon chili powder
1/2 teaspoon ground cumin
One 10-ounce can enchilada sauce
1 cup low-sodium chicken broth
1 cup frozen corn kernels
1 1/4 cups masa harina (see Cook's Note)
3/4 cup all-purpose flour
1 1/2 tablespoons baking powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 large eggs
3/4 cup whole milk
3/4 cup low-sodium chicken broth
3/4 cup shredded Cheddar
1/2 cup sliced pickled jalapeños
Hot sauce and sour cream, for serving

Steps:

  • Prepare the chili: Preheat the oven to 425 degrees F. In a 12-inch cast-iron skillet, heat the olive oil until shimmering. Add the pork and season with salt and pepper. Cook over medium-high heat, breaking up the meat with a wooden spoon, until the just starting to brown but not cooked through, about 5 minutes.
  • Add the onions, poblanos, jalapeños, garlic and a pinch each of salt and pepper to the skillet. Cook over medium heat, stirring occasionally, until the vegetables are just softened and the pork is cooked through, 6 to 8 minutes. Add the chili powder and cumin and cook, stirring, until fragrant, about 30 seconds. Stir in the enchilada sauce and chicken broth and bring to a boil. Simmer, over medium-low heat, stirring occasionally, until slightly thickened, 5 to 7 minutes; stir in the corn kernels.
  • Meanwhile, prepare the cornbread: In a medium bowl, whisk the masa harina with the flour, baking powder, salt and pepper. In another medium bowl, beat the eggs with the milk and chicken broth. Add the wet ingredients to the dry and beat vigorously until the batter is fluffy, 1 to 2 minutes. Fold in 1/2 cup of the cheese.
  • With the chili off the heat, spoon the cornbread batter on top and gently spread it in an even layer. Scatter the pickled jalapeños over the batter, then sprinkle the remaining 1/4 cup of cheese on top. Bake the tamale pie until bubbling and the cornbread is risen, 25 to 30 minutes. Let stand 5 minutes before serving. Serve topped with hot sauce and sour cream.

PORK TAMALE POT PIE WITH CORNBREAD CRUST

This is a great make-ahead recipe as everything can be assembled and frozen. Or just make up to the pork filling mixture, freeze, and assemble the recipe another day. Great to have on hand when there's little time to prep a great meal.
