White baking chips and macadamia nuts are a fantastic duo in these buttery cookies. They are a nice change from the classic chocolate chip ones. -Cathy Lennon, Newport, Tennessee

1/2 cup butter, softened
2/3 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1 cup macadamia nuts, chopped
1 cup white baking chips

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour and baking soda; gradually beat into creamed mixture. Stir in nuts and baking chips., Drop by heaping teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 1 minute. Remove to wire racks to cool completely. Freeze option: Freeze cookies, layered between waxed paper, in freezer containers. To use, thaw before serving or, if desired, reheat on a baking sheet in a preheated 350° oven 3-4 minutes.

1 cup butter, softened
¾ cup packed light brown sugar
½ cup white sugar
2 eggs
½ teaspoon vanilla extract
½ teaspoon almond extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup coarsely chopped macadamia nuts
1 cup coarsely chopped white chocolate

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla and almond extracts. Combine the flour, baking soda, and salt; gradually stir into the creamed mixture. Mix in the macadamia nuts and white chocolate. Drop dough by teaspoonfuls onto ungreased cookie sheets.
  • Bake for 10 minutes in the preheated oven, or until golden brown.

1 ¼ cups oatmeal
½ cup sweetened flaked coconut
1 cup flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup butter, softened
½ cup light brown sugar
½ cup white sugar
1 egg, at room temperature
½ teaspoon vanilla extract
½ cup white chocolate chips
3 ounces macadamia nuts, coarsely chopped

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Place oatmeal in a blender and process into a fine powder. Transfer to a large bowl and set aside.
  • Place coconut in the blender and process until finely chopped. Add to the bowl with the oatmeal. Add flour, baking powder, baking soda, and salt to the bowl; mix well and set aside.
  • Cream butter, brown sugar, and white sugar together in a bowl. Add egg and vanilla extract. Add butter mixture to the bowl with the flour mixture and mix well. Stir in white chocolate chips and macadamia nuts.
  • Roll heaping tablespoons of dough into balls and place on the prepared baking sheet.
  • Bake in the preheated oven until edges start to brown lightly, 12 to 14 minutes.

  • Heat oven to 375.
  • In small bowl,mix the flour,baking powder& soda& salt.
  • In large bowl,combine the butter,sugars& vanilla extract.
  • Beat at high speed,scraping the bowl often,beat mixture until creamy (1-2 minutes).
  • Add in the egg,beat until well mixed (1 to 2 minutes).
  • Reduce the speed to low,gradually adding in flour mixture.
  • Beat well after each addition (1 to 2 minutes).
  • With your hands,stir in the white chips,coconut& nuts.
  • By rounded TB,drop the dough onto nongreased cookie sheets.
  • Bake for 8-11 minutes or until edges are slightly browned.
  • Let cookies cool for 2 minutes before removing to cool on rack.

1 cup brown sugar
1/2 cup white sugar
1/2 cup butter, soft
1/2 cup shortening
1 teaspoon vanilla
1 egg
2 1/4 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
2/3 cup white chocolate chips
1/3 cup macadamia nuts, chopped

Steps:

  • Beat sugars, butter, shortening, vanilla and egg in a large bowl till fluffy.
  • In a separate bowl, stir together flour, soda and salt.
  • Add to butter mixture.
  • Stir in chocolate and nuts.
  • Drop by rounded tablespoons onto an ungreased cookie sheet.
  • Bake for 10 - 12 minutes or until light brown at 350°.
  • Cool 1 - 2 minutes before removing from the sheet.

  • Melt the butter in a small pan or in the microwave and pour it into a medium-sized bowl. Add in the brown sugar and granulated sugar and whisk vigorously until no sugar lumps remain. Add melted chocolate and stir well. Whisk in the egg, the yolk, the vanilla extract and shredded coconut.
  • Pour the wet ingredients into the dry ones and mix together with a spatula. Fold in the macadamia nuts and the white chocolate chips. Cover the dough and chill in the refrigerator for 2 hours minimum. Take the dough out and allow to soften at room temperature for 10-15 minutes before using it.
  • Preheat the oven to 325°F (160°C) and line two large cookie sheets with parchment paper. Roll the dough into balls so that balls are taller than wide and place approximately 8 balls on each parchment paper, leaving enough space in between each of them.
