Mertzie's Addictive Pretzel Candy Fudge image

Loved the addition of pretzels to this recipe. They gave it an unexpected crunchiness. I would agree - so yummy!

2 c mashed pretzels (sticks or penny rods)
1 c peanuts
2 Tbsp peanut butter
12 oz white chocolate morsels
10 oz peanut butter morsels

Steps:

  • 1. Put mashed pretzels in an oven on warm. Melt the peanut butter morsels & white chocolate morsels together. (I do this on 50% power in the microwave for about 5 minutes, stirring at least once.)
  • 2. When melted, mix in peanut butter, peanuts & the mashed pretzels.
  • 3. Spread onto a WELL-greased 8x8 pan. (I always line the pan with parchment paper sprayed with Pam.)
  • 4. Allow fudge to harden, about 2 hours. Cut in chunks. They are not meant to look perfect. DIG IN!!!

2-3/4 cups crushed pretzel sticks
1 cup sugar, divided
3/4 cup butter, melted
1 envelope unflavored gelatin
1/4 cup cold water
1 cup creamy peanut butter
1/4 cup butter, softened
2 ounces cream cheese, softened
3/4 cup heavy whipping cream, divided
1/2 cup milk chocolate chips
Additional crushed pretzel sticks, optional

Steps:

  • Preheat oven to 350°. Combine crushed pretzels and 1/3 cup sugar with melted butter. Using the bottom of a glass, press onto bottom and up the sides of a greased 9-in. deep-dish pie plate. Bake until set, 12-15 minutes. Cool completely on a wire rack., Meanwhile, sprinkle gelatin over cold water; let stand 5 minutes. Beat peanut butter, softened butter, cream cheese and remaining sugar until smooth. Gradually beat in 1/2 cup cream. Microwave gelatin on high until melted, about 10 seconds; stir into peanut butter mixture. Transfer to crust., Microwave chocolate chips and remaining cream on high; stir until smooth. Cool slightly. Spread chocolate mixture over peanut butter mixture. If desired, top with additional crushed pretzels. Refrigerate, covered, until set, about 3 hours.

Nonstick cooking spray
2 tablespoons unsalted butter, cut into small pieces
3 cups semisweet chocolate chips (16 ounces)
1 can (14 ounces) sweetened condensed milk
1/2 teaspoon pure vanilla extract
1/8 teaspoon fine salt
2 1/2 cups roughly chopped miniature pretzels

Steps:

  • Coat an 8-inch square baking pan with cooking spray and line with parchment paper, leaving a 2-inch overhang on all sides.
  • Place butter, chocolate chips, condensed milk, vanilla, and salt in a medium heatproof bowl set over (not in) a pot of barely simmering water. Stir occasionally until chocolate just melts and mixture is combined and warm but not hot, 8 to 10 minutes. Remove from heat and stir in 2 cups pretzels. Transfer mixture to pan and smooth top; press 1/2 cup pretzels on top. Refrigerate until set, 2 hours (or up to overnight, wrapped). Using parchment, lift fudge from pan and cut into 36 squares.

  • Make the crust by stirring together the crushed pretzel, flour, and sugar in a mixing bowl. Add in the melted butter and stir until combined. Press the crust mixture into a 9 inch pie pan. Bake at 350 degrees for 10-12 minutes. Remove from oven and let cool.
  • Pour 1 cup hot fudge sauce into the baked, cooled pie shell. Spread out to cover the bottom and smooth. Set aside.
  • Combine sugar, cornstarch, milk, cream, peanut butter chips, and peanut butter in a medium saucepan. Cook over medium heat, stirring constantly, until mixture begins to bubble. This will take several minutes. Once it bubbles continue stirring for 2 minutes. The mixture will begin to thicken.
  • Mix a little of the hot mixture into the egg yolks (do this part quickly), beating quickly to avoid cooking the yolks with the hot liquid. Stir the warm yolk mixture back into the remainder of the peanut butter mixture and cook for an additional 90 seconds. Remove from heat and stir in the butter and vanilla and continue stirring until butter is melted and mixture is smooth.
