My Grandma Hunt is almost 90 years old. Whenever she comes over, she makes her famous Puffed Wheat Balls by the dozen. Her 82 grandchildren and 168 great-grandchildren all love them. -Lucile Proctor, Panguitch, Utah

Number Of Ingredients 6

12 cups unsweetened puffed wheat cereal
2 cups packed brown sugar
1 cup light corn syrup
2 tablespoons butter
1 cup evaporated milk
1/3 cup sugar

Steps:

  • Place cereal in a large bowl; set aside. , In a heavy saucepan, bring brown sugar, corn syrup and butter to a boil. In a small bowl, combine evaporated milk and sugar; add to boiling mixture. Cook until candy thermometer reads 240° (soft-ball stage). Pour over cereal and stir to coat., Shape into 2-in. balls. Wrap individually in plastic wrap if desired. Store in airtight containers.

This recipe was developed by one of my grandmother's friends. It makes a lovely puffed wheat cake with lots of flavor. No baking required for this recipe.

8 cups puffed wheat cereal
1 cup brown sugar, not packed
½ cup butter
½ cup corn syrup
3 tablespoons Dutch-process cocoa (such as Fry's®)
2 teaspoons vanilla extract

Steps:

  • Line a 9x13-inch baking pan with parchment paper.
  • Place puffed wheat cereal in a large bowl.
  • Combine brown sugar, butter, corn syrup, and cocoa in a saucepan. Bring to a boil; cook, stirring constantly, until sugar is dissolved, about 2 minutes. Remove from heat. Stir in vanilla extract.
  • Pour sugar mixture over puffed wheat cereal in the bowl; stir until cereal is evenly coated. Spread evenly into the lined pan. Cool until set, about 30 minutes. Cut into squares.

A delicious snack similar in preparation and style to Rice Krispie Squares, but tastes nothing like them. Although, they taste nothing like them.

1/3 cup butter
1 cup brown sugar
1/2 cup molasses
1/2 cup corn syrup
1/2 teaspoon vanilla
12 cups puffed wheat cereal

Steps:

  • Boil butter, brown sugar, molasses, and corn syrup for 5 minutes.
  • Add vanilla.
  • Prepare puffed wheat in a large bowl. Butter a 12x9 pan.
  • Add boiling syrup to puffed wheat and stir well.
  • Quickly press mix into baking dish and press down with the spoon.
  • Cool, cut, and enjoy!

This recipe has been around longer than I have. It is one of those recipes that I never mess up. I make this for school lunches and press into muffin tins for perfect lunch-size pieces. It never lasts long in our house.

⅓ cup butter

  • Pour cereal into a large bowl.
  • Melt butter in a saucepan over medium-low heat. Stir brown sugar, corn syrup, cocoa powder, and vanilla extract into melted butter; cook until mixture begins to bubble, 5 to 10 minutes. Remove saucepan from heat, pour butter mixture over cereal, and stir to until cereal is coated. Spoon and press cereal mixture into muffin cups or a 9x13-inch casserole dish.

A WHEAT KRISPIES TREAT



A Wheat Krispies Treat image

Basically ooey-gooey Rice Krispies treats but using puffed wheat. Recipe has been adapted to be much lower in fat (you could probably do the same with Rice Krispies). Everything is done in the microwave. A great, quick dessert to make with the kids. It looks like there are a lot of steps, but that's just because I went into lots of details. Plan for at least 30 minutes of cooling time before serving.

8 cups puffed wheat cereal
6 cups marshmallows (about 40 large ones)
1 tablespoon margarine or 1 tablespoon butter
1 tablespoon skim milk
1 teaspoon vanilla extract

Steps:

  • Measure out cereal; set aside.
  • Line a 9x9 baking dish with wax paper or with greased plastic wrap. Prepare a second sheet for the top. Grease a wooden spoon.
  • In a LARGE* microwavable bowl, melt butter - about 30 seconds.
  • Turn the bowl in order to coat sides with melted butter.
  • Add milk and vanilla; return to the microwave. Heat until marshmallows are huge and puffed-up (watch that they don't overflow) - about 2 or 3 minutes.
  • With your greased spoon, stir until marshmallows are well mixed with butter, milk, and vanilla - there should be no lumps (it looks like marshmallow cream).
  • Incorporate puffed wheat, making sure to coat all the cereal.
  • Pour into prepared pan; cover with second piece of wax paper. Press FIRMLY into pan.
  • Refrigerate at least 30 minutes.
  • With the help of the paper, lift out and place on a cutting board or counter top; remove top layer of paper. Using a sharp, wet knife, cut into squares. If knife starts sticking, just re-wet it.
  • Serve, making sure to remove any paper from the bottom.
  • Keep refrigerated.
  • * If you don't have a large enough microwavable bowl, you can put the puffed wheat into a regular bowl and pour the melted marshmallow over top. You will need a bowl containing at least 2 quarts to prevent marshmallows from spilling over.

Healthier Chocolate Puffed Wheat Squares image

I love chocolate, and I love being healthy and fit. So i've come up with a compromise- a delicious chocolate puffed wheat square reduced in sugar and fat. I've made this recipe with 2 oz. of 72% cocoa chocolate and 6 squares of Lindt 99% cocoa chocolate... but i'm sure you could play around with different chocolate bars to get a preferred chocolate taste.

3 ounces dark chocolate, 70%
1/4 cup chocolate protein powder
1/4 cup honey
1/4 cup unsweetened applesauce
1 teaspoon vanilla

Steps:

  • Grease a 9x9 inch pan.
  • Measure out the puffed wheat into a large bowl.
  • In a medium saucepan on low heat, melt and mix the remaining ingredients.
  • Pour the chocolate mixture into the bowl of puffed wheat and stir.
  • Press the chocolate puffed wheat mixture into the greased pan and refrigerate for a couple hours before cutting into squares.
