PUCKERIN' PICKLE POPS
Kids love these and they're a great treat for dieters as well! This is an easy recipe using the leftover pickle juice from the jar that you would normally discard. - Place 5 oz of juice (mixed with a small amount of sugar if desired) into six popsicle molds or you can use small dixie cups, or an ice cube tray with popsicle sticks.

- In a large measuring cup, whisk together the Aperol, Prosecco, club soda, and orange juice until well combined.
- Place 2 blood orange slices into each mold. Pour the Aperol mixture evenly into each and insert the popsicle sticks. Freeze until firm, about 6 hours or overnight. Serve the popsicles in a glass of chilled Prosecco if desired.

While searching for homemade popsicles for my kids, I came across this recipe on the Kraft website. Please note that servings vary greatly depending on whether you use popsicle molds or you use 3 ounce paper cups. Have fun!!

Steps:
- Stir boiling water into gelatin and sugar in medium bowl at 2 minutes until completely dissolved.
- Stir in cold water.
- Pour into pops molds or plastic or paper cups.
- Freeze about 2 hours or until almost firm.
- Insert wooden spoon or stick or plastic spoon into each for handle.
- Freeze 8 hours or overnight until firm.
- Press firmly on bottom of mold to release pop.
- Store leftover pops in freezer.
