CLASSIC FRESH PRAWN (SHRIMP) ROLLS



Classic Fresh Prawn (Shrimp) Rolls image

This is from Fresh TV cooking show and is delicious. I did modify in that I subbed spring onion for 1 stick celery (finely chopped) and used sweet chilli sauce instead of sweet chilli and tamarind sauce.

1/3 cup mayonnaise (good quality)
1 tablespoon sweet chili sauce
1 spring onion (finely chopped)
1 teaspoon lemon juice
500 g prawns (flesh, cooked and deveined)
1/4-1/2 teaspoon black pepper (freshly ground)
4 large bread rolls (fresh)
30 g baby rocket

Steps:

  • Combine mayonnaise, sauce, spring onion, and lemon juice together and mix well.
  • Stir through prawns and season with freshly ground black pepper.
  • Split rolls and fill with prawn mix and top with the baby rocket.

Prawn/Shrimp Appetizers image

A lovely spring roll wrapper cup filled with philly cheese thats been mixed with marie rose sauce with chopped up cooked prawns or smoked salmon folded in. - totally yummy! Better make double as folks keep coming back for more.

150 g cream cheese, Philly Lite
24 spring roll wrappers, cups see recipe Spring Roll Wrapper Cups
1 cup prawns, cooked
1 -1 1/2 tablespoon seafood sauce
squeeze lemon juice

Steps:

  • cook prawns, and chop off a larger piece of each prawn and save to put on the top, chop the rest of the prawns finely.
  • Add the lemon juice and the seafood sauce (I use Marie Rose sauce) - many sauces are different thicknesses so start with the one tablespoon and just add more if necessary to the cheese and blend well.
  • Stir in the chopped prawns - or you could use smoked salmon.
  • Fill each cup with the cheese mixture and serve. great for parties or when entertaining. the filling can be made ahead - the same with the cups but the filling has to be put in the cups la late as possible.

These are equally good served hot or at room temperature. Arrange in a shallow dish with toothpicks. Prep time does not include marinate time.

1 lb jumbo shrimp, peeled and deveined
1/2 cup chopped fresh parsley or 1/2 cup cilantro
1/4 cup olive oil
2 tablespoons finely grated fresh lemon rind
3 cloves garlic, minced (or more)

Steps:

  • Toss everything together in a bowl and marinate up to 4 hours in fridge.
  • Heat skillet over high heat.
  • Add half the shrimp.
  • Cook turning once about 2 minutes or until shrimp are pink.
  • Repeat with other half.
  • Serve either hot or cold.

16 large mushrooms
1 lb small shrimp, deveined and cooked
1/4 cup dry breadcrumbs
1 egg, beaten
2 tablespoons milk
1 tablespoon lemon juice
1 tablespoon onion, grated
1/2 teaspoon seasoning salt
1/4 cup butter, melted

Steps:

  • Wash mushrooms; chop stems.
  • Set aside 16 shrimp.
  • Chop remaining shrimp.
  • Combine chopped shrimp, chopped mushrooms, crumbs, egg, milk, lemon juice, onion and salt.
  • Spoon into mushroom caps.
  • Top with whole shrimp and brush each appetizer with melted butter.
  • Bake at 375 degrees for 15 minutes until tender.
